TM6 CHEESE NAAN with Garlic & Corriander Hola Thermomix peeps, have you tried the Garlic & Corriander Naan recipe from cookidoo? It’s one of my favourite recipe of all time, coz it yields the most softest and fluffiest Naan ever. Hands down better than Usman😝 You can now make them your own and save $$ from dining out. Here’s another variation I like to do with the same recipe. Filling it with Cheese!!😍 Remember you want both taste and stretch, so go for 2kinda cheese. Mozza-stretch and a flavourful cheese, eg: cheddar, red cheddar, colby etc. Just do as per video, fill as much as you’d like but make sure you can ball it up😝 You can try the recipe from cookidoo here: Ingredients: TOPPING 1 bunch fresh coriander, leaves only 1 tbsp ghee (see Tips) 3 garlic cloves 1 tsp nigella seeds NAAN 2 tbsp olive oil, plus extra for greasing 240 g full cream milk (see Tips) 1 ½ tsp dried instant yeast 1 tsp sugar 2 tsp sea salt, plus extra for sprinkling (optional) 480 g bread flour, plus extra for dusting 1 tsp garlic paste 120 g natural yoghurt Preparation: TOPPING Place coriander into mixing bowl and chop 3 sec/speed 5. Transfer into a bowl and set aside. Place ghee into mixing bowl and melt 1 min/Varoma/speed 1. Add garlic and chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula. Add nigella seeds and cook 1 min/Varoma/speed 1. Transfer into a separate bowl and set aside. Hey IG fam! Do you love Chee Cheong Fun(CCF)? I used to have this for quick breakfast bite before work, back in SGH. Usually, it’ll be those plain ones and you’ll doused it with sweet dark sauce and chilli sauce. But, as I explore more Chinese dishes I actually prefer the ones served in Dim Sum restaurants. It’s those silky smooth thin layers of Rice noodle rolls, filled with sweet crunchy prawns and served alongside with light sweet/saltish sauce and umami sambal. The flavours would all come together as you slurp them! It’ll definitely send you to Dim Sum heaven and back, fo sho! Shrimp Paste fluffy Omelette with Chilli oil on toast. So I made this earlier today, so filling and delicious. It was my breakfast and lunch, Alhamdulillah. Using a slice of my Sundried Tomato Cheddar SD loaf and put this together. You really gotta try it! I’ll put up another reel to show you how the egg is done. To add a lil zhush, I added slices of pickled onions. This is also a must have stash in my fridge. Hey IG fam! I just got back for a short trip to BKK and this dish was definitely inspired by it. It’s so easy to put together and gobsmackingly good! You can also do it without a Thermomix too👍🏾 Ingredients: 500g Chicken(coat with salt and tumeric powder, fry and set aside) 2med Onion (set aside 1 for slicing and garnish) 4cloves Garlic 6-10 Small Green chillis 2 lemongrass(just the white part 90gm Cooking Oill 6pcs Kaffir lime leaves 1/2tsp Conc Asam Jawa(Tamarind Paste) 1tbs Oyster sauce 1/2tbs Fish Sauce 1/2tbs Sugar Juice from 1lime Directions: 1. Place onion, garlic, chilli and lemongrass in MB, blend 10secs/speed 8 2. Add Oil, saute for 15mins/120/speed 0.5 3. Add kaffir lime leaves, conc asam, oyster sauce, fish sauce and sugar, saute for another 10-15mins/120/speed 0.5 (You may add a bit of water if you like it slightly wet, else just leave it be) 4. When done, you should see oil surfacing to the top of the paste. Place Butterfly whisk and add in fried chicken and sliced onion. Cook for another 2mins/varoma/speed 1 reversed 5. Have you ever wondered if you could bake an artisanal bread without using Sourdough Starter but make it look like one? Here’s sharing with you a simple recipe, you don’t even need to break a sweat😉 Ingredients: 320gms Water 5gms Honey 3gms Instant Yeast 55gms Olive Oil 425gms Bread Flour 7gms Royco Ayam (Chicken Stock Powder)* 3gms Salt Directions: 1.Add all ingredients in MB, as per order of the ingredients listed above. 2.Knead dough for 2mins using Dough Mode. Rest in bowl for 30mins. 3.Remove from bowl and transfer dough into a greased bowl, and gently stretch & fold all corners into the center. Do this gently, and rest for 30mins. 4.Repeat stretch & fold steps again, and rest for another 30mins. 5.Meanwhile, preheat oven to 200c (Fan mode). 6.Move rested dough on a heavily floured silicone mat or cutting board, gently stretch it out into a large rectangle. 7.Dust the top of bread with flour, figuratively 8.Cut into 6-8 pieces. Lay on to baking pan, lined with baking paper. Cover dough and let rest for 15-20mins. 9.Meanwhile, prepare steam for your oven. Put some ice into another baking tin and place in bottom of the oven. 10.Bake in oven for 15-20mins, remove baking tin with ice and bake for another 5-10mins.(Timing varies, done-ness is up to you) Note: •This recipe can also be done in a bowl if you don’t have a TM6 yet(if you’re ready to get one, you knw you can look for me🤭). Simply just dump everything in a bowl, mix with a dough whisk or spatula to a raggedy ball and let rest. DO NOT OVERMIX. •Try not to skip the Chicken powder part, coz it really gives the bread a depth, flavour wise. •When doing the stretching & folding, you can oil your fingers slightly to prevent dough from sticking.(Dough will be very sticky) •Baking time may vary, it really depends on your oven and the outcome you’re looking at. (Darker or lighter colour) •Do not skip step 10, as it helps to crisp up your bread up. Alright now, happy trying!! Major throwback to our 1st ever mom & daughter’s trip to Perth🇦🇺 I had so much fun bonding with my daughter, we bickered, argued, laughed and be silly with no care. It’s more fun now that she’s grown up, coz she’s more appreciative of the places we visited. We visited Perth when she was 4yrs old but sadly she can’t recall much. Thank god for photos and videos! It was also the first time we had to do everything ourselves, coz if my husband is around he’ll be the one carrying our heavy bags, run Uber errands, help us with laundry etc. Made us realised how much we actually missed him😆🤪 But yes, I will do this again in a heartbeat! Our monthly meetup with #katscookmob. The theme today is all about Brunch. We made : ✅ Scones (How to get flaky tender scones) ✅ Crumpets ✅ Creamy Egg Mayo ✅ Chorizo and Mushrooms Quiche (Tips on making short crust pastry) ✅ Lemon Drizzle Cake (How to get beautiful thick icing) ✅ Lemon Earl grey Cake(How you can improvise a Cookidoo Recipe) All these bakes were done in Thermomix, some recipes were from Cookidoo. I also did a short demo of the latest cutter attachment. We ended the sesh with a lil quiz and some went home with small gifts. We bonded over the food prepared and it was a wonderful sesh.
