#meatfreemonday How to make Carrot, Parsnip and Coconut Soup! Ingredients 2 packets of Mash Direct Carrot & Parsnip Mash 400 ml can reduced fat coconut milk 700 ml vegetable stock 2 tsp ground cumin 1 heaped tsp grated fresh root ginger Chopped coriander (to garnish) 1 tbsp oil Method Heat the oil in a large saucepan. Add the 2 packets of Mash Direct Carrot & Parsnip Mash, and fry for 3 - 5 minutes. Add a handful of chopped coriander, the cumin and the ginger and mix. Cook for 1 minute. Add the coconut milk and vegetable stock and bring to the boil. Cover, and simmer for 10 - 12 minutes, until the vegetables are tender. Purée and season. Serve with fresh crusty bread, and top with chopped coriander.
