Here’s an amazingly delicious okra/ lady fingers/ bamia curry recipe for lovers of curry like me! Wash your okra well and cut it into bite size pieces. In a pan, pour some oil and shallow fry your okra for about 6 minutes as you geuza them! In a bowl, pour one cup of natural yoghurt then add a teaspoon each of cumin powder, coriander, garam masala and red chili powder(Kashmiri pepper) and mix well. Keep aside. Remove the okra from the pan and set aside. Add a little more oil to the pan and add cumin seeds and pili pili and cook for 30 seconds then add 3 diced onions. Cook till translucent. Add ginger/garlic paste, then turmeric powder and a tsp of Kashmiri chili. Add 3 blended tomatoes and let this cook down under medium heat for about 5 minutes. Add the yoghurt mix and a little water and let it cook until oil floats on top. The aroma in your kitchen at this point is 😋😋 Add the okra, some salt and half a cup of water. Cover and let it cook for about 7 minutes. Serve with rice, chapat or naan. Thank me later!😉
