BRING a large pot of salted water to a boil. 2. QUICKLY BLANCH the kale or spinach and then rinse under cold water and drain. 3. Baking Soda 1/2 tsp. Salt 1 cup Strawberry Puree 1/2 cup Olive Oil 1/4 cup @sperofoods The Strawberry Sunflower® Cream Cheese 1 tbsp. Apple Cider Vinegar 1/4 tsp. Red Food Coloring 🧁For the Frosting: 1 cup plant-based Butter, softened 3 cups Powdered Sugar 2-3 tbsp. Full Fat Coconut Milk, or other plant milk 1/2 tsp. Vanilla Extract 1/8 tsp. Red Food Coloring ⬇️Instructions 1️⃣Preheat oven to 350F. Grease and line with parchment paper 3-6" cake pans. 2️⃣To make the cake, mix the flour, sugar, baking soda, and salt until well-combined. 3️⃣In a separate bowl, whisk the strawberry puree, olive oil, @sperofoods The Strawberry Sunflower® Cream Cheese, apple cider vinegar, and food coloring until smooth. 4️⃣Fold the flour mixture into the strawberry puree bowl. Stir until smooth and well-combined but be careful not to overmix. 5️⃣Evenly divide the cake batter into the prepared cake pans. 6️⃣Bake for 30 minutes, or until a toothpick inserted into the center comes out clean. 7️⃣Let the cake cool in the pan for at least 10 minutes before transferring to wire rack to cool completely. 8️⃣In the meantime, make the frosting by beating the softened butter in a large mixing bowl until light and fluffy, about 1-2 minutes. 9️⃣Add the powdered sugar 1/2 cup at a time, scraping down the sides as needed. If too thick, add 1 tbsp. coconut milk at a time until desired texture. 🔟Frost the completely cooled cake, top with fresh strawberries, and enjoy!

Quit monkey’n around and try this combo STAT babes! 🥐Here’s a #plantbased monkey bread recipe by one of our gal pals @brightmomentco for #nationalstickybunday 📍 find us at @wholefoods MONKEY BREAD w/ GOAT CHZ FROSTING Servings: 6-8 ⏰Prep Time: 5 minutes Cook Time: 25 minutes Total Time: 30 minutes 🍞Ingredients For the Monkey Bread: 1 1/2 cups Plant Milk 1 tbsp. Instant Yeast 1/4 cup Granulated Cane Sugar 1/3 cup Olive Oil 4-5 cups All Purpose Flour 1/2 tsp. Salt For the Cinnamon Sugar Mixture: 3/4 cup Olive Oil or Plant-based Butter (melted) 1/2 cup Brown Sugar 1/2 cup Granulated Cane Sugar 2 tsp. Ground Cinnamon 🍯For the Glaze: 1/4 cup @sperofoods The Alternative Goat Cheese 1/4 cup Plant Milk 1 cup Powdered Sugar 1 tsp. Vanilla Extract ⬇️ Instructions 1️⃣ Heat up the milk until warm to touch. In a large mixing bowl, add the warm oat milk, instant yeast, and sugar. Stir quickly to mix, then set aside for 10 minutes to activate the yeast. 2️⃣ Mix in the olive oil and salt. 3️⃣ Add the flour one cup at a time, using the hook attachment on medium low speed, kneading until a smooth and pliable dough ball, about 5-6 minutes. 4️⃣ Place the dough in a lightly oiled bowl, then cover and set aside in a warm environment until doubled in size, about 1-2 hours. 5️⃣ Preheat oven to 350F. Lightly oil a bundt cake pan. 6️⃣ Divide the dough into 50-60 small, bite-sized pieces. (Optional: Fill half of the pieces with a small dollop of @sperofoods The Goat Cheese for a hidden surprise in each bite.) 7️⃣ Mix the cinnamon sugar mixture together, then dip each dough piece in it before adding to the prepared cake pan. Bake for 30-35 minutes. 8️⃣ Let cool in the pan for 5 minutes before inverting to a wire rack to cool for at least 10 more minutes. 9️⃣ In the meantime, stir all ingredients together for the glaze, adding more or less oat milk to preference. Drizzle on the cake, then enjoy warm!
