The sugar content steadily rises while acidity levels decline. Achieving the perfect balance between sugars (which determine potential alcohol levels) and acidity is important in creating wines of exceptional quality. Marjan closely monitors metrics like must weight, total acidity, and grape pH to determine maturity. Finding the right balance between those factors to create the perfect taste of our wines. We haven't been posting as frequently these days because we've been busy with the harvest😉. Fortunately, we were able to take advantage of the beautiful September weather and have completed the harvest for Pinot Grigio, Sauvignon Vert, Sauvignon Blanc, Chardonnay, and Pinot Noir🍇. Additionally, we've harvested a part of our Rebula grapes for our Rebula Brda Classic 2023 vintage. Considering the weather challenges we've faced this year, we are very pleased with the quality of the grapes. However, approximately one-third of the vineyards are still waiting for harvest, including our versatile Rebula grapes for our Opoka line, which are still maturing.
