After 2 hours at the gym this morning by body was craving this 😭 I can go on and on about how much a love pumfu. It’s just pressed pumpkin seeds and water! 😍 It’s hard to find a clean ingredient/ soy-free vegan protein. For those who are trying to limit their soy intake, def give it a try! Veganuary recipe series: episode 4! 🛑 Stop what you’re doing 🛑 We have good news-vegan, gluten free, and soy free potato skins can be in your life ASAP! 🥔 🧀 🥓 🌶️ Someone suggested we do something with @foodies pumpkin seed soy free tofu 😱 We thought their chorizo would go nicely on a potato skin appetizer. We were right. 😜 . Roast potatoes for 45 min to an hour whole, with oil and salt. (we used sunflower) . Cut in half and scoop out the middles. You can use these later for a little mashed potatoes, soup, etc. Then start layering the toppings! Once again, we used our trusty @violife_foods shredded cheddar. Then the pumpfu, jalapeños, and green onions. . Put back in the oven on broil until the cheddar is bubbling 🤤 Add some chives on top! Finally we mixed @cholulahotsauce with @foragerproject sour cream. 🤌 . You will not regret making these!! They’re a delicious treat for your vegan and non vegan friends alike.
