For the past month I have been helping out on one of Denmark’s public hospitals called Bispebjerg. I have tightened up their current menu and recipes and it’s has been such a great experience being part of the team. I’m beyond proud for helping out and contributing to this project. Big respect to Michael, who runs the show, for being visionary when it comes to food served in hospitals. Most products here are ecological and we do a big effort to send the kitchen staff to serve the food and sit with the elderly while they are eating. It’s all about care and respect❤️

10 years ago I started at noma, and since then so many things have happened for me, noma and Copenhagen. I left for a few years to become head chef of Studio, but came back to be a part of the opening of the new noma. This has been a period of huge growth and learning for me, which I am very grateful for. I’m 40, I’m a father of two, and now, I’m ready to build a place of my own from the ground up. I would like to ask you to spread the news, because I am actually open for any suggestions and all possibilities. As a Dane, I love my home turf, but I am not set on any specifics about space, size or location. I’m ready to find a partnership where we can build something amazing together.
