Happy last day of the month friends!! Is it just me or are the months progressively passing by more quickly this year? I honestly don’t know where September went! But I can tell you right now, I am so ready for October aka baes bday month. October feels to me like the poster child month of fall. Something about this month has me wanting pumpkin spice everything, nights with a blanket on the couch, heartier breakfasts like this and you best believe my cosy slippers are out to stay. __ Spent this weekend, getting some new plants for the house and working to resurrect the ones I already have. I can’t say I’m a natural at this plant mom thing but I’m sure as hell going to give it my best! I figured out the type of plant I have (which was dying from the day we got it from the farmers market) so have put it on a watering schedule along with our new fiddle leaf fig and some new mini cactus I picked up from Venice Plants on Lincoln (best place for plants in LA IMO) __ Breakfast deets: 1 slice @gjustabakery toasted gf sourdough from @erewhonmarket (if you’re celiac I would check with the bakery if its certified gf as they do bake regular bread on premise too), half an avocado, a sprinkle of finely chopped @truestoryfoods chicken sausage, @gomethodology beet kraut & some radish sprouts for good nutritional measure. __ Enjoy the last day of the month and first day of the week! Had the most fulfilling of days today with the @swisseusa team at the @lombardihouse in Hollywood. I’ve been a fan of @swisseusa from my Aussie days, where they originated and am so thrilled to be partnering with them over the next few months to showcase some products from their new wellness line __ To celebrate their launch we were fortunate enough to partake in a HIT class led by @milts1 (which was mostly just lower body for me and my bung shoulder 🙈) then followed that sweaty sesh up with a panel talk from the inspiring souls of @ashleyhart @milts1 & @erinpalinskiwade here they spoke about what wellness means to them along with their tips to stay centered in this hectic world. The proteins in gelatin help repair intestinal wall damage, and rebuild the lining of your intestines. When using Grass-fed gelatin (like I have here with @vitalproteins) it also helps your gut bacteria create butyric acid, which can boost digestion and reduce brain inflammation. And to keep them extra gut healthy, I made these completely sugar free by using a tiny bit of pure monk fruit to replace any sweeteners in the chocolate AND filling. __ Guys, if you’re like me and used to LOVE those marahnallowy chocolate snowballs around the holiday season, then you’ll love this version. LOW SUGAR PUMPKIN SPICE SKILLET CAKE ___ Guysssss! Stop what you’re doing right now and go get yourself the ingredients to make this Low Sugar Pumpkin Spice Skillet Cake 🕺🕺🕺 ___ My hub wanted to go sugar free again, and I’m like half way in, cos now is my favorite time of year to BAKE. And let’s be honest, baked goods aren’t the same with at least a LITTLE bit of sweet. Soooo, I made this. The only added sugar is in the chocolate chips, and I used a tiny little scoop (like not even 1/8 tsp) 100% pure monkfruit which is a zero calorie sweetener has 0g sugar and is free from sugar alcohols 👏🏼👏🏼👏🏼 ___ What’s even more is I made this dessert extra gut friendly by adding some @vitalproteins collagen to the mix 🙌🏼 ___ This dessert (or in my case afternoon snack) contains the following ingredients ___ Pumpkin purée Eggs Vanilla Coconut oil @bobsredmill gluten free baking flour @vitalproteins Collagen 100% pure Monkfruit Pumpkin Spice Baking powder Baking soda Salt Walnuts Chocolate Chips ___ Head straight to my bio for the link for the full recipe 🤘🏼✨ #peanutheadeats ___ https://www.peanut-head.com/post/healthy-pumpkin-spice-skillet-cake
Need a Paleo Cookie recipe for your weekend baking? Try one of my all time fav choc chip recipes that’s also nut, dairy and refined sugar free 🕺 ___ What you'll need: * 1 egg * 1/2 cup coconut oil, melted * 1/2 cup maple syrup * 1/4 cup @brandlesslife coconut sugar * 1 tsp vanilla essence * 1/4 cup tahini * 3/4 cup cassava flour * 1 tbsp coconut flour * 1 block dark chocolate (I used @HuKitchen for a refined sugar free option) * 1/4 tsp sea salt ___ What to do: * In a medium bowl, used an electric beater whisk your egg, oil, maple syrup, vanilla and tahini together until smooth and slightly thick. * Add in the coconut sugar and salt, beat for a further 2 minutes * Sift in the cassava flour and coconut flour. Mix together using a wooden spoon, until incorporated. * Roughly chop up you chocolate into small chunks. Stir into batter. * Place in the fridge to chill for 1 hour. * Preheat oven to 350F and line a large baking tray with parchment paper * Using a large icecream/cookie scoop, scoop out batter and space out on your baking tray. Slightly pressing down the batter * Be sure to allow enough space between each cookie as they will spread. * Bake for 11-12 minus until lightly golden and the edges are slightly darker. * Remove from the oven and allow to cool slightly before enjoying.
GLUTEN FREE OVERNIGHT OAT JAR ___ I can’t tell you how appreciate I’ve been of my @gomethodology deliveries these past 2 weeks. Between having my Mum in town and my shoulder injury, I haven’t found myself wanting/or even being able to spend much time preparing nutritious food for us all ___ I’m usually pretty hard to please when it comes to having others make food for me. Have you ever taken a moment to sit with yourself and truly ask how you are? Like really, how is your mental health? #ad ___ If I could sum up my mental space over the last 30 days, this pic would be it. From an anxious mess, overthinking scenarios that hadn’t even played out & worrying about the future, to a calm and more content state of mind. I didn’t actually realize this until Maurizio said to me the other day, “I don’t know what’s changed but in the last few weeks you seem more approachable”. Those words really made me reflect & think to myself, wow I am feeling mentally lighter, I’m less snappy, & I’ve been working on talking about my feelings as they come up instead of bottling them up & letting them ruminate. ___ I know meditation has a great reputation for mental health but honestly it’s something I was never able to fully immerse myself into. My parents actually tried to have me & my sister meditate as kids. We‘d go to meditation retreats, for 2-3 days at a time but I never really understood what I was ‘trying to achieve’ & think I was just too young to fully understand it. 20 years later, I’m now learning just how amazing a few mins of stillness can be for the psyche ___ So far, I’ve completed 30 straight days through the @headspace app. I found myself wanting to do it at night so the 2 I’ve been gravitating towards are in the Wind downs section under Sleeping & Goodnight. Just 10mins of mentally recapping my day, deep breathing & a switching off routine knocks me out every single night. (Which is amazing for someone that struggles to shut off). BUT I’m ready to step it up & try the more targeted courses. So far I’ve dipped my toe in the ‘Letting Go of Stress’ ‘Finding Focus’ & ‘Happiness’ courses & am eager to incorporate a more focused Meditation into my routine. ___ If you’ve been putting off ‘starting’, I couldn’t suggest Headspace enough. BBQ SLOW COOKER PULLED LAMB BURGERS ___ Boy oh boy! This Sugar Free & Dairy Free BBQ Slow Cooker Pulled Lamb recipe is one of those dishes that just keeps on giving. I made this in my slow cooker the other morning, literally just threw in my ingredients, set the timer and went about my day. 6 hours later I returned to a fully cooked piece of @atkinsranch grass-fed lamb from New Zealand that’s both tender and buttery. All I need to do from here is pull it out, shred it, lather it in some unsweetened BBQ sauce and marinara and we’re golden! The first night I served it up with a side of potatoes and salad, with enough leftovers to make a similar version for lunch the next day, and these burgers for lunch today ___ My preferred cut for this pulled grass-fed lamb recipe is the shoulder. It’s fatty enough to give the meat a ton of flavor but is also so dang tender when using a slow cooked method. When choosing my lamb I ALWAYS opt for pasture raised + grass fed and @wholefoods has always been my go to for an amazing selection of grass-fed lamb. #ad ___ Besides being from my home country, NZ., Atkins Ranch lamb is both grass fed and finished, and the animals roam free on pastures with minimal interaction with humans. When I was living in NZ I used to love seeing the way they’d all roam around acres of land. Living my best one-handed life today on this beautiful warm fall Sunday ___ If you caught my stories yesterday you would’ve seen I was in a mild accident while trying to be a hero on the Netball court during my first tournament back since I was a teenager. What happened was, I was running from behind to intercept a ball from my opponent. I tripped over her foot and went flying into the ground but put my right hand down to break my fall, heard a pop in my shoulder, and initially couldn’t get up, Then when I did I heard another pop as if my shoulder had gotten back into the socket. There was a nurse on site who gave me a once over and suggested I go to the ER for precautions. We got confirmation I’ve injured my rotator cuff which will just need some support and physio for the next few weeks. My poor hub (who is still in a neck brace) has now had to turn into carer mode as I’ve been unable to use my right hand for anything, he’s doing such an amazing job so far (except for the ability to put my hair clips in 😂) Here’s some things I’ll be doing to get myself back to 💯 ___ Physio with @cahillhealth @curednutrition CBD twice a day Arnica homeopathy for trauma Collagen powder for repair @sunpotion eucommia for repair Infrared at @breedlovebeautylab And most importantly - a good attitude toward it all ✨🤘🏼
TODAY’S MANTRA: You are enough What you do today is enough You have everything you need right here, right now. I took this mindset into my workout this morning. Took a moment to reflect on how I felt BEFORE I stepped foot into the gym and recited this to myself. This mantra reminds me that I’m enough regardless of how hard I work at the gym, I’m enough regardless of how productive I’ve been this week. I’m enough regardless of how I look. Everything I have to offer this world comes from within, and no amount of measurable external factors can take that away. And that goes for all of you too! Hope you all have a beautiful Wednesday, take time to reflect on how lucky we all are to be here on this Earth, and please take a moment of remembrance for the ones who were tragically taken from us #911 #lestweforget
