Crispy Air Fried Chickpea Snacks. I had to try it to believe it. Healthy snack that you can customize to your liking! I made mine with chili, garlic, cumin and some salt but you can definitely try it with ranch seasoning or some cinnamon sugar for a sweet flavor! 1 can chickpeas, drained 1 tsp chili powder 1/4 tsp of each: cumin, garlic, salt Spray oil Cinnamon sugar option: 2 tsp sugar 1/2 tsp cinnamon Drain chickpeas from their liquid. Set your air frier to 400F. Add chickpeas to air fried and cook for 5 min. This will help them to dry out. Then spray them with some oil and mix it up. Continue to cook for an additional 12 min, mixing them every 5 min. Mix seasonings in a bowl. When you have 2-3 minutes remaining, add half of the seasoning to the chickpeas and mix. This will help the seasoning to stick to the chickpeas. Finish cooking and when they are done, transfer to a bowl and add remaining seasoning and mix. What you’ll need (4 servings) 8 slices of Brioche (1/2in cuts) 8 oz cream cheese 1/4 cup strawberry jam (homemade recipe below) or store bought 2 eggs 1/2 cup milk 1/4 tsp cinnamon 1 tsp vanilla Fresh strawberries for topping Syrup Butter Strawberry Jam recipe: 1 lb fresh strawberries, stems removed and sliced thin 1 cup sugar 1 tsp lemon juice Add all ingredients to a small sauce pan and bring it to a boil while mixing. Allow to boil for about 5 min on medium heat making sure not to burn the bottom. Allow to cool and place in a jar. Use this for your stuffed French toast 👍🏽 1️⃣In a bowl, mix together cream cheese and jam with a hand mixer until well combined. 2️⃣In a shallow dish, whisk eggs, milk, cinnamon and vanilla until well combined. 3️⃣On 4 slices of bread, spread cream cheese mixture evenly. The PERFECT Potato. Fluffy center. Crispy exterior. Boiled then roasted on high heat. 1️⃣Preheat oven to 425F. 2️⃣Begin by placing potatoes in cold water in a pot making sure potatoes are fully submerged. Bring to a boil and cook for 10-15 min or until they slide right off your fork when you pierce it. 3️⃣Drain the water and allow to cool for just a few minutes. 4️⃣Grease a large baking tray with some olive oil. Place potatoes on a baking tray. With the bottom of a flat cup, press potatoes down gently to flatten to about 1/4-1/2in thick. Do this to all the potatoes. 5️⃣Drizzle some olive oil on top and season with kosher salt and black pepper. 6️⃣Place in the oven for 20min. Remove and flip each potato with a spatula. 7️⃣Continue to cook for another 15min. 8️⃣ Optional: add shredded Parmesan on top of each potato in the last 5 min of baking. Baked Salmon with Kale and Quinoa Tabouli. Truly the perfect duo and all under 30 min. Keeping it healthy, simple and delicious. Crispy Skin Baked Salmon 2 salmon filets 2 tbs olive oil 1/2 lemon, juiced Salt Lemon pepper Garlic seasoning Oregano Kale and Quinoa Tabouli 4 cups of Kale, chopped fine 4 cups parsley, chopped fine 1 tomato, small diced 1/2 cup radishes, small diced 1/3 cup quinoa Juice of one lemon 1/4 cup olive oil Salt and pepper Preheat oven to 350F. Place aluminum foil on a baking tray and grease with olive oil. Place salmon on greased tray and season with the seasonings mentioned along with oil and lemon juice. Place in the oven for about 15-20 min or until skin is crispy and salmon is cooked through. For the tabouli, cook quinoa as directed. Allow to cook for a few minutes. The mix all ingredients in a bowl. Taste test to adjust flavors. Kafta with sautéed onions and rice. So much flavor in every bite! If you can’t get Kafta meat from your local market/butcher, then have no fear. Recipe below 😉 you’re gonna be like... “what? Seriously? That’s all it is!?” 1.5 lbs ground beef 2 medium onions, diced very small 1 cup chopped fresh parsley 2 tsp salt 1 tsp black pepper In a bowl, mix all of the ingredients together until well combined. Form meat into links about 3-4in long, 1 in thick. Or form into patties. These can be grilled or sautéed on a pan. If sautéing, bring a large pan to heat with a drizzle of olive oil. Add Kafta to the pan in one even layer. Cover for a few minutes then flip to cook other side. Continue doing this until all sides have browned. While they cook, slice 1 large onion and sauté in a separate pan with a little oil. Season with salt and pepper. Once softened, transfer onions to the pan with the Kafta and mix to allow onions to become costed with the juices of the Kafta. Serve with rice and you have yourself a traditional Lebanese delicacy. Fish Filet Sandwich with Homemade Creamy Coleslaw on Brioche buns Does it get any BATTER than this? See what I did there? What you’ll need: 4 Cod filets, cut in half Batter: 2 cup flour 4 tsp sugar 2 tsp baking powder 1 tsp salt 2 eggs 1 can carbonated water Creamy Coleslaw 1 bag of shredded cabbage slaw or one cabbage head, shredded 2 cups shredded carrots 3/4 cup mayo 2 tbs sour cream Salt and pepper 2 tbs sugar 2 tbs white vinegar For the slaw, mix shredded cabbage and carrots in a large bowl. In a separate bowl, mix all remaining ingredients until smooth and creamy. Add sauce to cabbage mixture and mix well until fully combined. Cover and allow to sit in the fridge to cool. For the batter, mix all dry ingredients in a bowl. Add whisked eggs. Add 1/4 cup of carbonated water and begin mixing. Keep adding water until you get a smooth consistency similar to pancake batter. You can also use regular water as well. Cut your cod loins in half so you have about 8 pieces. Pat dry fish. Dip fish in the batter to completely coat. Remove from batter and allow any excess batter to fall off. Slowly add fish to hot oil of a deep fryer. Work in batches. 4 pieces per batch. Cook for 5 min or until golden brown. Flip and cook an additional 3-5 min or until evenly browned. What you’ll need for the Almond Mushroom Sauce: 16 oz fresh mushrooms, thinly sliced 1 onion diced 2 garlic cloves, minced 1/4 cup sliced almonds 1 can of coconut milk (or cream of choice) 1/4 cup chicken stock 3 tbs flour 3 tbs butter, divided Salt and pepper Oregano 1️⃣In a large sauté pan, heat 2 tbs of butter. When it’s bubbly, add onions and cook for 5 min on medium heat. 2️⃣Then add garlic and mix. Cook garlic for 1-2 min. 3️⃣Add mushrooms and mix cooking for an additional 5 min or until softened. 4️⃣Move veggies to one side of the pan and add a remaining butter to the clear side of the pan. Add almonds and allow to toast for a couple minutes while mixing. Once browned, mix almonds with mushrooms/onions 5️⃣Add stock to deglaze the pan and allow to reduce by half. 6️⃣Add flour and mix until mushrooms are fully coated. This will help to thicken the sauce 7️⃣Add coconut milk or cream of choice and stir 8️⃣season with salt and pepper and oregano and allow to simmer on low for a few minutes. 9️⃣continue mixing until sauce has thickened. If it’s too thick, add more water or stock until you get the consistency you want. Serve with cooked chicken and rice and you’ve got yourself a meal! Crispy Coconut Shrimp. Don’t know what National Day we are celebrating today, can’t seem to keep up with them but I nominate today as National Crispy Coconut Shrimp day. Who’s with me?? These can be fried in oil or air fried for that healthier option! What you’ll need: 2lbs large shrimp, peeled, cleaned, tails still on 1/2 cup corn starch 1 tbs salt 1/2 tsp cayenne pepper 3 egg whites, whisked 2 cups unsweetened shredded coconut 2 tbs sugar Cocktail sauce for serving Oil for frying 1️⃣if Shrimp is not already peeled, prepare shrimp by thawing them of frozen, peeling skin and keep tails on shrimp. Pat dry shrimp with paper towel 2️⃣in a large ziplock bag, add corn starch, salt and pepper. Seal bag and mix well. 3️⃣add shrimp to bag and give it a good mix to ensure every shrimp is completely coated in the mixture. 4️⃣ in a separate bowl, whisk egg whites until bubbly 5️⃣ in a shallow dish, mix coconut with sugar. 6️⃣ Fran shrimp by the tails and dip in the egg whites to fully coat. Allow access eggs to fall off and then transfer to coconut mixture to completely coat. Lubia - A traditional Lebanese dish made of green beans in a tomato based stew with tender beef cubes served with rice. Or make it vegetarian and omit the beef all together! What you’ll need: 1 lb tender beef cubes, 1/2in thick 2 tbs butter or oil 1/2 cup chopped cilantro 3 garlic cloves, minced 1/2 tsp cumin 1/2 tsp cinnamon 1 carrot, peeled and diced 1 lb fresh or frozen green beans, tips cut and cut to 1.5in pieces 1 (14oz) can diced tomatoes 1 heaping tsp tomato paste 3-4 cups broth or water 1️⃣in a large pot, begin cooking beef until all moisture is released and beef has turned a light shade of brown. Transfer beef to a bowl. If a lot of moisture is released and not yet evaporated, transfer beef to a bowl and drain excess liquid 2️⃣ to the pot add butter or oil. Then add cilantro and cook while mixing for 2 min. Then add garlic and cook while mixing for an additional minute. 3️⃣add beef back to the pot and cook while mixing until beef has browned some more. 4️⃣season with cinnamon and cumin and salt and pepper. Mix 5️⃣add green beans and mix while cooking for an additional 2 min. 6️⃣add can of tomato plus tomato paste and mix 7️⃣Add broth or water to the pot and bring to a boil. 8️⃣once it’s begins to boil, lower heat to a simmer and cover with a lid. Thai inspired #vegan Butternut Squash soup. The soup your momma never made... until now! Listen, it’s that time of the year. It’s fall, we are picking apples and pumpkins and trying to get cozy anyway we can. Soup is the perfect comfort food on days like these. I know you’re probably intimidated when you see a butternut squash or something similar at the grocery store but now there’s no reason to be! This recipe includes coconut milk and the secret ingredient, Thai Curry Paste! If you wanna keep the flavors simple, you can simply omit the curry paste and if you’re not into the coconut milk, you can simply use milk or some form of cream. But I highly recommend the Thai curry paste👌🏽 What you’ll need: 1 butternut squash (2-3lbs) peeled, seeds removed, diced 1 onion, diced 3-4 garlic cloves, minced 1 carrot, peeled, diced 1 Apple, I used gala, peeled and diced 3 cups vegetable broth 1/2 tsp cinnamon 1/2 tsp nutmeg 1 cup coconut milk 1 heaping tsp Thai curry paste Salt and pepper to taste 2 tbs olive oil Garnishes: extra coconut milk and/or fresh cilantro, fresh toast for dipping 1️⃣ in a large stock pot, heat olive oil and cook onions for a few minutes until softened. 2️⃣ add garlic and cook for an additional minute while mixing 3️⃣ add diced butternut squash, carrots, and apple and mix 4️⃣ add cinnamon and nutmeg plus salt and pepper 5️⃣ add broth and bring to a boil. Once boiling reduce heat to a simmer and allow to cook for an additional 20 to 30 minutes. Use a fork to test if the squash apples and carrots are soft 6️⃣ use an immersion blender or carefully transfer to a stand alone blender (may need to do this in batches) and blend until you don’t see any more chunks. At this point your soup should be on the thicker side 7️⃣ add 1 cup of coconut milk reserving a few tablespoons for garnish plus add your Thai curry paste. Mix well until paste has completely dissolved. 8️⃣ taste and adjust to your liking with more salt and pepper 9️⃣ serve warm with fresh cilantro and extra coconut milk on top. Apple filled French Pastries! This one is for the novice bakers out there! Like me! This was so so easy and most importantly, delicious! ❤️like❤️comment❤️bookmark🔖 What you’ll need: makes 8 pastries - 4 apples, peeled and thinly sliced. I used Gala but you can use whatever you like - 1 cup of apple sauce (see recipe below for homemade apple sauce) - 1 box of puff pastry (2 square sheets) - 1 egg, whisked - 1 packet of cane sugar (optional) - 1/2 tsp of cinnamon - 2 tsp apricot preserves + 1 tbs water Apple sauce - 1 apple, small diced - 1/4 cup water - 2 tbs sugar - 1/2 tsp cinnamon Put all ingredients in a small sauce pan and bring to a boil. Then lower heat and when apples have softened, use a potato masher to mash it up into a sauce. Set aside to cool. 1️⃣Preheat oven to 375F. 2️⃣Remove pastry from packaging and lay on a cutting board. Cut pastry into four squares. 3️⃣Place about 1 tsp of apple sauce directly in the center of each pastry square. 4️⃣Each square will get 1/2 an apple. So place the sliced apples directly on top of the apple sauce in each square. 5️⃣Whisk an egg and with a brush, brush the edges of the pastry with your egg wash. 6️⃣Now fold corners over towards the center of the pastry. You can pinch them together if you’d like but if you’ll like the pastry to open up as they bake then fold over without pinching them together. 7️⃣ Transfer to a baking sheet lined with parchment paper and brush the tops with more egg wash. 8️⃣ sprinkle cane sugar on top (optional) place tray in the center rack of your preheated oven for about 15-20 min or until they are golden brown on top. 9️⃣In a small pan, heat apricot preserves with water until it looks like a sauce. With a brush, glaze the tops of the pastry’s when they are out of the oven. Sprinkle a little cinnamon on top.
