Volunteering through a war torn country in Ukraine, from inside the trenches to the villages. At a train station, a Ukrainian Catholic Nun witnessed one of my actions of kindness from a distance and posted it on facebook. As it went viral her story reached me! Where now it has currently brought us together in a global friendship. I was standing at the station when a tall man in a bulletproof vest with a huge backpack stepped confidently onto the platform. He was a foreigner, he spoke to his friend in English. On his sleeve he had chevrons with the Flag of Ukraine 🇺🇦 and the Canadian maple leaf🍁, and on his chest there was a large inscription "Rescue" and a first aid kit. And some extremely good-looking smiling face.😊 Where did he go from and where? Whom and where did he save or will he save? Suddenly, not far away, a little boy 👦, who looked about three years old, started fussing and crying. For some absolutely everyday reasons. Children cry not only because of the war... The young mother tried to calm him down, but she was not very successful🤷‍♀) The rescuer approached them, opened his first-aid kit or whatever was there, took something out of it (whether it was a candy or a patch), gave it to the boy, sat down next to him and, smiling, began stroking his head and face, wiping away his tears... all this without any words... but the baby stopped crying! I started to cry... (so that no one could see) Because it is extremely touching! There are no borders or barriers for goodness. That man saved the boy from tears, and his mother from helplessness in that situation. Brought them peace. Because he is a RESCUE.⛑ The big uncle bends over the little boy as God bends over us to wipe away every tear. Every one. Caused by war or just life... He is our Savior. Hello everyone, I will start sharing some recipes from my new cookbook that will be avaible this summer. Inside Jagger Gordon's Kitchen Lentil Curry with Squash & Cashews 6 Servings Preparation Time: 25 min Cooking Time: 240 min Ingredients 2 Tbsp canola oil (coconut oil), 30 mL 1 cup diced onion 250 mL 2 garlic cloves, minced 1 Tbsp curry powder 15 mL 1 tsp cumin 5 mL 1 tsp coriander 5 mL 1 tsp red pepper flakes 5 mL 1 Tbsp ginger root, peeled and grated 15 mL 1 1 can (14 oz) coconut milk 398 mL 2 cups butternut squash, cut into 1 inch (2.5 cm) cubes 500 mL 1 1/2 cup white potato, cut into 1 inch (2.5 cm) cubes 375 mL 1 cup canned diced tomatoes 250 mL 1 cup vegetable stock, or water 250 mL 1 cup green lentils 250 mL 1 Tbsp honey 15 mL 1 tsp sea salt 5 mL 3 cups fresh spinach or baby kale 750 mL 1/4 cup fresh cilantro, chopped 60 mL 1/2 cup cashews 125 mL 1/4 cup plain yogurt 60 mL Instructions Step 1 HEAT a large skillet over medium high heat. Add canola oil and let it warm for 30 seconds. Add onions and cook until translucent, about 5 minutes. Stir in garlic, curry, cumin, coriander, and red pepper flakes and cook for 2 more minutes. Stir in ginger and coconut milk, and scrape up any bits from the bottom of the skillet. Bring to a boil, then reduce heat and simmer 3 minutes. Step 2 POUR this mixture into a slow cooker. Add in squash, potatoes, diced tomatoes, and vegetable stock. Stir in lentils, honey, and sea salt. Cook on low for 6-7 hours or high for 3-4 hours. Step 3 STIR in the fresh spinach or kale, and cilantro. Cover and cook on high for 5 minutes. Step 4 SPOON into bowls. Top with cashews and a dollop of plain yogurt.
