Have you seen my reel making these breakfast oat cookies? So easy, nutritious, and pretty yummy. Not only Sweet Pea loves them but also the rest of the fam here. 😊 Breakfast Oat Cookies Makes 13 cookies ▪️1 cup quick oats ▪️1/4 cup whole wheat flour ▪️2 tbsp hemp seeds ▪️1/4 tsp baking soda ▪️3 tbsp olive oil ▪️2 tbsp honey or maple syrup ▪️1/2 cup plain yogurt ▪️(optional) 1/4 tsp salt *Note: no honey for babies under one-year-old. 1. Preheat oven to 350F. 2. Mix oats, flour, hemp seeds, baking soda in a bowl. 3. Add olive oil, honey, yogurt, and salt if using and mix well. Let the mixture sit for 5 minutes. 4. Line a baking sheet with parchment paper. Scoop 1.5 tbsp of mixture on to the baking sheet. Press with your fingers to flatten it into 1/4 inch thickness. Repeat for the remaining mixture. 5. Bake for 15~17 minutes until the edges start to brown. 6. Carefully transfer the cookies onto a rack and cool. Store in an airtight container at room temperature for up to 3 days. . Happy collage from a couple weeks ago, but in reality, this week was brutal. I feel like I’ve not only wore two hats this week, but three or four. Forget about taking a shower today. I’m wiped out. Tuna-veggie spread . 1 can (5 oz) tuna 1/3 cup frozen peas, microwaved 2/3 cups frozen corn, microwaved 1/3 cup cherry tomatoes, chopped 1 to 2 tablespoons chopped onion 3 tablespoons mayonnaise . These Mac n cheese cups turned out very cheesy and yummy. Spinach taste is unnoticeable- I only added it for extra nutrition. You can add a small handful or a large handful, up to your preference. Second pic is right after I took the first pic. She was standing there eager to touch the food. She graciously waited 1 minute while I took the pic. 😂 Spinach mac n cheese cups 1 handful of baby spinach 1 cup whole milk 2 cups macaroni pasta 1/2 tsp olive oil 2 tbsp butter 2 tbsp all-purpose flour 2 cups (8oz) shredded sharp cheddar cheese 1/2 cup grated parmesan cheese 1 egg, whisked panko bread crumbs for topping 1. Adjust rack to the middle and preheat oven to 400F. 2. In a high-speed blender, blend spinach and milk until smooth. Set aside. 3. Cook pasta 1 minute shy of al dente and drain water. Place pasta in a bowl and toss with olive oil. Set aside. 4. In a large saucepan, melt butter over medium heat. 5. Add flour and whisk continuously until golden brown and bubbling-about 1 minute. 6. Whisk in spinach-milk and bring to a simmer. Turn off heat. 7. Add cheddar and parmesan cheese and whisk until completely melted. 8. Mix in whisked egg and pasta. 9. Line a muffin tin with silicone muffin cups. Distribute the mixture evenly. It will look like a lot of sauce but don't worry. It's what gives the flavor. 10. Top with panko bread crumbs. It gives a crunchy texture. 11. Bake for 18-20 minutes or until the top is golden brown. Cool for 10 minutes before serving. . Save and share with a friend who would enjoy this post. ❤️
