I love to put spinach to my mashed potato to give it a little bit of a glow up. Here’s my Mashed Potato Recipe with a twist if you’re interested to try.
🥔 Mashed Potato Recipe 🥔
Ingredients:
3 lbs Redskin Potatoes
1 can drained and rinsed white beans
4 tbsps Nutritional Yeast
1 tsp Garlic Powder
1 tsp Onion Powder
Salt
Soy milk/Any plant-based milk (add as much as you want)
2 handfuls of Spinach
Directions:
Boil the potatoes.
Once done, add the can of drained and rinsed white beans.
Add all the seasonings (Nutritional yeast, garlic powder, onion powder, and salt).
Mixed in with your choice of milk and spinach.

Meal prep for this week! These rice/ramen noodles were a hit! Yummy & most importantly, they are filling! I found them at @costco where I also bought the chicken skewers, broccoli & fruit! One stop shopping!
We cooked the noodles in bone broth & seasoned with olive oil. I made roasted broccoli with olive oil & garlic salt & just baked the chicken skewers.
We make 3 meals a week & do something different on the days in between! I’ll continue sharing those ideas as well!
Meal prepping has made life so much easier!! If you &/or your kids are willing, it has saved us time, energy & our sanity to be prepared ahead of time!!

in honor of the @cleansimpleeats protein pancake & waffle mix being on sale this week, I thought I would share this delicious breakfast that I had yesterday 😀
I used their high protein waffle recipe and topped them with berries & whipped cream.
High protein waffle recipe:
60 grams non fat greek yogurt
46 grams milk
46 grams egg whites
56 grams @cleansimpleeats vanilla protein pancake mix
Makes 4 waffles for 397 calories including the berries and lots of whipped cream.
Each serving of the protein pancake mix has 15 grams of protein and 197 calories! It’s so delicious!

brownie breakfast loaf (gluten-free + dairy-free)🍞🍫
what’s better than a brownie for breakfast? NOTHING!!! and last Sunday for book club, i made a thicccc, nutrient dense, flavor packed breakfast loaf that is filled with no weird ingredients - just the good stuff! it was a hit, so i had to share. 😎
what you’ll need;
1/2 cup oat flour
1/2 cup cocoa powder
1/2 cup sweet potato, mashed (about one medium sized sweet potato)
2 eggs
1/8 cup milk of choice
1/2 cup nut butter of choice (sun butter for allergen friendly)
1/4 tsp baking soda
1/4 cup coconut or cane sugar (optional, but not needed, depends on sweetness you'd like)
@enjoylifefoods chocolate chips on top
preheat your oven to 425° and bake your sweet potato for 45 minutes, or until it is soft and you can mash it. then mix your mashed sweet potato with all of your other ingredients until it is one evenly distributed mixture, i chose to use my food processor but you could usually use a handmixer as well! spread your batter in a loaf pan and bake for 20 min, or until a knife comes out clean from the middle. and now, enjoy!!!!!!!!

Ingredients

- 15-20g peanut butter powder
- 20-25g blueberries
Mix peanut butter powder into yogurt BUT not all the way! The key is to leave some of the powdery chunks.

leaving for our conference meet today, so I obviously had to bake some snacks to bring 🥳
haven’t gotten creative in the kitchen in AGES, it was so fun baking again, can’t wait to do more of it this summer.
SWEET POTATO BANANA PROTEIN MUFFINS—>
- mash 2 ripe bananas in a bowl
-add 1/2 cup sweet potato purée and 1 egg and mix
- add in 1 scoop of maple donut @cleansimpleeats protein and 2 T honey
-fold in 1/3 cup oat flour, 1/2 cup whole wheat pastry flour, 1 tsp baking soda, 1 tsp baking powder, cinnamon, and salt.
(thin with almond milk if desired)
-pour into muffin mold and top with dairy free chocolate chips
-bake at 350 for 30 min
-let cool and ENJOY

Are you concerned that you will get “bulky” from weight lifting??
I picture someone doing a weight training workout one day, then waking up the next day looking like Mr. Olympia 😂 NOT GONNA HAPPEN LOL!
If you’re afraid to wake up looking like Arnold Schwarzenegger, DON’T BE! The people that actually get “big/bulky” from weight training work at it for yearsssss - it takes a caloric surplus over a very LONG (years) period of time! Bulkiness does not happen over night and it will not happen to you unless that is what you are working towards.
⭐️⭐️If you sometimes “feel like you’re getting bulky”, after you start weight training, what you’re probably experiencing is a “pump”. This is when blood flow and water supply increase to the broken down muscle fibers from the muscles worked to get them nutrients, and to help with recovery. It creates an illusion of an increase in size.

Progressive overload-To make your workouts more challenging over time which will place greater stress on your muscles!!
How can this be done-
*Better technique-technique should always be priority!! No matter what workout you are doing technique should always be priority👌
*Increasing your weight-‘gradually’ increase the weight when you have been doing the exercise with correct form and same routine ideally for 2-4 weeks..adding far too much weight too soon can cause injury..it’s not a race!!🚴♀️
*Adding more repetitions-focus on adding more reps to your sets for each workout (doesn’t always have to be about adding weight)👍
*Shorter breaks in between sets-taking shorter breaks between sets will give your muscles less time to recover🥵
*Adding more training session’s-working out more often can to help increase muscle gain💪
*Changing your movements-lifting the same load for an increased range of motion, but please remember range of motion varies from person to person, not everyone’s anatomy is the same💀
*Time under tension-this can be done either on the eccentric or concentric contraction..example when squatting on the way down slowly, count to 3 then straight back up with speed⚡️

I mad a yogurt bowl for breakfast this morning but changed the base up a bit…
I left out the SF Jello Pudding Mix and used @cleansimpleeats strawberry cheesecake protein powder instead. Mixed it with the NF Greek yogurt and FF Cool Whip! So much flavor and extra protein!
Topped with @safeandfair birthday cake granola, a drizzle of melted SF frosting and a couple sprinkles for good measure 😉
Delicious way to start the morning!

Directions:
