Tonight I made my very special speedy Shepherds Pie!!! Sauté onions (Sunday meal prep saved more time) add x2 cans of lentils, x1 can of chickpeas, 1 cup of frozen peas and season with S&P, add your favourite herbs (I love my parsley bush 🌱 and use it daily in all my recipes) and spices. Once cooked place in an oven proof dish. Then mash potatoes (we already pre-cooked them ready to go! #mealprep) season and layer over mixture, grate cheese and place in oven for 10-15mins or until golden brown. Super quick and tasty! We have had a great start to our school holidays 👫👬👭 here in Australia 😉 but all we can think of is our wonderful time together in Europe. One of our favourite spots during our trip was this little fisherman’s coastal town in Croatia. In between Dubrovnik and Split. It would go down as one of the best experiences for all of us and how we need to appreciate the small things in life and that the big things really don’t matter. Love one another, have a roof over your head, clothes, food and catch up with your family and friends. That’s the European way of living. Nothing fancy or too complicated, they don’t care for six packs or bikini ready bodies, all they possess are great big smiles on their faces and are such happy people. To me, this is living. XxDani

Friday night #homemade pizzas 🍕 this recipe goes out to all my #glutenfree lovers. Ingredients 2 cups flour ½ cup chia seeds Crushed garlic 1tsp salt 1-2 cups of water Method Mix all dry ingredients with wet and you instantly have yourself the quickest pizza base ever! If it’s too dry simply add more water. Too wet, sprinkle more flour and mix into a dough consistency and roll out to your favourite pizza shapes and sizes. I use a frypan to cook the base as I place the toppings eg: tomato sauce, basil, capsicum, pineapple and cheese. Once the base is crunchy and cooked I place it in a preheated oven grill and bake the toppings for 5-10 minutes until cheese has melted and everything is golden brown. I may not have all the answers but I can tell you I have experienced and been exposed to it all (if I haven’t personally experienced it, I have helped others who have) from family separation and disconnect, alcoholism, marriage break ups, losing a child, divorces, child birth complications, cancer, miscarriage, chronic pain, substance abuse, affairs, abusive relationships, depression, moving overseas/interstate, suicide, daily weight loss and living a healthy life juggle, food addiction, start ups, business fails, financial loss, relationship blocks, affairs and so many other #reallife experiences!!! As I mentioned, if I haven’t personally experienced what you have, I have assisted others who have and helped them overcome their loss, heart ache, challenges, fears so they too can heal and create a new happy life. Life isn’t always rosey but it doesn’t need to be a road full of thorns either. My biggest skill and strength is never giving up, being resilient and that’s where I feel I can help you too! I answer so many DM’s daily from people all around the world and I feel so strongly about this next move. I want to make a central, safe, trusting place for us all to share our day to day thoughts. To be comforted and to know that what we are going through, someone else is too and you know what??? They survived and so can YOU!!!! Together we can all provide so much value and sure these once off inspirational Instagram posts are great to read but I want YOU to have a place daily where we can all hang out with the Dani & Co. Community, as ALL of us can offer some sort of support and help navigate our way through this busy modern day life!!!! It’s #throwbackthursday and boy do I know about weight loss and how tough it can be??? I did it 4 times after having our @Nomadz6 but I have also been going up and down the roller coaster of life, as seasons change so do our moods, life circumstances, food and exercise habits, body confidence and ultimately our mindset !!! After having 4 kids and being on various yo-yo diets and exercise programs, I have seen and done it all. In fact I just did it again, self sabotaged and over indulged in Europe but you know what??? Who cares???? It’s only fat loss (it does melt away....) as long as we tweak our lifestyle back into routine.
