Hi friends! I hope you are all staying happy and healthy during this time. Who else is spending a lot of their time at home... #baking? . . Well, have you tried to make #donuts yet? If you haven’t they are actually so easy to make when you bake them! Also, baked donuts do not require yeast, so if you are having a really tough time finding it (I know I am) you don’t have to worry when making this recipe! . . Here are some delicious chocolate dipped donuts for you to #stayhome and bake. They are gluten free, vegan, and nut-free! . . Donut Recipe: (makes 12) . . 1 Cup + 2 Tbsp #glutenfree Oat Flour (sub any gf flour blend) 2 Tsp Baking Powder 1/2 Tsp Baking Soda 2 Tsp Arrowroot Powder (sub potato starch) @bobsredmill 1/4 Tsp Salt 1 Tbsp Vanilla Extract 1/2 Cup Coconut Sugar (sub brown sugar) 1/2 Cup #vegan Vanilla Mylk 1 Tsp Lemon Juice 2 Tbsp Light Flavoured Oil (coconut, grape seed etc) 1 Tbsp Vegan Yogurt (sub apple sauce) . . Directions: . . 1. Pre-heat oven to 350 D F and grease your donut molds. 2. In a large bowl combine wet ingredients until smooth. 3. In another bowl combine dry ingredients. 4. Slowly add dry to wet ingredients and combine until smooth. 5. Using a piping bag or a spoon fill your donut molds. 6. Bake for 12 to 15 minutes. This will depend on your molds. I used silicone molds which typically require more time. 7. Remove from oven and let cool in pan. 8. Once cool transfer to cooling rack. 9. Prepare your glaze 10. Place a baking sheet under the drying rack. 11. Dip donuts in glaze and place donuts on the drying rack. Allow the extra glaze drip on the baking sheet below. 12. Let dry 13. Enjoy! . . Chocolate Glaze Recipe: . . 1 Cup Vegan Powdered Sugar 3 Tbsp Cocoa Powder 2 Tsp Vanilla Extract 1 - 2 1/2 Tbsp of Vegan Vanilla Mylk (I used Oat) . . Simply whisk all ingredients together until smooth. Add more mylk if necessary, but start small! You want the glaze to be thick. .

Here is an easy #grainfree #nobake bliss inducing snack recipe that I have been munching on lately. . . Stress Fighter Balls: . . Ingredients: . . 1 cup dates (pre-soaked in water) 1 tbsp ground flax 1/2 cup soybean butter (sub peanut butter, almond butter or sunbutter) 1 tbsp shredded coconut 1 tbsp vanilla extract 2 tbsp coconut flour @bobsredmill 3 capsules of stress fighter blend @welltoldco 2 tbsp maple syrup 1 tbsp vegan vanilla protein powder @tropeaka 1 cup chocolate chips (to melt and dunk the balls in) . . Directions 1. Blend dates in a food processor until smooth 2. Add all ingredients to the food processor and blend until well combined. 3. Scoop up 1 1/2 tbsp of mixture and roll into a ball. 4. Pop in the freezer to firm for 30 minutes 5. Melt down chocolate chips 6. Once chocolate is melted, submerge the bliss balls in it and place on a parchment lined plate or baking sheet. (Silicone will work too) 7. Sprinkle with coconut flakes 8. Pop in freezer for 30 minutes to an hour 9. Chocolate Covered Vanilla Protein Bars Recipe: . . Ingredients: . . 2 cups gluten free rolled oats @bobsredmill 1/2 tbsp vanilla 1 cup melted soybean butter (sub peanut butter, sun butter or almond butter) @sunbutter 2 tbsp vegan vanilla protein powder @tropeaka 1/2 cup maple syrup 1/2 tsp salt 1 Cup Vegan Chocolate Chips (to drizzle) @enjoylifefoods . . Directions: . . 1. Toss all ingredients in a blender except the chocolate chips. 2. Pulse until smooth. It doesn’t have to be too smooth... I like having little oat flakes. 3. Pour into a parchment lined loaf or cake pan. 4. Smoothen with a spatula. 5. Melt vegan chocolate chips. 6. Pour melted chocolate over the bars. 7. Cover. 8. Pop in the fridge to firm for one hour. 9. Remove from the pan. 10. Cut in squares. 11. Enjoy! . . These bars are now a regular part of my snack routine. My cousin and godmother are also loving them! They are delicious and so easy to make. . . Do you love #brunch? I am definitely a brunch gal and one of my fave things to have is french toast. We can’t go out for brunch right now, but that doesn’t mean that we can’t have brunch at home! . Here’s a super simple recipe that you can whip up to eat some brunch this weekend. . . . Vegan French Toast . . Ingredients: . . 1 Flax Egg 1 Tbsp Coconut Sugar 1 Cup Vanilla Oat Mylk @earthsowncanada 1/2 Tbsp Vanilla 1 1/2 Tbsp Nutritional Yeast 2 Tsp Cinnamon 2 Tbsp Arrowroot Starch @bobsredmill 1/8 Tsp Kala namak salt (optional) . . . Directions: . . 1. In a large bowl, prepare a flax egg 2. Whisk all ingredients together until combined. 3. Let the mixture set in the fridge for 20 minutes. 4. Get 6 pieces of thick bread (can be #glutenfree or not) 5. Bring a frying pan to medium-low heat with a tbsp of vegan butter or oil. 6. Dunk a piece of bread in the mixture. Make sure both sides are covered in batter. 7. Place bread on the pan. Cook for about 2-5 minutes on each side depending on the consistency of french toast that you like. 8. Repeat until all batter is gone 9. If you like your french toast super crispy. Pop it in the oven at 350 D F for about 10 minutes. 10. Enjoy your #frenchtoast with maple syrup, berries, powdered sugar, or coconut whip!

Hi friends! Hope you had a lovely weekend. Why not kickstart your week with super easy, eight ingredients, oil-free, grain-free, and nut-free brownies that are chewy & delicious! . . I was really craving brownies last week, but I didn’t have many ingredients in my pantry so I didn’t think I could make them! I decided to challenge myself and whip up a batch of brownies without oil or melted vegan #chocolate and the result was amazing! . . Chewy Everything Free Brownies: . . Ingredients: . 1/2 Cup Cocoa Powder 1/4 Cup Arrowroot Powder 1/2 Tsp Salt 1 Tsp Baking Powder 1 Cup Coconut Sugar 1/2 Tbsp Vanilla 2 Flax Eggs (2 Tbsp Flax Meal & 6 Tbsp of Water) 1/2 Cup Melted Soy Bean Butter (Sub SunButter, Pumpkin Seed Butter, Almond Butter, or Peanut Butter) Optional: Chocolate Chips to sprinkle on top! . . Directions: 1. Preheat oven to 350 D F and line a square brownie pan with parchment paper. 2. Prepare flax eggs in a large bowl. 3. Once the flax eggs are set, whisk together all wet ingredients. 4. Add in dry ingredients and combine. 5. Transfer batter to the brownie dish. I patted the dough with my hands as it is not very wet. 6. Optional press in chocolate chips. 7. Bake for 18 minutes for super gooey brownies. 20 minutes for brownies that are a little gooey. And 25 minutes for crispy edged brownies. 8. Remove from oven and let cool 9. Cut once the brownies are cool 10. Enjoy

Directions: . Whisk all ingredients in a stand mixer or using a hand blender. Start with 2 tbsp of mylk and increase if it’s too chalky, add more mylk. If the icing is too runny, add more icing sugar. . .

While the coronavirus is forcing us to keep our distance, there are still a variety of ways that we can come together to change our world. . . I don’t talk about my take on sustainability here too often. A few things that I try to do is, buy second-hand, buy from sustainable companies, re-use whenever possible, and support local businesses. I also try and reduce the amount of plastic pollution that I produce by switching to re-usable bags, bamboo straws, bamboo to-go cutlery, I buy in bulk whenever possible, I try and bring my own Tupperware, I use re-usable cups when I go out for tea, and I try and use beauty products that come in refillable, compostable, or glass packaging.
