OBSESSED with raw cheese and teff in the morning. It just works. Morning Goals : Have a good poo. Stimulate the growth of good gut bac. Nourish my brain. Don’t bloat to a point of discomfort. Stay full until lunch to remain focused. ☝🏾what I want from breakfast ☝🏾 Raw cheese with raw honey and organic leaves from @glasrai_farm on our Charlie’s happy tummy batter always has me 😄 If you’re not into injera you could instead have these toppings on our happy tummy loaf or else one of our teff ferments. A good dose of teff in the morning with raw cheese means you’re getting your prebiotics and probiotics together which I have found to be very effective in managing my digestive health and brain health. If you haven’t tried the teff ferments yet and you’re not the biggest breakfast eater then perhaps give them a go! Brilliant for those of you trying to make efforts to get something nourishing in in the morning 🫶🏾 They’re also naturally free from gluten. Big love. Karen x

Reaction to fried eggs with peanut butter and loganberry on injera -> swipe! 🤤 Charlie’s happy tummy batter x @harrysnutbutter x @madyolkfarm x @shankillcastle jam 🫶🏾 The perfect match! This breakfast has loads of iron, protein, fibre, essential vitamins and minerals and is damn tasty! We use a tiny amount of wholegrain wheat leaven in our injera batter but by the time it’s been fermented there is only a trace amount of gluten left. Brilliant breakfast for those of you looking for a more filling, functional, high in protein breakfast. Karen x

HAPPY 🫶🏾 Meaning: you have a healthy relationship with your tummy. You feed it what it needs to be fed, you don’t chastise its shape, you recognise it has its own personality and you allow it to thrive! ❤️ I’ve been doing my best to feed my tummy its food of choice for over a decade now. Digestible, high fibre foods. In that time I have reached a deep feeling of contentment. Over the past 48 hours the happy tummy co has gotten a lot of press. This press has focused on the price of our loaf, calling it bread. The happy tummy loaf is not bread. And we are not a bakery. When people walk into the TEACH they ask Anne “what is this place?” It’s hard to articulate what we do in words to be honest. Elaine, a recent student and customer wrote us this - “I hope that you know that you are the antithesis of all of those empty Google search results- your advice and bakes make a difference to the quality of people's lives! I did your Bread As Medicine course at the end of July and since then, I've had my teff grain/oats mix for breakfast and my Happy Tummy loaf for lunch each day. I've stopped peeling my lovely organic veg as you recommended, for extra insoluble fibre. I have had a bowel movement Every. Single. Day. since July 28th. Amazing! I was having spasms in my tummy on a daily basis that were so uncomfortable- they have disappeared.” Elaine’s words give an indication of what it is we do here. 🫶🏾 The last few days have been wild. There have been many wild days over the years of running this. But the last few weeks and months have been some of my happiest. Sinéad, Anne and Siobhán came into the business with so much love and drive. They have made this journey towards helping you more become more viable and downright craic! They are the best women. The best! And so as the press focuses in on the price of what we do and I worry about food equality and try to keep money stress at bay, I thank my lucky fecking stars for the women that run the TEACH with me and to be honest, are far nicer people than I! Hello! Update from the TEACH 💁🏽‍♀️ We close for our holidays at 5pm Thursday the 24th of August. We reopen Monday the 11th of September. Emails won’t be monitored while we’re off as a proper break is needed. Here’s what you need to know if you need a delivery before we close - Customers in the UK Your final deliveries before we close will leave the TEACH on Tuesday the 22nd of August. Your orders need to be in by 9am Sunday the 20th to ensure this happens. Customers in Ireland Your final orders need to be in by 6am Wednesday 23rd of August. Customers everywhere else We will begin delivering to more countries in September 🫶🏾 This week, we have capacity to make just 8 more happy tummy loaves so order one of them now if you need one for the weekend. There’s the glorious sausage meat that Cass meticulously puts together for us from her farm in Clare. There’s the organic raw milk from Sinéad of @gleannbuifarm. The eggs from @madyolkfarm. The emmer from @oak_forest_mills and Ølands from @turloughkeenan. It has been an absolute privilege to work on a pastry for months now with the best ingredients in Ireland. Morning view ☺️ Oh hello Wednesday 🫶🏾 Lots of oooooooohing 🎼 and aaaaaaaahing at the bakery here this morning ☺️ The team have just had their morning coffee with sausage rolls and lemon cacao frangipane ☝🏾 After months of making recipe tweaks and method tweaks to our heritage Wholegrain pastry I am finally really happy with our pastry. So happy, that these will firmly stay on the weekly menu going forward until you guys get sick of them! 🤪 I am absolutely ADORING our @nearynogschocolate 🍋 frangipane pockets with a coffee. The pastry made with 70% Ølands to 30% emmer from Turlough, Emma and Pat is out of this world! And so strong and silky! MASSIVE LOVE to our farming friends who make digestible, nourishing pastry possible for people like me managing IBS. 🙌🏾 Each pastry takes us 3 days to make and is rolled out by hand many many times. We will be baking these on Wednesdays and Thursdays for the foreseeable. For UK delivery it’s best to get your order in over the weekend. For Ireland, before Tuesday at 6am. Such a happy start to the day here! ☺️ Karen x

Hard to describe the absolute pleasure of eating happy tummy loaf out in the garden I grew up in and then on through Dad’s nursery to the Maple field. 💚 Pure joy at 7am Saturday morning as the rabbits feasted on everything else. IMMUNE BOOSTING. How it looks fighting off illness from a plate. Here’s what I do. I up my vitamin C and vitamin A intake. Vitamin C helps protect cells keeping them healthy. Vitamin A helps your body’s natural defence against illness and infection work properly. Yesterday I got shot down with aches, a head that felt on the verge of exploding, throat pain, ear pain, you know the drill… I wanted digestible nourishment that would help my body fight off the illness alongside litres of water!! Last night’s dinner was skin on mashed sweet potato and new potatoes with some smoked onion mayo going through them with salt and pepper. In a cast iron pan I sautéed spring onions, fennel, garlic, red pepper and broccoli. I squeezed in some fresh lime, threw a load of seeds in and once I was done cooking shook some tamari sauce in. Plated up with a side of injera here’s how my plate looked. This is not accounting for the seed mix I added. Nor the olive oil I drizzled on top or the yoghurt I had afterwards. 25% Kcal 29% carbohydrate 63% sugar 12.4% fat 71.6% fibre 24% protein 32% salt 100% iron 30% calcium 50% magnesium 99% potassium 154% vitamin A 300% vitamin C When I’m feeling unwell I dose up on vitamins A and C as a way of blasting off illness. The above plate of food goes so well with our injera and made up for the fact that I didn’t have the appetite for lunch. When you’re feeling unwell you need to make every bite count. This is just how I do it. Hope it helps as inspiration to you guys if you’re feeling under the weather from the change in weather! 🤷🏽‍♀️ RDAs are only ever a guidance tool. You know your metabolism better than anyone. You know what you need. Last night, this is what I needed. ☝🏾 Our frangipane’s bum. 70% Wholegrain Ølands grown organically and stone milled by our mate @turloughkeenan to 30% Wholegrain Emmer grown organically and stone milled by our mates Pat & Emma @oak_forest_mills I adore pastry. Adore it. But pastries of the past wreaked havoc on my digestive health and skin health. For the past few weeks I’ve been playing around with organically grown Irish Wholegrains from some of our favourite people to create this little tart/bun of joy! The hope is to soon teach you how to make it and send you the seriously special flours that allow us to make something as delicious as it is nourishing 💚 Given the weather these past few weeks in Ireland, Tommy’s fruit count is down this week and so this week we’ll have a little less frangipane than usual. We’ll be baking blackcurrant and rhubarb frangipane this Wednesday instead of Thursday and if you’d like to reserve yourself a batch, just reach out to Anne on our info account ☺️ Really very obsessed with this recipe!
