Here are my tips on how to make your seedy toppings stay! 💫 Dip your strands in either water, egg wash, or lightly coat in oil & *generously* coat them in sesame seeds or your favorite topping 💫 After coating entire strands in seeds/topping, gently dust all strands with flour before braiding to help prevent them from sticking together, help maintain definition, and to absorb any remaining moisture or dampness from the water/egg wash/oil 💫 When it’s time to do the egg wash before baking, try to be precise in the way you add the egg wash to the non-seeded strands. Carefully use a brush (the smaller the better, depending on the size of the strands) or you can even use your finger tips to apply egg wash. Black Forest Dessert Cup... 🍒🍒🍒🍒🍒🍒🍒🍒 Saying hello to the cherry season with a delicious and flavourful take on the classic black forest. Reel on @passionateaboutbaking Makes 2 x 300ml dessert cups Biscuit base 50g Bourbon biscuit crumbs Almond cream 100g cream cheese, cold 1tbsp icing sugar 50g whipping cream, cold Few drops almond extract Cherry filling 125g fresh cherries, pitted 1tsp cornflour 1 tbsp water 25g sugar Juice of 1/2 lime Chocolate layer 75g cream, 25% fat 50g 46% dark chocolate, chopped Almond cream In a small bowl, beat the cream cheese and icing sugar until smooth. Reserve. In a larger bowl, beat the whipping cream until firm, then whip in the cream cheese and almond extract. Cherry filling Whisk everything together in a heavy bottom pan, then gently simmer for 5-7 minutes until thick and glossy, stirring often. Strain the cherries out, reduce the remaining liquid over low heat, then stir it back into the cherries. Cool. Chocolate layer Heat the cream in a bowl. Add the chocolate and leave to soften. Stir until smooth. Assemble } Line the base of each dessert glass with biscuit crumbs, 25g each.
