🛑 Stop scrolling and save this delicious recipe!!! What could be better than the humble potato wedge? Potato wedges covered in melted cheese, drizzled with sour cream and loaded with chives for a subtle onion flavour. And if you like a bit of zing, some hot sauce for good measure. A delicious side dish that’s simple to make. Ingredients 1 kg roasting potatoes, washed 4 tbsp olive oil 2 tsp smoked paprika 1 tsp flaky salt ½ tsp ground black pepper 200g cheddar cheese we used @carberycracker red as it is perfect for grating in our Kenwood food processor. To serve ½ tub sour cream ½ pkt fresh chives, chopped Hot sauce of choice, optional Pre-heat the oven to 200°C / 180°C fan assisted. Cut potatoes into long wedges then rinse with water and pat dry with paper towel. Transfer potatoes to a large roasting dish. Drizzle over the oil and sprinkle with smoked paprika, salt and pepper. Toss well so that the potatoes are all evenly coated. Bake in the pre-heated oven, turning potatoes over halfway through cooking, until golden, 35-40 minutes. While potatoes are cooking, grate the cheese in your @kenwood_ireland food processor with the large grater attachment. Once potatoes are cooked, sprinkle cheese evenly over the top then return to the oven until melted and bubbling, about 5 minutes. 🍤 15 Minute Prawn Tacos 🌮 These tacos are quick to cook and pack a punch of flavours! The prawns are simply cooked with a Cajun spice mix, which sits on a bed of tangy ‘slaw inside a warm corn tortilla. To top it off, a delicious fruity salsa made with pineapple and chillis. Happy Friday…indulge in a little treat this weekend with our Chocolate Biscuit Loaf. 🌟Save this recipe🌟 Ingredients 225g unsalted butter 200g good quality dark chocolate 200g good quality milk chocolate 200ml condensed milk 150g rich tea biscuits 100g digestive biscuits 120g hazelnut Small handful mini marshmallows Line a 2lb loaf tin with a double layer of clingfilm, and for a smooth finish, parchment paper. Set aside. Combine the butter with both of the chocolates and condense milk in a medium sized heat proof bowl set over a saucepan of barely simmering water and leave to melt. Stir occasionally then remove from heat once completely smooth. Leave to cool, about 10 minutes. Break biscuits into medium and small pieces into a large bowl. Pour about 3/4 of the chocolate mixture over the broken biscuits, mix until pieces are coated with the mixture. Add the hazelnut and marshmallow and mix to distribute. Pour half of the remaining chocolate into the bottom of the prepared tin and spread it out evenly with a spatula, making sure to get the mixture into the corners. Tip about half of biscuit mixture into the tin and spread out evenly, pressing the surface down firmly with a spatula or large metal spoon to compress the mixture and remove any air pockets. Spoon in the remaining biscuit mixture and repeat. Smooth and flatten out the top. Pour the remaining chocolate mixture over the top and smooth with a spatula. Refrigerate until firm, about 3 hours. Once set, remove from tin and peel away clingfilm and parchment paper. Cut into slices and enjoy. Will keep for up to 3 weeks in an airtight container in the fridge. #chocolate #chocolatebiscuitcake #ilovecookingireland #recipe

Guinness Treacle Loaf – This quickbread is slightly sweet with the unmistakeable richness of Guinness. It goes well dunked into a steaming bowl of soup or slathered with butter and jam. This recipe makes two loaves, and although it’s easy to halve the recipe to only make one, we suggest you make both and then slice up the spare and pop it into the freezer for later. 🍅 New Recipe🍅 Mozzarella & Parma Ham Stuffed Chicken with Panko Crust A fantastic air fryer recipe great for midweek meals. Chicken breasts stuffed with mozzarella, salty Parma ham and fragrant basil leaves, then coated with crunchy panko crumbs and served with roasted cherry tomatoes. Add your sides of choice like a fresh salad, steamed veg, rice or potatoes. If you don’t have fresh basil on hand you can opt to use basil pesto instead. Ingredients 4 chicken breasts 8 slices fresh mozzarella 4 slices Parma ham About 16 basil leaves 3-4 generous tbsp flour, for coating 1 egg, beaten 6-7 generous tbsp panko breadcrumbs Olive oil Salt & pepper Cherry vine tomatoes Grated parmesan, for serving Here’s how: Place chicken between 2 sheets of parchment paper and flatten the thickest part using a heavy rolling pin or pan so that the chicken breasts are a more even thickness. Create a pocket in each chicken breast by cutting lengthways with a sharp knife, making sure to not cut all the way out the other side. Stuff each chicken breast with 2 slices mozzarella, 1 slice Parma ham and 4 basil leaves (or 1 tsp pesto). Season with salt and pepper inside the pocket and on the outside of the chicken. Place flour in a shallow dish, the beaten egg in another, and the panko crumbs in a third dish. Coat each chicken breast in the flour, then dip in the beaten egg, and finally coat with panko crumbs. Season with a little more salt and pepper. Arrange chicken in a lined drawer of your air fryer then place the cherry tomatoes on the vine around the chicken. Drizzle lightly with a bit of olive oil then cook at 180°C until the thickest part of the chicken is cooked through, 10-12 minutes. Serve with grated parmesan, the roasted cherry tomatoes, and your choice of sides #ilovecookingireland #dinnerideas #meals #chickenrecipes #airfryerrecipes #airfryer
