Made a delicious salmon carpaccio the other day, pairing it with a strong, but very refreshing Martell mint julep, the dressing keeps very well and can be stored in a jar, simply shake it up before use to emulsify everything together and you can use this over salads as well! Salmon carpaccio dressing: 1/2 cup Martell Cordon Bleu 1 whole orange, juiced 1 tsp honey 1 tsp mustard 1 pinch of salt 1/2 cup of olive oil - Carefully flambé the Cordon Bleu until all the alcohol has burnt off, then add in the orange juice and cook to reduce until the volume has halved. - Add in the honey, mustard, salt, and then whisk in the olive oil to emulsify #martell #cocktailrecipes #carpaccio #salmoncarpaccio
