KÖFTELİ SÖĞÜRME KEBABI: 👌🏻 Ingredients for Köfte: 500 gr ground beef or lamb 1 onion - grated Salt, ground pepper, cumin 2 tbsp breadcrumbs 1 tbsp olive oil Parsley (a handful, chopped) Ingredients for the Base: 3-4 aubergines (eggplants) 1 Italian sweet red pepper Olive oil Salt Tomatoes, green long peppers, parsley and mint for decoration Roast the aubergines (eggplants)🍆 and the red pepper in the oven for 50 minutes in 190 C / 375 F. Red pepper cooks faster so you should take it out after 25-30 minutes. Set them aside to cool down for 15 minutes, peel them and then dice them. Mix with olive oil and salt. Köfte preparation: Peel and grate the onion. Mix all the ingredients for köfte in a deep bowl, including the parsley and knead for 15 minutes. Make meatballs that have the size of a big walnut. Let them wait in the fridge for half an hour. After the resting phase, fry them in a pan with vegetable oil and then fry the tomatoes and green peppers that you will use to decorate the dish. How to serve: Place the aubergine mix at the bottom of the plate. Add köftes on top and then the cooked tomatoes and peppers. Sprinkle the chopped up parsley and mint. Optional Sauce: Melt 2 tbsp of butter in a pan and then add some paprika and red chili peppers. RED BEAN SALAD: 👌🏻 1 cup of red beans 2 small cucumbers 1 tomato 1 red onion 1 red sweet (Italian) pepper 1-2 pickled cucumbers Olive oil 2 tbsp vinegar Salt Dill If you don’t have much time, use canned red beans but don’t forget to rinse them with water and drain. If you have dried version at home, soak them overnight, change the water and boil them for at least 40-45 minutes. Check them after 40 minutes. Peel the cucumbers, tomato and onion and dice them. Dice the red peppers and pickled cucumbers too. BEETROOT MEZE: 👌🏻 You know I’ve been asking you about which dishes you cook with beets? I was planning to post this recipe and was at the same time looking for different recipes with beets. Because they are very delicious and more importantly very good for health! Few calories, high in fiber and is a good source of vitamin B9 (folate), manganese, iron and vitamin C. 🙌🏻 Ingredients: 2 large beets 1 cup of yoghurt 1 clove of garlic 1 tbsp of extra virgin olive oil Salt Dill Peel the beetroots and boil them till they are soft and tender. Cut them in cubes. Crush the garlic. Add the yoghurt, salt, olive oil and garlic and finally and mix them. Decorate with some chopped dill. This is a perfect side dish next to meat and fish dishes 😍 If you are vegetarian then you can combine this with rice, quinoa, bulgur or any other veggie dish. ALİ NAZİK KEBAB with a twist 😉 This kebab is a delicious combination of grilled eggplants (aubergines) mixed with yoghurt, topped with lamb or beef. Ingredients: 400-500 gr boneless steak or lamb meat 2 large eggplants (aubergines) 1 cup of Greek (or strained) yoghurt Olive oil 2 cloves of garlic Salt, pepper, cumin Parsley or dill to decorate Preheat the oven to 180C /350 F. Make small holes on the aubergines with the help of a fork (basically stab with a fork a couple of times). Place the aubergines on the oven tray covered with a baking paper around 45 minutes until they get very soft. Place them on a dish outside and wait for 10 minutes before you peel them off because they will be too hot 😅 Cut the meat in thin strips (like fajita meat) and then marinate them with olive oil, salt, cumin and pepper for half an hour. I used a wok pan this time but you can use a normal frying pan too. Drizzle some olive oil and add the beef strips on the pan.Stir every 3-4 minutes and cook for 20 minutes till they are well done. Peel the aubergines, chop them up finely and then mix with the yoghurt and crushed garlic. Add some salt to taste. Place the eggplant yoghurt mix on a nice serving plate/bowl and add the meat on top. Don’t forget to add some of the sauce left in the pan. Colorful, delicious and healthy 🌈 What else would we want from a summer dish? 🥰 Ingredients: 2 large courgettes 1 large red sweet pepper (pimentos) OR 1 red or orange bell pepper 2 carrots 1 potato 1 onion 3 cloves of garlic 1 tablespoon of tomato paste Extra virgin olive oil Dill Peel and dice all the vegetables and add them in a dish/bowl except the onions. Add 3 tablespoons of olive oil in a cooking pan, add the diced onions. After the onions start turning gold, add 1 tbsp of tomato paste and stir well. Then you can add all the diced vegetables (carrots, courgettes, potato, red peppers and garlic). Cook and stir them for 2-3 minutes, add salt and ground pepper and add 1,5 cups of warm or hot water. Close the lid and cook in medium to low heat for 25-30 minutes. Decorate with some chopped up dill. KARNIYARIK (Stuffed Aubergines/Eggplants) 👌🏻🍆 Aubergines (eggplants) are one of my favorite vegetables and we have quite a lot of dishes made with this delicious vegetable. Today I will give you the recipe of one of them 😉 Ingredients: 4 large aubergines (we have smaller versions in Turkey but in Belgium I can’t find them so the ingredients are given for large aubergines) 300-350 gr ground meat (beef, lamb or pork) 1 large onion 4-5 cloves of garlic 1 handful of parsley 1 tomato 2-3 green peppers (Italian or Turkish type) Tomato paste Olive oil Salt and black pepper Originally we fry the aubergines first before filling them but I prefer roasting them in the oven instead of frying (healthier and no need to clean the stove afterwards). So you first need to cut the peel of the aubergines as stripes, then place them on the oven tray ideally over a cooking paper and rub them with olive oil. Cook them for 25-30 minutes in 180C / 350 F. While they are cooked in the oven, you can prepare the filling. Chop up the onion, sauté them in olive oil, then add the ground meat and the thinly chopped garlic - 2 cloves. Stir frequently and make sure the meat dissolves perfectly. Then add 1 chopped tomato in cubes and 1 tablespoon of tomato paste. When it is cooked (after 10 minutes), add the chopped up parsley and salt and pepper, stir well and set the pan aside. Take the aubergines out the oven, leave the oven on. Cut a deep slit on the aubergines and start filling them with the meat filling. Place the filled aubergines on a baking tray. Dissolve 1 full tablespoon of tomato paste in a bowl with 1 cup of water. Add some salt. Pour the sauce on the aubergines and add mostly to the sides. Decorate them with green peppers, garlic and sliced or cherry tomatoes. Place the baking tray back in the oven for about 15 minutes. We serve the aubergines with Turkish style cooked rice and cacık (tzatziki in Greek). I will give recipes of those later too. Sarma is basically rice, bulgur or minced meat wrapped in vine (grape) leaves. Its name originates from the Turkish word “sarmak”, which means “to wrap in”.. You can either have a full vegetarian filling with rice and spices, or you can have a meat version with ground meat or a mix of both. Today I’ll give you the mixed recipe. Ingredients: 400-500 gr vine (grape) leaves 200 gr ground beef 1 onion (grated) 2 cups of washed and rinsed rice 1-2 tablespoons of tomato paste Black pepper, dried mint, cumin, red chili peppers and salt Water, olive oil and fresh lemon juice Wash and rince the rice and drain it. Add the ground meat, 2 tbsp of olive oil, the grated onion, tomato paste, and all the spices that are on the list above. Stir them well to obtain a homogeneous mixture. If you have too much of the filling, you can use it to stuff other vegetables. Aubergines, peppers, even tomatoes or potatoes! 😉 If you have fresh vine leaves from your garden, I suggest soaking them in water with some vinegar for half an hour and then cooking them in boling water for 10 minutes. If they are coming from a jar, then you can just rinse them with water and then cook in boiling water for 5-10 minutes. Lay one leave on your table, add some of the filling, fold the sides of the leaf and roll it till the end and then repeat the same thing with all the leaves. Make sure you don’t add too much filling because then the sarmas will be thick and they might open while cooking. Place some leaves at the bottom of your pan first, to avoid the sarmas sticking at the bottom. Then place your sarmas on top of each other. Drizzle some olive oil and some lemon juice on top. Add warm water till it covers the sarmas. Close the lid. Cook them with low heat for 35-40 minutes. This time I also made a tomato sauce and it added to the taste a lot. So I basically grated 1 big tomato, mixed it with 1 tbsp of tomato paste and 1 cup of water. I stirred well to make sure the paste is dissolved and added on the sarmas before cooking. SİMİT: 👌🏻 The history of simit (Turkish bagel) dates back to the Anatolian era of the Ottoman Empire. At that time, flour warehouses were called as Simithane, and the sultan’s oven was called the simit oven. Ingredients: Dry yeast (10 gr pack) 1 cup of warm water 1/4 cup of sunflower or olive oil 1 tablespoon of salt 3 cups of flour (you can add a little more if you need to) 5 tablespoons of Pekmez (grape molasse) or maple syrup 1 tablespoon of flour 4 tablespoons of water Sesame To make a good dough, first add the yeast in a deep glass bowl like the one I used in the second picture. Add the luke warm water and stir gently to make sure the yeast is dissolved. Then add the oil, the salt and lastly the flour. I had to use 3 cups and a quarter of a cup in the end. Knead it with your hands for around 6 minutes. The dough will be a hard one, not a soft dough but please try not to excessive amount of flour. When your dough is ready, cover the bowl with a table cloth for 35-40 minutes for the dough to rest and rise. We need a large surface to make the simits. Cut out smaller balls out of your dough. I cut out 12 pieces and I could make 6 simits with this dough. Roll the small cut out doughs on the table or the counter and try to extend them to the sides while rolling. In the end you need to have 2 long tubes. Place them parallel to each other and roll in opposite directions to make a twist (check out the photos I posted). Meet and pinch the ends on both sides together to form a circle. Place 5tbsp of grape molasse (or maple syrup) in a bowl and add 4 tbsp of water and 1 tbsp of flour. Mix them well. Add sesame in another bowl and place them next to each other. Dip the simits one by one in the molasse water mixture (both sides), drain the sauce by waiting 2 seconds and then dip them into the sesame bowl. Afterwards they are ready to go on the oven tray! I cooked them for 17 minutes in 210 C oven. It can slightly change from one oven to another. Just make sure you check them after 15 minutes and see how they look. Christmas Nutella Tree 🎄🍪🍩 @cafedelites recipe 💖 Ingredients: 2 sheets of puff pastry 2 tablespoons of Nutella 1 egg yolk 1 tbsp of melted butter 1 tbsp of powder sugar (or cinnamon sugar) Lay the baking sheet on a sheet of cooking paper. Cut out the pastry sheets in the shape of a Christmas tree. Spread the nutella on one sheet of pastry. Then place the other cut out one on top of it. Cut slits on both sides with 2 cm spaces and twist the strips twice pressing the ends into the baking paper. Cut out two star shapes from the leftover pastry. Spread nutella on one and place the second star on top of it. Brush it with egg yolk and bake for around 25 minutes at 200 C (400 F). Brush with the melted butter once it’s cooled.
