INGREDIENTS: 3 cups (800 grams) russet potatoes, peeled and diced 1/2 cup (50 grams) grated parmesan cheese 2 egg yolks 1/4 cup (50 grams) unsalted butter, melted Fresh ground nutmeg, to taste White pepper, to taste Kosher salt, to taste Clarified butter, as needed RECIPE: 1. Soak the peel and diced potatoes in water overnight. 2. Drain the soaked potatoes. 3. Fill the pot with fresh, heavily salted cold water. Add the potatoes making sure they are covered completely by the water. 4. Bring the water to a boil and cook until potatoes are very tender. 5. Drain the potatoes and allow to sit for 10 minutes. 6. Preheat the oven to 425°F and line a baking sheet with parchment paper or a non stick mat. 7. Meanwhile, in a large bowl, combine the egg yolks, parmesan, and melted butter. Mix well. Season to taste. 8. Mash the potatoes with a ricer and stir into the cheese mixture until fully smooth and incorporated. 9. Fill a piping bag fitted with a large star tip with the potato mixture. 10. Pipe the potato mixture onto a nonstick mat or parchment and bake for 10 minutes. 11. Remove from the oven and brush the baked potatoes with clarified butter. Return to the oven and cook for an additional 6 minutes. 12.
