Ever wondered why our Australian born owner David Toscano created an Italian restaurant? Obviously there's a clue in his surname. David grew up in the Western suburbs of Sydney, right next door to his grandparents. They were Italian migrants who came to Australia from Calabria, in the 1950s. Most of David's early memories of food came from growing up next door to them, where there was always something bubbling on the stove. "One summer, when my extended family were visiting from Italy I remember making a huge batch of fresh pasta sauce from a truckload of tomatoes. We blanched the them in hot water, skinned and crushed them before cooking them down into a delicious sauce. I put a basil leaf inside the neck of each glass bottle before putting the cap on – that was my special job. That traditional pairing of tomato and basil is still one of the greatest Italian flavours." Weekends were all about family and food. "Whether it was at home with mum and dad, at either grandparent’s house, or at an Auntie’s place the kitchen would always be full. A pasta machine would be constantly turning, and ribbons of pasta run from the kitchen and laid out on trays. Pans of boiling water at the ready, the oven on full temp even in the Sydney heat. And a ragu that had been simmering since sunrise". David's dad and his Pop made their own salami every winter, a tradition that they brought over from Italy. And eventually a rite of passage in David's childhood. "I remember helping my dad mix the pork mince, prepare the skins and hang the finished salamis in our garage to cure." In later years, David asked his grandmother if she would write down that recipe for her tomato sauce. She replied “there is no recipe – if you want to make it, I’ll show you.” She didn’t want to hand him a written recipe – she wanted to spend time with him in her kitchen and cook together. It’s the best way to learn. So the heritage behind Cin Cin and David's love of Italian food comes from his family’s kitchens and all the times he spent learning, cooking and eating food with them. The centrepiece of any good Burns Supper menu is the iconic haggis and we’ll be serving up ours, this Wednesday, the Italian way with Haggis Arancino. Traditional accompaniments to the haggis are neeps and tatties so these will also feature on our specials menu next week.
