Edible pearls, sequins, jewels and whispy pleats and bands make up this fashion-inspired number created for a lovely couple who own run their own clothing business, and wanted to create something different and that reflected them. Unlike the painted flower cake which I made a few weeks ago for a shoot, which was one of those that looked like it took a long time, but actually was really quick to do, I must confess this one did give me a little challenge to say the least. While it seemed fairly straight forward to create in my head, in reality it was much more tricky than I thought...., And the clearing up after wasn’t much fun either! But I was happy how she turned out! Anyway, huge Congratulations to Elisha and Andrew who got married yesterday @sailsbeachnoosa 🌊🌊🌊. Ps. When I moved from London to Queensland, I’d never in a million years thought I’d be making as many tiered buttercream cakes! I thought- ‘ no chance am I going to be able to deliver these in such warm weather’, and especially as most of the venues I deliver to are a good hour drive, up in the beautiful, but very hilly Hinterland.! But somehow, I’m now doing this as a regular thing! This cake is a perfect example. 3 tiers of Italian meringue buttercream coating with sugar petals, transported up to Maleny manor for Sunday’s wedding. One of four out of five cakes this week! So how do I do it? .... I just have a regular 4wd which I use to deliver my cakes. I make sure the cake comes straight from the fridge and make sure my car has the air con cranking. ( I try to make sure I’ve got extra clothes in the car to wear as it gets pretty cold). Sometimes, I centre dowel the bottom two tiers, but not always. This one wasn’t. I just make sure my dowels are cut just under the top of each tier, to allow the tier above to settle down into the tier below and fully stick. I also remove the buttercream between the tiers and replace with a firmer setting ganache. I believe all these little things help. And if course, I drive very carefully. No sudden breaks or accelerations, smooth driving and taking it very slow around bends . Yes- I’m that really annoying driver going round the roundabout at 20km per hour! I always joked about using one of those signs saying ‘cake on board’ - I even got one at a cake awards night once in my goodie bag- but have never used it- feel it’s just asking for it! It would be lovely to be able to buy a proper van one day, but for now, things are ok in my trusty silver Pathfinder. Give me a toot if you see me driving around the coast! Slow and steady, but always guaranteed to get your cake there in one piece! ( touch wood). Swipe to see the addition of gold leaf. I also added fresh flowers at the venue!
