Smoky Lentil Pasta . By @plantbasedrd . Recipe: Ingredients: 2 servings of dry pasta (I used rigatoni) 1/2 cup dry lentils 2 cups veggie broth 2 tsp smoked paprika 1 tsp dry basil 1 tsp oregano 1/2 tsp red pepper flakes 1 tsp garlic powder 1 tbsp tahini OR 1/4 cup full fat coconut milk Or 1/4 cup hummus 1/2 cup pasta water 1/2 6oz can of tomato paste (2.5 tbsp) Handful of greens of choice (I used collards) . Instructions: In a sauce pan add lentils and veggie broth. Bring to a boil, then reduce to a simmer and cook for 10 minutes on low heat with a lid. In a separate pot cook pasta according to package. For the lentils, remove lid and add tomato paste and all seasonings. Stir to combine and add tahini (or substitution of choice) and greens. Stir once more and simmer for 5 minutes. Once pasta is cooked, reserve 1/2 cup of pasta water and drain the pasta. Add pasta and pasta water to the pan with the lentils. Stir to evenly coat pasta with the sauce. Saucy Soy Curls with Broccoli and Brown Rice by @plantbased.traveler 🌱 An easy yet super satisfying and flavour-packed recipe you'll need to try! 𝐒𝐚𝐮𝐜𝐲 𝐒𝐨𝐲 𝐂𝐮𝐫𝐥𝐬 𝐖𝐢𝐭𝐡 𝐁𝐫𝐨𝐜𝐜𝐨𝐥𝐢 𝐚𝐧𝐝 𝐁𝐫𝐨𝐰𝐧 𝐑𝐢𝐜𝐞 2 cups of soy curls Warm water 1 bag of frozen broccoli florets or 1 head of broccoli 1-2 spring onions 1 tbsp of avocado oil (optional) Sauce: 1 cup of water 1 tbsp of corn starch + 2 tbsp of water to dissolve 1/4 cup coconut aminos 1/4 cup sriracha 2 tbsp of coconut or brown sugar or maple syrup Splash of rice vinegar Brown rice or grain of choice ________________________________ Add soy curls to a bowl, cover with warm water and let them rehydrate for 10 minutes. Drain excess water. In a large skillet, heat up avocado oil and pan fry soy curls until lightly browned. If you don’t want to use oil make sure you have a good non stick skillet. Clean and cut spring onion and if necessary cut broccoli into florets. Add spring onion and broccoli to the pan, cover with a lid and sauté/steam for a few minutes until broccoli is tender but still firm and not overcooked. If you’re using fresh broccoli add a few tbsp of water here as it doesn’t release as much water as frozen broccoli does. In a small bowl, dissolve cornstarch with 2 tablespoon of water, then stir in 1 cup of water, coconut aminos, sriracha sauce, sugar or syrup and rice vinegar. Pour sauce over soy curls and broccoli mix and cook for about 1-2 minutes until sauce has thickened and everything is nicely glazed. Wrapper Recipe: Make around 35 wrappers: 2 ¼ cups (325g) all purpose flour ¾ cup + 1 tbsp warm water ¾ tsp salt Steps 1. Add in 2 ¼ cups of all purpose flour and salt into a mixing bowl. Mix well. Create a well in the center of the bowl and pour in the warm water. 2. Use a spatula or chopsticks to mix the flour and water. Once the dough starts to come together, you can use your hands to mix the bits of dough. Knead together for several minutes. If the dough is a bit dry, add a splash of warm water. 3. Shape the dough into a ball, then place it in a bowl. Cover it with a damp towel and let it rest for 15 minutes. 4. Knead the dough a few more times. Return it to the bowl then cover with a towel. Roasted Potatoes in Lemon Parsley Sauce by @janetsmunchmeals ♥️ . Ingredients: 6 medium potatoes, peeled Oil, salt and pepper for roasting 1 tbsp oil 1/4 cup onion (very finely chopped) 3/4 cup white wine (or broth) 1/2 tsp dried tarragon 1 tsp dried parsley 1/4 to 1/2 tsp kosher salt (start with 1/4) 1/4 tsp pepper 1/4 tsp garlic powder 1 to 2 tbsp vegan butter Juice of 1 lemon 3 tbsp fresh parsley finely chopped Preheat oven to 375 degrees F (on convect/fan setting). Cut potatoes into 3-4 chunks depending on size. Try to have the chunks relatively similar sizes. Place potatoes into large microwave safe bowl, fill with water, mostly covering potatoes. Microwave 10 min, carefully (or skip microwave and boil the potato chunks for 6 min, they will still be quite hard). You may need to do two batches depending how large your bowl is. Remove potatoes from water carefully, place into large baking pan. Drizzle liberally with oil (I used around 1/4 cup oil) coating all surfaces of potatoes. Sprinkle very generously with salt, then pepper to taste. Bake for 25 min, toss carefully, bake another 25 min, toss, and check for doneness. You may need to bake another 10-2 min. Once cooked, transfer potatoes to serving bowl. Add wine to baking dish and stir around to collect some potato flavor, then pour into a saucepan. Add onions, spices and oil. Simmer gently until wine reduces by 2/3. Stir in lemon juice and butter, cook another 2 min. Spoon over roasted potatoes. Vegan Quesadilla with black beans Follow us @best.plantbased.recipe for Daily vegan recipes Photo and recipe by @elavegan Ingredients 6 tortillas 1/2 onion, chopped 2 cloves of garlic, minced 1 bell pepper, chopped 2/3 cup black beans, cooked or canned 1/2 cup corn, cooked or canned 1 tbsp oil divided 1 tbsp liquid aminos or coconut aminos spice mix: 1 tsp onion powder, 1/2 tsp cumin powder, 1/2 tsp (ground) oregano, 1/4 tsp smoked paprika, 1/3 tsp red pepper flakes salt and pepper to taste 1 batch easy vegan cheese sauce Instructions Heat 1/2 tbsp oil in a pan, add 1 tbsp soy sauce, onion, garlic, pepper, and mushrooms and fry over medium heat for 3-4 minutes. Add the corn, black beans, and spice mix and fry for a further 3-4 minutes. veggie mixture in a pan for vegan quesadillas Make a batch of my easy vegan cheese sauce and spread some of it in an even layer onto one tortilla. You can use any other vegan cheese of choice. vegan cheese sauce in a pink saucepan for vegan quesadillas Now put 4 tbsp of the veggie mixture onto the cheese sauce and place another tortilla on top. gluten-free tortilla with vegan cheese sauce and veggies to make vegan quesadillas Transfer to a (lightly oiled) skillet and cook for about 2-3 minutes, flip and cook from the other side until both sides are nicely browned and toasty. vegan quesadillas in a skillet Repeat steps for the remaining tortillas.
