As a vegan I always have to find ways to make my food more fun and exciting. This cranberry and pumpkin seed salad was both. It was both delicious, nutritious, and healthy. The cranberries give it a sweet kick, and the pumpkin seeds gave it an interesting and nutritious twist. It is light and pleasent while still filling.
