Together we made a treacle from wasted leek tops, made a vegan honey using Mexican marigold and butchered a dairy cow…. There are no boring days at Silo. We are 2 years old 🥳 We’ve been reflecting through some memories, whilst we’ve come so far its clear that we’re just getting started. The rate of evolution is speeding up… We’ve been recognised by revered food critics and won a fair few awards, That said we’re certainly not playing a short game, the ideas will take years to realise. We’ve opened a shop @thewhitebuildingmarket, started a cooking school @zerowastecookingschool and the revolutionary studio @pottersthumb has just opened above the restaurant. We’re building a fermentation studio and there’s test kitchen brewing… Change is is upon us… I think this is largely down to the idea being adopted by a growing number of colleagues and collaborators.
