For Chefs, I’m almost done with working on probably the most eclectic and fun menu I’ve ever done for a restaurant in my career (@makosa.sbc). Immersive and definitely experiential… I’ve been working on it for the last 5 months 😩. Trying to create something that resonates to everyone’s palate, nothing too heavy on aesthetics (because Ghana will chop on aesthetics so we go on quality, flavor profile then presentation). I still think it’s important to note that Makosa was Ghana’s first truly Pan-African restaurant and that on its own holds such an iconic place in the culinary landscape of Ghana hospitality (but don’t mind me I’m just biased …. but it’s FACTS) It hasn’t been easy because; 1. I’ve experienced creative block more than twice in the last 45 days and even more at the beginning- my process of menu writing is weird (I’ll share one day) 2. I’ve been tired - enough times 3. I’ve been mentally exhausted - plenty, plenty 4. I’ve had to do intense research - yup I had my ‘old bag lady’ moments moving around with tonnes of recipe books and other research stuff 5. I’ve had countless sleepless nights 6. A gazillion solo off site office hours - s/o to my favorite spot. 7. I’ve also hidden from the day to day work life because that was draining. Found a new hiding spot at work but not really at work 8. I’ve drank coffee, water and wine IN THAT ORDER for days!!!! 9. POSTCARDS FROM ELMINA…. Would you believe me if I told you it took me 5 years to get here…. This is the furthest I’ve been out of Accra! 🤦🏾‍♂️🤦🏾‍♂️🤦🏾‍♂️ As much as I’m Southern African there’s so much about these former Slave Castles that impacts every African! It’s a HOMECOMING for us all - an amazing experience that leaves you emotional to say the least (I thought I wouldn’t be that person but alas it did 🤣). The stories you hear though gruesome, cringe and heartbreaking leave a forever profound impression of acceptance, peace and progression….. I’M GLAD I CAME!

from the ‘Kandiro Tapas Menu’ …. Familiar flavors, colorful food and the only thing missing here is Sadza … a deep fried croquette or maybe our classic favorite sorghum goko crisps -hove- kariba bream (tilapia) fillet | smoked paprika | piri-piri | kale | butter | agar agar | chili oil * * • dry rub fish fillet in smoked paprika, dried chili flakes, cumin, garlic flakes, mixed herb, salt… smoke for 30-45mins depending on thickness (an hour is perfect too) • hibachi grilled over super hot binchotan coals (3-5 mins tops both sides) • place in a piri-piri oil bath immediately from the grill • cook collards in salty boiling water till soft, add butter and cream biltz, strain add bloomed agar agar mix thoroughly and place in siphon with a singular charge. Place in refrigerator till ready for use. • throw collards/kale (stem removed) in hot oil - till crispy • tomato + onion gravy ‘soup’ can be made way in advance - binchotan grilled smoked tilapia fillet, kale chips, tomato + onion gravy ‘soup’, kale espuma, chili oil, micro herbs + edible flowers . . . . Some of y’all need to deal with your past traumas so you can live a better life and have better relations with people. Some of y’all do people wrong and wonder why sh*t keeps happening to you - be truthful, honest and sincere AUTHENTICITY + INTEGRITY matters!!!
