The problem with a birthday in July is the heat causing my icing to melt 😏 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Might have got a bit over excited with sprinkles this time ✌🏻🎂🎈
I’m back. the best food, the best beaches, the best life 😍 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ (it is usually amazing diving, but the ocean has decided otherwise this week - with too much swell and terrible visibility 🙈)
Bali grows on me a bit more each time I pass through (to dive at other islands). The epic vegan cafes definitely help 😊 🌱
It’s been a while since I made a cake. This makes a small double layered 6 inch cake Whisk together in a bowl: 270ml oat milk 70ml oil 1 tsp vanilla extract 2 tbsp golden syrup Then add in: 270g self raising flour 150g sugar Mix. Pour into 2 round tins. Then bake at 180 degrees C for 20mins (or until done)
After some adventures in the Korean supermarket last week, I bought too many things to experiment with. First up - bibimbap! This probably isn’t very authentic. But was all I could manage with the vegetables I had to hand. This is pretty much all I ate when I was in Korea a few years ago! This bowl has - crispy tofu (cooked in sweet soy sauce and gochujang chilli paste). Carrots in sesame oil, maple-roasted squash, edamame, green beans, cucumber, daikon and short grain brown rice. Sauce - gochujang mixed with maple syrup and soy sauce. Then I tried making kimchi (watch my stories to see how that went!).
Eating all that traditional food in Helsinki 🙄 this ramen was awesome though - I’ve only had ramen once before (in a train station in Tokyo - the only place in japan which seemed to do vegan 🤯 ) so I don’t have a whole lot of experience to compare to!
All the best things in a bowl. And that ginger latte 😍 It has been raining almost all day, every day since I got to New Zealand 🤯 I got lucky with some sun on one day and headed up Franz Josef for a glacier heli-hike - insane 😍 Now for a few days by the lake 🌲 #straydays #straynz
On my way to New Zealand - and sneaked in a stop in Sydney for a couple of days. The only reason being so that I could visit all the vegan cafes....🙈 Food is pretty awesome here ✌🏻😍
Happy world vegan day 🌱 Four years ago I would never have told you that my one week experiment would last this long - but it’s addictive! I mean who doesn’t want to eat pancakes that look this good?! 😉
Costa Rican breakfast ✌🏻 pinto (rice, black beans, red pepper and coriander) with plantain and avo 😍😍 and ready for a lazy day
Back in my favourite place. At my favourite cafe 😍😍 diving. Eating. Watching whales. Yoga. Jungle. Do you need anything else?!
Just a little birthday cake I made earlier 🎂 🎈
