With 4th of July right around the corner, we thought we’d throw it back with this Patriotic Superfood Vegan French Toast 🤩⁣ ••• #Repost @cleaneatswithcleo ⁣ @happyandhealthyolivia posted insane looking French Toast sticks yesterday and it put me in the mood for it! I haven’t had it in way too long and it makes for such a yummy breakfast 😋 ⁣ ⁣ I also realized how patriotic this breakfast looks, it would make for a great July 4 brunch 🇺🇸⁣ ⁣ What you need:⁣ - 2 slices of bread (I used @simplekneads_gf) ⁣ - 1/2 cup @eatjust (or sub a couple eggs!) - 1/4 cup almond milk (sub milk of choice)⁣ - 1/2 tsp cinnamon ⁣ - 1/2 tsp vanilla extract ⁣ - 2 teaspoons butter (I used @miyokoscreamery oat milk)⁣ - optional: sprinkle of monk fruit or coconut sugar ⁣ - superfood toppings: berries, cacao nibs, coconut flakes, hemp seeds, ground flax ⁣ - pure maple syrup or @lakanto maple syrup ⁣ ⁣ What you do: ⁣ Whisk all ingredients from the egg through the vanilla together. ⁣ Heat the pan and melt the butter. ⁣ Dip the bread in the egg mixture soput in the pan. Just did a quick quality check on our new OIL FREE Quinoa Power Grains recipe. Looks SOOOOO great! So proud of what we have accomplished with this bread that is nearly an impossible product. There are so many things that have to be perfect, and I mean PERFECT, for us to be able to produce a product that meets the high standards I have set for our products. •100% Plant based •Gluten Free •Top 9 Allergen Free •Rice Free •Corn Free •Non-GMO •Organic (we are now certified organic) •NO SEED OILS (QPG formula) •Made from (not with, but from) whole ancient grains. I mean this in the since that this is not just a marketing ploy where we put a little bit of ancient grains after a long list of processed ingredients. No no our flour is only whole ancient grains •No starches (yuck who wants to each white empty carbohydrates in the form of tasteless nutrition-less highly refined starches. I couldn’t believe it when I first reached for a gluten free bread 12 years ago and it was all made out of starch. I mean Pringles have better ingredients than most gf breads! • no gums or other gut harming crud like xanthan, guar, carrageenan and you name it. Instead we use psyllium which has HUGE health benefits. Look it up. • now we have one flavor that is made without oil • and one last gigantic one, NO BAKERS YEAST. Instead we ferment our dough in a true sourdough process using our heirloom sourdough starter. This is the list of things I held us accountable to. It has been one of the hardest things on this planet to achieve but we have done it, creating a product that is as beautiful as it is scrumptious and nutritious. I am proud to bring @simplekneads_gf home to my family and it is a great blessing as we have grown 4 babies on it. Our eldest, Shiloh, my inspiration to create a solution to the gf problem, is now 13! He has been eating “papa’s bread” for 10 years now. I can hardly believe it. Happy Wednesday from the mama who keeps the SK crew going @sacha.michelle ❤️ “With 4 children between ages 2 and 13, trying to homeschool, keep the house looking semi-decent, garden, try to take care of myself, spend time with my husband @tl_founder_simplekneads ❤️, when it comes to cooking, simple is the name of the game! Lunch came together so easily today and it was delicious!” Here’s what I did: - The night before, soak some Cannellini beans in water - In the morning, rinse beans very well and cook in InstaPot with just water (I did 25 minutes) Then about 20-30 minutes before you want to eat: -Sauté 1 onion in coconut oil until golden -Add 3-4 cups cherry tomatoes (I had some yummy frozen ones from last year’s garden) -Blend 1 c cashews in 2 c water (add more to the consistency you like) and add to the pan -Add 1 bunch baby broccoli chopped in 1 inch segments Season with Celtic or Himalayan salt, onion and garlic powder and any fresh herbs you like such as basil, parsley or cilantro - Simmer until broccoli is tender Drain the beans and cover them with the cashew cream and veggies. Don’t forget to add some nicely toasted @simplekneads_gf bread… We rarely go a meal without it in this house 😋!
