Happy Chaiday! Do you know the difference between ceylon cinnamon and cassia cinnamon? Only cinnamon that is produced in Sri Lanka can actually be called ceylon cinnamon. Why? Ceylon was the name given to the now independent Sri Lanka when the Portuguese empire arrived in 1505. Ceylon cinnamon is technically termed cinnamomum zeylanicum. It’s an expensive spice with amazing flavours and traditional health benefits. However, it’s extremely labour intensive; it can only be harvested once every 8 months, taking one person a whole day to produce about 1.2kg yield of it. Cassia cinnamon is predominately produced in Indonesia, Vietnam and China. It’s a lot cheaper, milder in taste and has a single layer of hard bark in its quill, whereas ceylon cinnamon has multiple layers of soft barks in its cigar like quill. The thinner the layer of each quill, the more rare and expensive it is - Alba ceylon cinnamon is the rarest of them all! TBT to many years ago when we had one of @chai_walli's very first pop up event! Back in the days when we had no staff and no warehouse, just my family's kitchen and basement. My mum was my supporter and helper (I paid her in chai kisses and lots of chai). She still is our number 1 fan and supporter. Small business is built on the support of loved ones, it's grown with communities and it's driven by passion and love.
