Anneka Manning's @bakeclub_australia sponge will have you wanting an excuse to make afternoon tea every day. There are two main tricks when making a sponge: don’t over-whisk the mixture once you have added the flour – only whisk it until the mixture is just combined. Also, sponges don’t take long to bake and, if overcooked, will easily become dry, so keep a close eye on them when baking. Matthew Evans' take on kedgeree, the British breakfast dish with roots in colonial India of seasoned rice, eggs and smoked fish, is made using smoked eel. Eel has a pleasant fattiness and lends itself very well to a lick of smoke. You can find it at select fishmongers, or use the base recipe and add whatever smoked fish you please. Will Mahusay, the owner of @sydneycebulechon, is reminded of his Filipino grandmother every time he makes this chicken humba. “I remember the aroma of five-spice [powder] all around the house. It was very strong because the humba was slow-cooked, so this punchy aroma would be channelled all through the house,” he says. Will has kindly shared his recipe with us, and spoke to Pilar Mitchell @cultofclothes about his time with his grandma and what this dish means to him. It's world bread day today! What better way to celebrate than with a slice of the good stuff. Or, if you're so inclined, pop a tub of dough in the fridge and bake off a fresh focaccia tomorrow morning with Camellia Aebischer's overnight focaccia recipe. No sourdough starters here, just trusty instant yeast. Find the recipe at our link in bio. #sbsbread #focaccia #sbsfood 📸 @cammienoodle
Ah the melting moment. It's a favourite bake of many Australians, with a texture reminiscent of a Lebanese ghraybeh. These by @rowiescakes are stuffed with passionfruit curd icing, but the flavour combinations are limitless. What's your favourite? Satay daging is found all over Southeast Asia. In Singapore, these little flame-seared morsels are a popular and affordable street snack enjoyed at all hours of the day and night. You could substitute chicken, lamb or goat for the beef if you prefer in @adamliaw's recipe from Destination Flavour Singapore. This mapo tofu is one of @shannon_martinez's all-time favourite things to eat. If you want to convince the meat eater in your life that food can be just as good without it, or you’re looking to reduce the amount of meat you eat, this recipe is a fantastic place to start. You can find the recipe at our link in bio, or alongside many more in her new cookbook, Vegan with Bite. #sbseasydinner #sbsvegetarian #mapotofu #sbsfood 📸 @nik_to
This passion-ate beauty is a Brazilian passionfruit cake or bolo de maracujá for locals. Considering the passionfruit originated in Brazil, it is little wonder that it features in so many of the nation’s desserts. This simple sponge cake is not only laced with passionfruit, it is then drizzled in a rich passionfruit syrup for a double dose of tangy sweetness. Some versions of this cake also include a passionfruit mousse sandwiched between layers of the sponge. @phoeberosewood and @kirstenljenkins decided to keep things simple and skip the mousse for this Feast magazine recipe.
