I know I know ‘it’s Christmas cookies Birdie’ I know, but they’re so delicious I’ll eat them in January anyways 🥰 The recipe for these *beep* cookies is here 👇🏻💕 Ingredients: 7 oz vegan butter 9 oz all purpose flour 2 teaspoons vanilla sugar 3 1/2 oz powdered sugar Mix the ingredients into an even dough. Roll the dough into a long sausage in cling foil and let it rest 1 hour in the fridge before slicing it into cookies and baking them at 350 for about 10-12 minutes. Let them cool completely before digging into them. You can add pistachios to the dough like I did on the one to the right. Add 1/2 teaspoon of cacao powder and roll it into a swirly swirl like the cookie in the middle or sprinkle with cinnamon sugar and chopped almonds like the one on the left. You get about 36 Christmas cookies out of the dough, so you can play around it 🤙🏼💛 ——————————— Ingredienser: 200g vegansk smør 250g hvedemel 2 tsk vanilje pulver 100g flormelis Bland ingredienserne indtil det er en jævn dej. Rul dejen i folie, så det ligner en pølse. Lad den hvile i køleskabet 1 time. Skær den ud til småkager og bag ved 180 grader 10-12 minutter. Lad dem køle af inden du serverer dem. Du kan tilføje pistacienødder til dejen ligesom jeg har gjort i småkagerne til højre, tilføje 1/2 tsk kakao pulver og rulle dem ligesom dem i midten eller drysse kanelsukker og hakkede mandler ligesom dem til venstre. Dejen giver ca. 36 småkager, så du kan prøve nogle forskellige versioner af 🤙🏼💛
What’s your comfort food?💕🍝 I feel like these days calls for warmth, comfort and reassurance that everything will be fine eventually ❤️ Pasta is a solid choice in my opinion 🥰 This is cooked in coconut milk and fresh thyme and topped with pan fried oyster mushroom, and sprinkled with salt. So simple yet so flavourful 🤤
If you had to pick one meal to eat every day for the rest of your life what would it be?🥰 If someone asked me this today I would pick this bowl of goodness 🤤💘 I realised that I’ve eaten this every day for the last 6 days for lunch ✨ It’s red cabbage, apple, carrot, avocado, hoisin fried tofu, cilantro, sriracha & a dressing that’s a mix of peanut butter, hoisin, sweet chilli sauce, lemon juice and salt 🧡😩🤤 It has all the flavours, textures and colours 🥺 You have to mix it all like in the vid for the deluxe experience 🌀 I don’t like the expression ‘mouth orgasm’, but I’ll use it here anyways cuz it’s the most fitting ❣️
Fettuccine and red lentils in a creamy tomato sauce with raw crunchy broccoli and a sprinkle of nutritional yeast 🤠❣️ Does it sound like something you would eat for lunch?💕 I didn’t have any coconut milk, but I had a coconut, so I blended the flesh and it turned out perfect 😁 The tomato sauce also contains tomato paste, rosemary, smoked paprika and black pepper 🍝 On another note, I’m super happy that there are people who are going over to @birdieskiosk and following me there🥰 I’m gonna share DIY projects there, items that’s possible to purchase and just creative inspo for those who also enjoy that type of thing 💘

I’ve been missing traditions like the huge annual Christmas parties on both sides of my family, visiting my bonus grandparents the morning of the 24th and going to church. But I had a great Christmas Eve that ended up with me shuffle dancing on the kitchen floor and I’ve been punch needling and playing with terracotta clay and acrylic paint a lot. No like a LOT a lot. It’s been giving me so much life 🥺💞❣️ That’s also why I’ve been a little bite on the quiet side these dayz 😘

How do we feel about a 8 ingredient ramen soup? 🍜 It’s hella delicious, only takes 10 minutes to make, doesn’t require much effort and only 8 ingredients 🤙🏼✨ It hits all the right spots on a grey and cloudy day like today ☁️ 2 cups of water 1 tablespoon hoisin 2 teaspoons miso 1 block of whole grain ramen noodles 6 mushrooms 1/2 block of seaweed tofu from @letrangtofu (sponsored) A handful cilantro A drizzle of sriracha A squeeze of lime juice Add water and hoisin in a small pot. Bring it to a boil. Add miso and make sure there are no lumps. Add a bit of salt if needed. Turn down the heat. Add the noodles. In a pan fry sliced mushrooms and tofu squares. Pour the noodle soup into a bowl, add the mushrooms and tofu and top it off with sriracha, cilantro and lime juice. Btw this tofu was insanely good. The texture alone made me want to just eat it raw, but I was channeling Stormi saying ‘patience patience patience’ 🧘🏼♀️ I know not every have hoisin, whole grain ramen noodles and sriracha as a staple in their kitchen, but I love cooking with them so I always have them at hand to make soups like these easily 🥄 —————————————— Ingredienser: 5 dl vand 1 spsk hoisin 2 tsk miso 1 pakke fuldkorns ramen nudler 6 brune champignoner 1/2 pakke tang tofu fra @letrangtofu (reklame) 1 håndfuld koriander Lidt sriracha En smule lime juice Tilføj vand og hoisin til en lille gryde. Kog det op og tilføj miso. Sørg for at der ikke er nogen klumper. Til salt hvis du ønsker den mere saltet. Steg svampe i skiver og tofu firkanter på en tør pande. Hæld suppen over i en skål, tilføj svampe og tofu og top det hele med sriracha, koriander og lime juice 👏🏻
Y/n for rye bread?🍞✨ I’m a huge fan of seedy moist rye breads. I’m Danish after all ☺️💕 And I love baking them myself when it’s not too complicated. This recipe is as simple as they get 🙌🏻 Ingredients: 3/4 oz yeast 2 cups plant milk 1 cup water 1 tablespoon barley malt syrup 1 teaspoon salt 1 cup steel cut cracked rye 1/2 cup sunflower seeds 1/3 cup flaxseeds 1/3 cup sesame seeds 1 cup whole grain flour 1 3/4-2 cups all purpose flour Heat the plant milk and water till it’s lukewarm. Pour it into a bowl and add the yeast. Let it activate 10 minutes. Add all the rest of the ingredients and mix well. It should look like the texture of porridge. Cover the bowl and let it rise for 1 hour. Pour it into a loaf pan and let it rise 1 hour again. You can bake one large loaf or two small. Bake it at 350 for about 1 hour. Take it out of the pan and let it cool before cutting into it👌🏻✨ ———————————— Ingredienser: 20 g gær 5 dl plantemælk 2 dl vand 1 spsk maltsirup 1 tsk salt 2 dl knækkede rugkerner 1 dl solsikkekerner 1 dl hørfrø 1 dl sesamfrø 2 dl fuldkornshvedemel 4-5 dl hvid hvedemel Varm plantemælken og vand i en gryde til det lunken. Hæld det over i en skål og tilføj gæren. Lad det aktivere 10 minutter. Tilføj resten af ingredienserne og rør det grundigt sammen. Det skal ligne og føles som havregrød. Dæk skålen til og lad det hæve 1 time. Hæld dejen over i en brødform. Du kan bage et stort brød eller to små. Bag det på 180 grader omkring 1 time. Tag brødet ud af formen og lad det køle helt af inden du skærer i det 👌🏻✨
