Spring is one of the times of the year when hard-working, committed, and oftentimes weary students look forward to seeing their endeavors come to fruition. Graduation is a significant milestone and a gateway to the next phase in life. We are lucky to share this major celebration with one of our own Stroll wooded neighbors, Mason Tincher. Mason, now 22, is the middle Tincher child, and two of his siblings have been previously featured in Stroll. Mason calls home here in one of our wooded neighborhoods along with Mom, Dad, big sister Madison, little brother McKinley, and Knox, a male Goldendoodle. Mason shares, “I have grown up around a ton of my close friends here on Orebank and have loved spending time with them over the years.” After graduating from Dobyns-Bennett High School, Mason headed to the University of Tennessee where he graduated with an impressive dual major in May 2023 Mason has a bright future ahead of him and there is no doubt he will succeed in reaching his goals. As we know, life cannot be all work and no play. In addition to his career goals, Mason wants to travel, possibly touring Italy, Australia, and Greece. History around East TN Unless you are a Foodways historian or avid gardener, you may never have heard of salsify (pronounced sawl-si-fee or sawl-si-fī). A favorite vegetable of our early American ancestors, salsify is little known today. The edible roots resemble thin, gnarly white parsnips, while the tops look like clumps of green grass. Also called “oyster plant” because it tastes faintly of the sea, salsify provided a substitute for the much-loved but highly perishable shellfish in the 18th and 19th centuries, especially for those who lived inland. In fact, a popular way to prepare—or “dress”— salsify was to mash the roots and combine them with flour, eggs, herbs, and seasonings to form a batter that was fried in lard to resemble fried oysters. Here’s a super-refreshing take on lemonade. Not only is it delicious, but it’s a great way to use up any extra basil from your garden. This recipe does contain sweetener, but less than most lemonade recipes. Adjust it to suit your goals and taste preferences. Fun tip: this recipe can also double as a mixer for your next cocktail party – or just add some seltzer for a little “fizz.” Ingredients 8 lemons, juiced ¼ cup honey or maple syrup 1 cup fresh basil leaves, packed 3 cups cold water Ice cubes Optional: lemon slices & basil leaves for garnish Directions Pour lemon juice into a blender and add honey (or maple syrup) and basil. Blend until smooth. Strain the liquid into a pitcher to get a clear green liquid. Add the cold water and chill until ready to serve. Serve over ice.
