Comment down below if you loved it! ๐ฅฐ Makes: 4 pieces INGREDIENTS: โ 200g ripe bananas (2-3 bananas worth) โ 4 tablespoons (60g) runny peanut butter โ 1/3 cup (35g) cocoa powder *Optional: maple syrup or other sweetener if you want more sweetness Topping: โ 2 tablespoons runny peanut butter METHOD: 1. Preheat the oven to 180 degrees C/360 degrees F. Grease a mini cake tin or line it with non-stick paper 2. In a separate bowl, peel and mash the bananas until pureed. 3. Add in the peanut butter, mix until will combined. 4. Stir in the cocoa powder until no dry lumps remain and a thick batter forms 5. Transfer to the prepared cake tin 6. Drizzle peanut butter over the top and use a skewer or knife to swirl it into the batter 7. Bake for 18-20 minutes until firm on the outside and still a bit soft on the inside 8. Crispy Vegan Egg White Tofu by @lucy_and_lentils ๐งก Using aquafaba, these tofu bites are crispy and golden! ๐๐ผ Recipe: Ingredients: Equal parts flour (preferably cornflour) to chickpea water Cubed firm tofu (make sure it's dry) Sesame oil 3 tbsp tomato ketchup 2 tbsp soy sauce 1 tsp rice vinegar Chopped fresh ginger Chopped garlic Tenderstem Chopped chives or spring onions Chilli crisp oil or sriracha mayo (optional) Instructions: In a bowl, combine equal parts flour and chickpea water to create a pancake-like batter. Coat the cubed firm tofu with the batter, ensuring it's well covered. Heat a pan with sesame oil over medium-high heat. Fry the battered tofu on each side until it becomes crispy and golden brown. While the tofu is frying, prepare the sauce. In a separate bowl, mix 3 tbsp of tomato ketchup, 2 tbsp of soy sauce, 1 tsp of rice vinegar, and add chopped fresh ginger and garlic to taste. Once the tofu is crispy, pour the prepared sauce over it and toss until the tofu is fully coated. Serve your delicious vegan egg white tofu with tenderstem and a generous amount of chopped chives or spring onions. ๐ Easy Loaded Miso Sweet Potato Chickpea Wraps by @cookingforpeanuts ๐ซถ๐ฝ All our fave flavors in one recipe. Miso, Sweet Potato, Chickpeas and tzatziki! This is a must-try! โค๏ธ โ Makes 4 wraps โ Ingredients: 1 medium-large sweet potato, peeled, and cut into 1 ยฝ-inch pieces (about 4 cups) 1 (15-ounce) can chickpeas, drained and rinsed (or 1 ยฝ cups cooked) Drizzle of olive oil 2 teaspoons Zaโatar seasoning 2 tablespoons mellow white miso 4 flatbread Easy Vegan Tzatziki (see the reel before this), or sauce of your choice โ Optional for serving: 1 ยฝ cups grated green cabbage โ Preheat the oven to 425ยบF. โ Transfer the cut sweet potato to a large saucepan with water to cover by about 2-inches high. โ Bring the water to a gentle boil and cook over low heat for about 10 minutes, or until the sweet potato is just fork tender, but not mushy. Drain the sweet potato and place the chunks in the canister of a food processor. Add the miso. Pulse until smooth and creamy, scraping down the sides as needed. โ Optional: Rub the chickpeas between the layers of a dish towel to remove excess moisture. You can also remove the skins at this time as desired. โ Transfer the chickpeas to a large rimmed baking sheet. Drizzle with olive oil and add the Zaโatar. Toss the chickpeas until evenly coated. Bake for 15 minutes, tossing halfway. Optional- Change the oven setting to broil or grill and cook for about 2 minutes more, or until crispy. โ Warm the flatbreads in the oven. ๐ Strawberry Coconut Chia Pudding @georginaburgess_ Here's a new breakfast recipe that you should try! It's incredibly nourishing and satisfying, while also making it feel like you're having a really delicious strawberry parfait early in the morning. ๐ฅฐ โจ โ๐๐๐๐ ๐๐๐ ๐๐๐ โจ - 1/2 cup whole chia seeds - 1 cup full fat coconut yoghurt - preferably the thick and creamy kind (Iโve seen people use full fat canned coconut milk too but Iโm not sure on the quantities for this) - 1.5 cups dairy free milk - I use oat milk - 2 tsp vanilla extract - 1 tbsp maple syrup - 1 cup frozen pineapple - 1 cup frozen strawberries - Fresh strawberries, chopped - for topping - Desiccated coconut - for topping 1. Mix together the chia seeds, coconut yoghurt, milk, vanilla and maple syrup in a large bowl until thereโs no lumps - using a small whisk can help. Cover and refrigerate for 1 hour / overnight to set. 2. When youโre ready to serve, blend up the pineapple and strawberries until smooth and later this up with your chia pudding. Broccoli is the main event here. ๐คฉLather that delicious marinade and roast it to perfection. ๐ โจ โ๐๐๐๐ ๐๐๐ ๐๐๐ โจ 1 head of broccoli 4 tbsp unsweetened vegan yogurt 2 tbsp chickpea flour 1 tbsp kashmiri chili powder 1 tbsp coriander powder 1/2 tbsp cumin 1/2 tbsp garlic powder 1/2 tbsp onion powder 1/2 tbsp sunflower oil (chili oil optional) salt to taste - raita 3 tbsp unsweetened vegan yogurt 1 tsp kashmiri chili powder 1 tsp chaat masala 1 tsp cumin seeds salt to taste directions 1. bring a pot of salted water to a rapid boil and parboil the head of broccoli in it for 5 minutes 2. mix the tikka marinade ingredients together, taste for seasoning and adjust accordingly 3. place the parboiled broccoli on an oven tray and rub the marinade all over the broccoli 4. add a light drizzle of sunflower oil over the top and place in a 180ยฐC preheated oven for 15-20 minutes 5. mix the ingredients of the of the raita and spread it on the plate 6. remove the broccoli from the oven once lightly charred and fork tender 7. place the broccoli on the raita and serve hot ๐ฅ @prunchme Trying to eat more plants?๐ We have lots of recipes and guides in our APP to help you achieve your health goals this 2023.
