Right now I am trying to use up foods that have been in my cupboard for waaaay too long. Things like buckwheat and a can of young jackfruit🤔 I actually have a story highlight where I show you how I always prepare my jackfruit. After preparing it like that, I added chopped celery, courgette and diced tomatoes and let it simmer until all the vegetables were cooked. Then I simply cooked the buckwheat and added the sauce to it. This is a perfect meal to take to work. Two days ago I made I made my first garlic "butter". The twist for this recipe is to not use actual garlic though, but a plant that you can easily pick outside while going on a walk. The plant I collected for the garlic butter is called GARLIC MUSTARD. When cutting and rolling it in between your fingers this plant smells just like garlic and tastes like it too.😊 So you have something that smells and tastes like garlic but is no garlic. Nature is just amazing. I just mixed the garlic mustard with margerine and seasoned the mix with pepper and salt. I enjoyed it on some onion bread and while it might not be the healthiest thing to eat, it definitely was one of the tatsiest things I had in a while. And it's perfect to have with a biiiig salad. The theme of my food today seems to be: White with a slight hinch of orange and yellow😂 I have to admit that I felt totally uninspired today, but my food turned out smelling and tasting soooo good, so I am really happy.😋 I cooked some pasta with kohlrabi until both were soft, rinsed the water and mixed in some sriracha mayoo and curry ketchup (I know I am lazy, but it's just the best combination ever!🙈) and then fried up two vegan sausages, cut them up and also mixed them in. 🥕🍚This is my take away lunch for work today. It was totally improvised, because I had to use up some carrots that would otherwise have gone bad. The rice is simply cooked basmati rice. For the mash I cooked some carrots and cellery until they were soft and pureed them. Then I added kurkuma, curry powder and black pepper. As a little garnish I used hemp seeds. I needed food so badly today after my 12km run.🏃🏽♀️😛 So I threw together some vegetables (pepper, courgette, carrot and beetroot) and fried them in some olive oil. Later I fried two vegan burger in the same pan so that they would absord the rest of the "juice" that was still left from the vegetables. In the end I added some vegan feta cheese, wich gave the dish just the kick of saltiness. For the past couple of weeks I have baked a different cake every weekend.🍰🥧🎂 So because everyone is posting something easter themed today I thought, I'd share this carrot cake recipe with you. I don't take credit for the recipe, I found it somewhere on the internet, but I cannot remember where, sorry. But anyway, here is the recipe: CAKE BATTER: 3-4 grated carrots 150g of spelt flour 200g of apple sauce 100g of chopped almonds 200g of grounded almonds 150g of cane sugar 60g of margerine (room temperature) Zest of one whole lemon 8g of vanilla sugar 1 tsp. of baking powder 1/4 tsp. of cardamum 1 tsp. of cinnamon Pinch of salt TOPPING: 100g of powdered sugar Lemon juice Mix the ingredients for the cake. Take a 26cm diameter baking tin and grease it in margerine or line it up with baking paper. Preheat the oven to 180°C and then bake the cake for about 35-40min. Check it regularly. Then mix the powdered sugar with the lemon and as soon as you take the cake out, pour the mixture onto the cake. The cake will absoeb it and become nice and lemony. 🤗Whenever I don't know what to prepare for lunch I simply make a veggie tofu stir fry. I soak the tofu in soy sauce and then throw everything into a pan with some olive oil. It's quick, it's always tasty and you can simply use the veggies you have left in the fridge.😊
The best, quickest and easiest Pasta Salad ever😍 Cook some pasta of your choice, meanwhile cut up dried tomatoes, black olives, vegan feta cheese and basil. APPLE PANCAKES anyone??🥞🍏 To make them you need 100g of flour, 125ml of any plant milk, 8g of vanilla sugar and one teaspoon of baking powder. Mix it till you have a batter and then pour it into a non-stick pan. As one side is baking, take some sliced apples and put them on the still "liquid" side of then pancake. Then flip them and bake the pancakes until done. You don't need to precook the apples, just don't slice them too thick.😋 I always have my pancakes with sugar and cinnamon on top. One tip for making delicious pasta without a sauce: 🥦Take your broccoli and throw it into the water for your pasta as you are heating it up. As soon as the water is boiling add the pasta and cook it al dente. When the pasta is done the broccoli should be really soft, that when you drain the water and mix everything the broccoli should fall apart and become very creamy and that way act like a "sauce".🍝 I use this trick all the time. Today I also sweet corn and some sriracha mayoo.😊 Now I am heading off to work and taking this delicous lunch plus some extra salad with yoghurt sauce with me.
