This is a one-bite wonder to open up the palate, called Nilupak. Its literal meaning is “something that has been pounded.” Traditional nilupak often refers to mashed cassava mixed with a little sugar for merienda. Our version of this snack layers mashed kamote (local sweet potato), sea urchin, nata de coco, dalandan, grated cashew nuts, and a blue ternate petal, on top of a cassava crisp.🇵🇭😋

Our bar has gotten a lot more colorful since this photo was taken in 2016. From only serving just soda and water 😆 to having a full on beverage program (forever thanks to @davidong of @thecurator_ and @oto.ph!🙌🏽) to now offering more wines that pair well with our dishes (ask away😉)! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ We’re proud of our team that pushes to learn new things everyday but prouder that we are able to share what we learn with our guests.✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Have a great weekend, everyone!🥰
