Aunty Waveney, is her name and she’s a legend around Speightstown. Our street vendors are the unsung food hero’s of communities - always allowing us to get some fresh food on the table. Supporting Local can mean many things, but one of the simplest & easiest ways to do this on Island is to buy from street vendors. Speightstown is known for having some great produce stalls and most of what they are selling gives you the insight into what’s on the trees, in the ground and in season now. We work with farmers across the island for our larger orders, but if we run out of soursop, breadfruit or hot peppers. It’s ladies like these we run to. Aunty is one of the best known vendors in our little town & she supports us with staples when we need them, plus keeps her eyes out for more unusual items like gooseberries & Bajan cherries. As y’all know we get most of our ingredients from our beautiful island here in Barbados, but we couldn’t ignore our neighbors in Grenada. A lot of the ingredients usually used in vegan cooking would be imported to our island, so making our planted based burger took a while. We smoke coconuts for that all important smoky grilled flavors, we use pigeon peas for the base and add lovely umami vibes in via caramelized onions and garlic. All served in our house made vegan bun with aioli, smoked tomato ketchup & pickles. We recommend adding some of our fermented hot sauce on the side.
