クッキーの試作中、工場の中がいつもよりもやっとしていたので、湿度を測ったところなんと８０％になっていました！原因は冷房の不具合。キッチンの湿度はクッキーにとって致命的で、思う様な食感が作れなくなってしまいます。部屋の湿度をコントロールすべく、段ボールなどを使ってキッチンを密閉し、空調機を使って対処しようとしてもうまくいかず。そこで業者さんに緊急連絡してクーラーを見てもらったところ、パイプに異常があることが判明し、冷気が思う様に吹かなかったそうです。直ぐに直してもらい、冷房が見事復活！これで、我々も安心してクッキーを作ることができます。 === While making cookie samples, the factory felt rather humid, and when we checked the humidity of the room, we found out that it was over 80%! The air conditioner has malfunctioned, causing the rise in humidity. Humidity becomes crucial when making cookies. If the humidity is not controlled, the texture of the cookie changes. We tried putting dehumidifier inside the kitchen, and places boxes in front of the door to gain some control, however, there were no signs of the humidity declining. We called the maker urgently and had them look to see what’s wrong, and they discovered that there was something wrong with the pipes, causing the cool air to stop flowing. They fixed it promptly, and the air conditioner was back in motion! Now that its fixed, we can continue making cookies confidently.

となりの開花堂では、クッキーを抜く際の型をカイカイキキ造形スタジオ(3D部門)で試作をしています。金型を作る前に、厳密に、それぞれのクッキーのフォルムを詰めるためです。 新しいクッキー缶のイメージが決まったら、まずは新登場のキャラクターを、絵画なども手掛けるデータ制作部門で平面のデータを作成します。そして、さらに、そのデータを3D部門が立体のデータにしてゆくのです。 データ制作部門や3D部門、開花堂のクッキーは、スタジオのアート制作のノウハウとクッキー工場のパティシエの技術が合体して、世界に一つの缶クッキーを作り出しています。 ＝＝＝ Here at Tonari no Kaikado, our cookie mold samples are made in-house by Kaikai Kiki’s sculpting team (3D sector). We do so in-order to solidify the direction of the molds carefully, before making the metal ones. Once the image for a new cookie can has been confirmed, the data team, who are involved in the creation of paintings as well, creates the base for the surface of the cookie. From there, the 3D team creates the three-dimensional data. 今日はアイシングクッキーの試作！ スノーマンキャラ、試作段階では表情を変えたりとバリエーションを考えながら作っています。 ⁡ いい状態のアイシングクリームを作るには、乾燥に注意しながら一定の速度でツヤっと綺麗なまっ白になるまでミキシングします。 状態がいいクリームでアイシングをすると乾燥させたときにツヤツヤで綺麗な仕上がりになるのです！ ⁡ === Today we tried icing the cookies! We made few variations for the facial expression of the snowman. ⁡ While being careful not to let the icing dry, we mix it at a steady pace until it becomes white. 【芸術菓子「となりの開花堂」の道のり⑥】2020年6月7日、念願の初販売。小さな缶に入った可愛らしいこちらの商品はクッキーが6つ重ねて入っていて、包装紙も淡いピンク。一見となりの開花堂とは思えない外見ですが、中身はお馴染みのフレーバー達。クランベリーとかぼちゃは特に今ではお中元缶の顔とも言えますね。 ⁡ 缶の形やのし、包装紙なども全て村上隆自身が確認し、オーケーを出した物です。ここでも幾度となく試行錯誤があった事は言うまでもありません。長い葛藤の末、この可愛いらしいパッケージングに村上のタイムカプセルを大切にしまい、初めてのお客様にお届けするのです。 === 【History of “Tonari no Kaikado,” an art confectionery ⑥】Finally in June 7th, 2020, we had our first release. Six different cookies are kept in this small tin can, and is wrapped with pink wrapping paper. At first glance, it may not seem like a Tonari no Kaikado cookie, but the flavors inside are now all familiar. Cranberry and Pumpkin especially can be said as the face of our standard M-cans. ⁡ From the shape of the can, the paper strip, to the wrapping paper, they were all checked and confirmed by Takashi Murakami himself. There is no need to explain that there were many trial and error here as well. 【芸術菓子「となりの開花堂」の道のり⑤】となりの開花堂クッキーは形だけではなく、味と食感にとことんこだわってきました。となりの開花堂クッキーを口に入れると、どこか昭和懐かしい気持ちにさせてくれます。ですが「昭和を再現する」と言う意図で作られたのではなく、となりの開花堂クッキーは村上隆の記憶のタイムカプセルなのです。 ⁡ その記憶の味と食感をバリスタ達は再現しようと試作を幾度となく作るのですが、村上の求めるタイムカプセルには程遠く。村上からOKが出るまで繰り返し試作を作っては確認を取り、指示が出ればそれを反映する、そんなやり取りを続けて1ヶ月、ようやく商品化が実現するのです。 === 【History of “Tonari no Kaikado,” an art confectionery ⑤】The shape is not the only factor that we pay close attention to, but the flavor and the texture too. When you eat one of our cookies, you may feel nostalgic, like you are back in Showa period. However, it is not our intention to recreate cookies from the past, but instead to create a time capsule of Takashi Murakami’s memories. ⁡ To recreate the right flavor and texture that lives in Murakami’s memories, the baristas made many sample cookies, but were unsuccessful in doing so. Until Murakami gives a go sign, the baristas go through the process of making samples and presenting it, and if he makes notes on the cookies the baristas reflect it into their next sample. 【芸術菓子「となりの開花堂」の道のり④】クッキーの開発は難航します。初めての事が多く、バリスタさん達もどこから始めたらいいのか。 ⁡ となりの開花堂は村上隆の象徴的キャラクターである「お花」をメインにクッキーを開発していくのですが、求められる再現力とクオリティーは高く、何度も試行錯誤を繰り返すのです。最初の試作ではお花の顔が花弁より沈んでしまい、なんともらしくない物になってしまいました。アートである我々のクッキーは彫刻作品の様な立体感が求められます。そんな形を再現できる型を作るべく、カイカイキキの造形スタジオとやり取りを始めるのですがここでも難航。花弁の微妙なふくらみや顔の立体感などを表現するために幾度となく型を作り直すのです。 ＝＝＝ 【History of “Tonari no Kaikado,” an art confectionery ④】The cookie making process doesn’t go smoothly. The baristas also are confused to where to start. ⁡ Tonari no Kaikado starts creating cookies based on the “flower” by Takashi Murakami, but to reach a high quality shape, the baristas go through many trial and error. The first trials had the face sink into the petals, and was not a look we hoped for. For it is an art cookie, it must have a three-dimensional look similar to that of a sculpture. To create molds that allows us to make such cookies, we started working with Kaikai Kiki’s sculpting team; but the battle still continues. 【芸術菓子「となりの開花堂」の道のり③】 事業を変更する事はもちろん簡単な話ではありません。そもそも「お花のお菓子とは？」と言う問いからのスタートです。BAR ZINGARO時代は、タルトやティラミスなど、色々なお花のスイーツをカフェで提供してまいりました。それを写真に撮ったり、楽しまれたりするお客様の笑顔を見ることが、スタッフの毎日の喜びでした。 コロナによりお客様の来訪は叶わなくなったものの、それでも、その楽しみを違う形でお届けすることはできないか、そう考えて、開花堂の缶クッキーは誕生するのです。 しかし、当初、クッキーの開発に携わったのは、パティシエではなくカフェのバリスタさん達でした、、、 === 【History of “Tonari no Kaikado,” an art confectionery ③】 Of course shifting business is no easy task. 【芸術菓子「となりの開花堂」の道のり②】そこで我々は「ならば旅の経験を送付出来るサービスに切り替えよう」と考え、お土産製造配送事業へと方針を変更。もうBARではなくなり、贈答品屋さんとして響きの良い名前に一新しようと言う事で「となりの開花堂」に変名しました。 「となりの」は、『となりのトトロ』の「となり」の名義で付けられています。カイカイキキは「Tonari no Zingaro」や「となりの村田」など「となり」の名義で運営しているお店が他に4つあります。「開花堂」の「開花」は村上隆の「お花」に因なんだのと、コロナによって世界が「文明開化」する今、その「開化」と文字合わせて名付けられました。コロナによって閉店したBAR ZINGAROからバトンを受け取った「となりの開花堂」。しかし、食とアートを融合させるチャレンジはまだ始まったばかりです。 === 【History of “Tonari no Kaikado,” an art confectionery ②】To provide a service that our customers can enjoy the experience of traveling through delivery, we have decided to shift from a cafe to a gift based business. Since it no longer stands as a bar, we have changed to a more fitting name to a gift store, and named it Tonari no Kaikado. “Tonari no (my neighbor)” is named after “Tonari no Totoro (My Neighbor Totoro).” There are four other stores run by Kaikai Kiki including “Tonari no Zingaro” and “Tonari no Murata.” “Kaikado (Bloom)” was inspired by Takashi Murakami “Flowers” along with “Kaika” from “Bunmei Kaika (Civilisation and Enlightenment)” that is currently happening due to COVID-19. Tonari no Zingaro received the baton from the now closed BAR ZINGARO. 【芸術菓子「となりの開花堂」の道のり①】先日「となりの開花堂」が初めての販売から一年経った事をお伝えしました。今回は「となりの開花堂」の誕生に至るまでの葛藤などをお話したいと思います。　 「となりの開花堂」の前身である「Bar Zingaro」は元々、村上隆のファンが東京に観光旅行中、村上の本物の作品に囲まれながらお茶ができる、ファンにとってはたまらないバー／喫茶店でした。コーヒーサードウェーブの旗手として、突如渋谷に出現したノルウェー産のフグレンコーヒーに店内内装から、コーヒーの調達、バリスタの育成までをお願いして、開店、運営をしておりました。コーヒーはもちろん、ケーキやお花バーガーなど様々な食品を販売しており、多くのお客様から大変好評いただいておりました。しかしコロナによって旅行が出来なくなった今、残念ながら「Bar Zingaro」は7年の歴史に幕を閉じます。 === 【History of “Tonari no Kaikado,” an art confectionery ①】Few days ago, we mentioned that it has been a year since Tonari no Kaikado had its first release. This time we would like to introduce you to how Tonari no Kaikado came to be. Bar Zingaro was the former name, and was a one of a kind bar/cafe where fans of Takashi Murakami can go drink and dine while being surrounded by his work. It was the place to be for Murakami fans whilst their visit in Tokyo. As the standard bearer of the third wave of coffee, Fuglen Coffee from Norway guided Bar Zingaro all these years, from interior design to coffee brewing to training baristas. Bar Zingaro served all kinds of food and drinks from coffees, to cakes and flower burgers.
