Mango Sago aka Mango Bango is my new favourite dessert 🥭 by • @threecupsofchai Originating in the Philippines, and popular across Asia, it’s so easy to make, comes together in no time, and the cooling qualities of sago/tapioca are exactly what your body needs after a long day of fasting. I’m going to say it’s perfect for a lighter Eid dessert too - play with the fruits: add strawberries, kiwi, or any other fruit (or mix them up!) and enjoy! Here’s how to make it: Add 1 cup of small or medium sago/tapioca to about 5 cups of boiling water Simmer for ten minutes, stirring often so they don’t stick to the pot. Turn off the heat, cover and rest for ten more minutes. The tapioca should have plumped up and become clear (it’s white to begin with!) Strain the tapioca and add to a large bowl. Add in 1 cup of milk, half a can of sweetened condensed milk (I recommend Eagle Brand) and stir. Dice 2-3 mangoes, strain one jar of coconut jelly (Nata da coco), and add both to the tapioca mixture. Stir to combine and refrigerate for a few hours before serving. Herb Garlic Baguette & Roasted Eggplant Dip By • @breadbakebeyond **The eggplant dip also known as Baba Ganoush) For the Roasted Eggplant Dip: 2 eggplants 4 cloves of garlic 2 tbsp. lemon juice 1 tsp. cumin 1/4 cup raw tahini 1/4 cup olive oil Salt and pepper to taste For the Topping: A pinch of paprika 1 tsp. fresh parsley chopped For the Herb baguette: 1 medium-sized baguette 2 cloves of garlic, minced 1 tbsp. fresh parsley chopped 1/4 cup olive oil Instructions: 1. Start by preheating your oven to 450 F and lining a baking sheet with parchment paper. 2. Slice the eggplants in half lengthwise, lightly brush the cut sides with some olive oil, and lay them face down on the baking sheet. 3. Place them in the oven and let them roast for around 40 minutes, or until they’re nice and soft. Take them out of the oven and let them cool down a bit. 4. After the eggplants have cooled, scoop out the insides and discard the skins. 5. In a food processor, add the eggplant and the rest of the dip ingredients, then blend until you’ve got a smooth, creamy dip. Adjust the seasoning as needed. For the bread: 1. Turn your oven down to 400 F. 2. Take your baguette and slice it lengthwise. 3. Mix the parsley, garlic, and olive oil in a bowl, then brush this mixture over the open sides of the baguette. 4. Place the baguette in the oven for about 10-15 minutes. Then, cut it up into squares. To serve: 1. Spread the eggplant dip on a plate, then top with a fresh chopped salad. 2. Drizzle some olive oil over the top, sprinkle with chopped parsley and a bit of paprika. 3. Serve it up with squares of herb garlic bread. Enjoy! #dinnerideas #easyrecipe #asmr #eggplant #baguette
Salmon Boats by @ronis_recipes 2 baking papers 4 pieces of salmon Asparagus Mushrooms Scallion 4 tbsp olive oil For the sauce: Mix in a bowl- 1/4 cup olive oil 2 crushed garlic cloves 3 spoons of honey 1 tsp Dijon mustard a little salt A little black pepper Cut each piece of salmon lengthwise (not to the bottom) and open to the outside. Heat the oven to 180 degrees. Cut the baking paper in 2, fold as in the video, tie the ends and open into a boat shape. Place the vegetables in the baking paper, add a little olive oil, salt and the salmon pieces on top. The recipe is vegan & high in fiber! • This makes 2 servings • For the chia pudding: 4 tablespoons chia seeds 1 cup almond milk (240 ml) 1 teaspoon maple syrup 1/2 teaspoon vanilla extract • For the yogurt layer: 1 cup Greek-style plant based yoghurt (240 ml) 1/2 cup raspberries, mashed (120 ml) • 1. Mix together all the ingredients for the chia pudding in a bowl or a mason jar 2. When the mixture is well combined, let it sit for 5 minutes and then mix again to get rid of any lumps. Let set in the fridge for at least 2 hours (or overnight) 3. Once the chia pudding is ready to serve, make the yogurt layer and spoon on top of the chia pudding. Add your toppings and enjoy!
