Want to add more plants 🌱 to your meals this year? .. Add more plant-heavy meals is one of my top tips for saving 💰 on your food budget & just as damn-good delicious. 😎 . This SMASHED LENTIL SALAD WITH AVOCADO AND FETA is one that is on a constant rotation around here & is so easy to make. Here's how: . 1 cup dry brown lentils, rinsed (or about 2 cups cooked lentils) 1 tablespoon tahini (or plain/garlic hummus) 2 tablespoons lemon juice 1/2 tablespoon Dijon mustard 1 teaspoon garlic powder salt and pepper, to taste 1/2 avocado, chopped 1/4 cup chopped red onion (about 1/2 small) 1/2 cup chopped carrot (about 1 medium) 1/4 cup crumbled feta cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook lentils according to package instructions in a pot of boiling water. Let cool for 5 minutes before transferring to a large bowl. Smash lentils with the back of a fork, leaving a few lentils intact. Add tahini (or hummus) lemon juice, mustard, garlic powder, and salt and pepper. Stir to combine. If mixture is too dry, add more dressing ingredients, or a little bit of water until the desired texture is reached. Stir in remaining ingredients. What are your NYE plans? 🍾 .. If you need a last minute app for any size party 🎉 these OVEN BAKED PIZZA DONUTS are poppin’ 😜 .. Here’s how to make them: 1 canister (8 count) refrigerated jumbo biscuits 1 block (8 ounces) part-skim mozzarella cheese, cut into 8 cubes 1/2 tablespoon olive oil 1/4 cup grated parmesan cheese 1/2 teaspoon garlic powder 1/2 teaspoon Italian seasoning 1 cup marinara sauce parchment paper or aluminum foil turkey baster or pastry bag Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside. Separate biscuits, and flatten each into a disc. Place a cube of cheese in the center of each biscuit, and wrap around to cover. Add to prepare baking sheet, and bake for 20 minutes, or until golden. While baking, mix parmesan, garlic powder, and italian seasoning in a small bowl. Remove donuts from the oven, and while still warm brush each side with olive oil. Dip each donut in parmesan cheese mixture to coat. Warm marinara in a microwave-safe bowl. Are you a Brussels sprouts fan? ❤️ .. Can’t stop won’t stop inhaling these GARLIC PARMESAN SMASHED BRUSSELS SPROUTS until further notice. 😁 .. Here’s how to make them: 1 pound fresh brussels sprouts 1 cup water 1 tablespoon olive oil 2 cloves garlic, minced 1/4 cup grated parmesan cheese 1/2 teaspoon salt 1/4 teaspoon pepper Preheat oven to 375°F. In a large, microwave-safe bowl, add Brussels sprouts and 1 cup of water. Microwave covered on high for 8-10 minutes, or until all brussels sprouts are tender. Drain water, and add remaining ingredients to bowl. Toss to coat. Spread brussels sprouts on a baking sheet, and press down on each with the back of a wooden spoon to flatten. Need a last minute 🍪 idea for the big guy? 🎅🏻 .. As much as I love a slice & bake, these HEALTHIER COWBOY COOKIES are almost as easy & you may have all the ingredients you need already! 🙌🏻 .. Here’s how to make them: 1 1/2 cups oats* 2 teaspoons cinnamon 1/2 teaspoon salt 1 large banana, mashed 1/2 cup unsweetened applesauce** 1 teaspoon vanilla 1/3 cup chopped pecans 1/3 cup shredded coconut 1/3 cup semi-sweet or dairy-free chocolate chips melted chocolate for drizzling, optional Preheat oven to 350 degrees. Line a baking sheet with parchment paper, or spray with non-stick cooking spray. Set aside. In a large bowl, combine oats, cinnamon, and salt. Add mashed banana, applesauce, and vanilla, and stir to combine. Stir in remaining ingredients until combined. Drop by spoonfuls onto prepared baking sheet. Press down each cookie gently with back of greased spoon or oiled hands to flatten. Bake 12-14 minutes, or until firm and golden brown. Drizzle with melted chocolate if using. Here’s how to make them: 1 dozen Hawaiian sweet rolls 8 ounces sliced Swiss cheese ( about 1 cup) 8 ounces sliced ham, chopped (about 2 cups) 1 tablespoon butter 2 tablespoons cold water 1/2 tablespoon cornstarch 1 ( 8 ounce) can crushed pineapple in juice 2 teaspoons Dijon mustard 1 tablespoon brown sugar 1 tablespoon poppy seeds (or chia seeds work too) Preheat oven to 350°F. Slice rolls in half, and arrange in oven-safe baking dish. Add ham and cheese, and replace tops of rolls. In a small bowl, whisk together cold water and cornstarch. Set aside. Heat a small saucepan over medium heat, and add remaining ingredients. When mixture starts to slowly bubble, reduce heat to low, and add cornstarch mixture, stirring constantly for 1 minute. Remove from heat once mixtures starts to thicken, and pour over prepared sandwiches. Bake in preheated oven for 10 minutes, or until cheese is melted. What’s your favorite Christmas cookie? 🍪 .. Here’s how to make 4 INGREDIENT PEANUT BUTTER BLOSSOM COOKIES! .. 1 cup natural creamy peanut butter 1 large egg 1 cup + 2 tablespoons sugar, divided 15 Hershey kisses, unwrapped Preheat oven to 350°F and line a baking sheet with parchment paper, or coat with cooking spray. In a large bowl, mix together peanut butter, egg, and 1 cup sugar until combined. Move dough to the freezer for 5 minutes or refrigerator for 10 minutes to firm. Add 2 tablespoons of sugar to a small bowl. Spray hands with cooking spray or coat with oil. Roll dough into golf ball-sized balls (about 15), and roll each in sugar to coat. Place each ball on prepared baking sheet, and bake in preheated oven for 12-15 minutes, or until bottoms are golden brown. Remove from oven, and immediately place an unwrapped Hershey kiss in the middle of each cookie. Here's how to make it! 1 teaspoon sugar 5 fresh mint leaves 2 sprigs fresh rosemary 1 ounce (2 tablespoons) lime juice 1 shot (2 ounces) bourbon ice lime seltzer fresh cranberries In a cocktail shaker, add sugar, mint leaves, 1 sprig of rosemary, and lime juice. Muddle about 5 times, and add bourbon. Replace lid, and shaker to mix. Fill a cocktail glass with ice, and use strainer to pour bourbon mixture into glass. What’s your favorite thing to put gravy on? 🍗 .. If you’re throwing a 🌱 plant-based tofurky day or have a last minute vegetarian guest coming, this 5 MINUTE VEGETARIAN GRAVY is here to save the day! 🙌🏻 .. Here’s how to make it: 2 tablespoons salted butter 2 tablespoons all-purpose flour 2 cups vegetable broth 1 1/2 teaspoons soy sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon dried thyme Heat broth in a microwave-safe dish in microwave for 2 minutes. Set aside. Melt butter in a small saucepan set at medium heat. Whisk in flour, stirring constantly. Cook mixture for 2 minutes, stirring occasionally. Pour in broth, whisking constantly. Bring to a boil, and reduce to simmer, stirring frequently until thickened. Add soy sauce, salt, and pepper, and transfer to serving dish.
