Broccoli + Fresh Corn + Bacon Salad 😋🥦🌽🥓 This one is an ABSOLUTE CROWD PLEASER! 🤤 If you're planning a backyard get-together this weekend, then this lil' beauty *must* be apart of your menu! Our family LOVES Clean & Healthy Food...BUT...you might be surprised to know we aren’t super-duper riged with our eating habits either. If you've been following CFC for a while, then you may know that we're pretty balanced over here at our house - meaning that I do believe there's a place for EVERYTHING in moderation, so long as we're choosing the good, healthy stuff MOST of the time. I really try to teach our kids to ENJOY this process of selecting, preparing, and eating food together with loved ones. It should be FUN! A healthy mindset around food means bringing balance into the equation. Y'all know we’ve gotta have some of this Broccoli + Corn + Bacon Salad while we celebrate the last few weeks of Summer, and ENJOY this fresh corn harvest season! Sweet corn on the cob is in season during the last few months of the Summer, and we love to serve it at our BBQ'S while it's at its peak! Try to find a farm locally that grows their own organic corn...or even better: plant a few stalks along your own fence line next summer! Our family chooses to include bacon in our meals several times each month...with 6 teenagers here - it's just one of our family favorite foods that we don't want to give up. I do try to choose very high quality bacon that is nitrate free, humanly raised, and usually only buy it when it's on sale! I hope you enjoy this recipe with your friends and family! Chicken & veggie stir fry lookin NICE🔥 . Tried to do to some Benihana action with this recipe, but then I added cherry tomatoes and that was a little diff but whateva! Roasted Tomato Pasta w/ mushrooms & herbs 🌿 By @janetsmunchmeals Sending love for your weekend 💗💗💗🌿🍃🌿🍃 1 pint cherry or grape tomatoes sliced 1 tbsp olive oil Salt, pepper and dried oregano 8 oz. mushrooms finely chopped 1 tbsp oil 1 shallot finely chopped 1/2 cup sun dried tomatoes finely chopped (jarred, drain excess oil) 1 tsp kosher salt 1/2 tsp pepper 1 tsp garlic powder 2 tsp dried oregano 1 cup pasta cooking water 1 tbsp tomato paste 1/3 cup (packed) finely chopped herbs (parsley and basil) Juice of 1/2 lemon 1. Preheat oven to 400 degrees F. Slice tomatoes and add to baking dish. Drizzle 1 tbsp olive oil, toss. Sprinkle generously salt, pepper and dried oregano. Toss. Bake approx 20 min until tomatoes start to release juices. 2. Meanwhile, boil water for pasta. Salt the water and cook pasta until just al dente. Reserve 1 cup pasta cooking water prior to draining. 3. In a skillet, add the chopped mushrooms and oil. Cook approx 10 minutes until mushrooms are browned, then add shallots. Cook another 5 min, stir often. 4. Add sun dried tomatoes, all the seasonings, and tomato paste. Stir, cook another minute. Add pasta cooking water, stir, add pasta and herbs. 5. @kalememaybe She’s back with another salad! Crispy Za’atar Chickpea & Pomegranate Salad with Balsamic Vinaigrette. Used some mixed greens, cucumbers, cherry tomatoes, red onion and feta as well — a blend of Mediterranean & Middle Eastern flavors! To make crispy za’atar chickpeas, I tossed 1 can of rinsed and drained chickpeas with a generous drizzle of olive oil and a generous amount of za’atar seasoning (I use @zandzdc). Bake for 25 min at 425. Dressing is ~2 tbsp Dijon mustard with ~3 tbsp balsamic vinegar and 1/2 tsp honey with a pinch of oregano, salt, and pepper.
What is your favorite part of this recipe? ⠀ .⠀⠀ VEGAN FETTUCCINE ALFREDO by @alexafuelednaturally ⠀⠀ Serves 5-7⠀⠀ Ingredients: ⠀⠀ 1 lb fettuccine noodles (or pasta of choice)⠀⠀ 1 small yellow onion, finely chopped ⠀⠀ 4 garlic cloves, minced ⠀⠀ 1 1/2 tbsp avocado oil or olive oil⠀⠀ 1 cup mushrooms, sliced ⠀⠀ 1 cup raw cashews ⠀⠀ 2 cups filtered water ⠀⠀ 4 tbsp nutritional yeast ⠀⠀ fresh parsley, chopped (optional)⠀⠀ salt⠀⠀ pepper ⠀⠀ 1. Bring a large pot of water to boil. Add 2 tbsp of salt to the boiling water. Add the fettuccine noodles (or your choice of pasta). Cook for 11 minutes or follow the directions on your pasta box.⠀⠀ 2. Meanwhile in a large pan over medium heat, add oil and sauté garlic and onions for 6 minutes. Season with a pinch of salt then add mushrooms and sauté for 7 minutes. ⠀⠀ 3. In a high speed blender combine raw cashews and filtered water. Blend on high speed for 1 minute or until fully smooth. Pour cashew milk over mushrooms and bring heat to low. Simmer for 3 minutes, until sauce begins to thicken slightly. ⠀⠀ 4. Add the nutritional yeast, tsp of salt and 1/2 tsp pepper to the sauce, mix then once noodles are cooked, using tongs transfer the noodles straight from the pot to the sauce. Add 1/2 cup of hot pasta water to the pasta and mix all together until noodles are fully coated with sauce.⠀⠀ 5. Finish off with freshly cracked pepper, a pinch of salt if needed and chopped fresh parsley.⠀⠀ *Tips: You can add vegan parmesan on top. If you would like to make the sauce a little more rich, you can add 1-2 tbsp vegan butter, so tastyyy! Happy Sunday y’all! For breakfast I seared up a couple chicken sausages, scrambled a few egg whites and topped them with half a serving of 2% shredded cheese. Added in some healthy fats with 40 grams of freshly sliced avocado! It was delicious! .Credit: @ketokonduct I’m switching things up a bit and really tracking how much fat I’m getting in. Creamy, cheesy Zucchini Casserole will be your favorite zucchini side ever! By @carlsbadcravings ~ This zucchini casserole recipe tastes AMAZING. And is simple and easy enough for everyday and make ahead friendly! ⠀ Zucchini * 3 pounds zucchini cut into 1/4-inch slices * 1/2 tablespoon kosher salt Herb Cream * 1 cup heavy cream * 1/2 tablespoon cornstarch * 1 tablespoon chopped fresh chives or 1 tsp. dried * 2 tsp garlic cloves, minced or 1/2 tsp garlic powder * 1 tsp EACH dried parsley, onion powder * 1/2 tsp EACH dried thyme, dried oregano, salt, pepper * 1/4 teaspoon ground nutmeg ADD LATER * heaping ½ cup@freshly shredded Gruyere cheese * 1/2 cup sour cream Topping * 1/4 cup freshly shredded Gruyere cheese * 2/3 cup freshly shredded mozzarella cheese * 1/2 cup panko breadcrumbs * 1 tablespoon melted butter * 1 tablespoon olive oil Line sliced zucchini in an even layer on paper towels. Sprinkle evenly with kosher salt; let rest 15 minutes. Meanwhile, preheat oven to 400 degrees F and grease a 5-quart baking dish. Add all of the "Herb Cream" ingredients EXCEPT sour cream and cheese to a medium saucepan. Bring to a gentle simmer for 3 minutes, stirring often. Reduce heat to low and add ½ cup Gruyere, stir until melted. Remove from heat and whisk in sour cream until smooth; set aside. Wipe the salt off of the zucchini slices with a paper towel and dab off the water, pressing firmly. Arrange half of the zucchini slices in the prepared baking dish. Evenly top with half of the herb cream. Top with remaining zucchini and remaining cream. Top evenly with 1/4 cup Gruyere and shredded mozzarella. Cover the baking dish with foil and bake at 400 degrees for 30 minutes. Meanwhile, melt 1 tablespoon butter in 1 tablespoon olive oil over medium heat in a skillet. Add panko and stir to coat. Continue cooking until crumbs turn golden brown. Transfer to a plate; set aside. After 30 minutes, remove baking dish from the oven. Remove the foil, top with panko and bake uncovered for an additional 5 minutes or until cheese is melted and bubbling and the zucchini is tender crisp. Remove from oven and let stand 5 minutes before serving.
This creamy roasted red pepper & garlic sauce (recipe below) goes well on everything from pasta to potatoes to buddha bowls😋 By @hello.kalin ROASTED RED PEPPER & GARLIC SAUCE: . Ingredients: 1 red bell pepper • 1/2 cup cashews ground into fine powder • 1/2 cup vegan cream cheese (in a pinch you can substitute cashew cream [1.5cups raw cashews soaked overnight then blended with 3/4 cup water], or unsweetened plant milk for a thinner sauce) • 1/4 cup extra virgin olive oil • 3-4 garlic cloves • 1 tbsp tomato paste (optional) • Salt & pepper to taste. . Method: (1) Roast the garlic. The fastest way is to place the cloves on a piece of aluminum foil with a dash of oil, then close the foil to create a pouch and roast at 350°F for 30 minutes. (2) Roast the red pepper. You can do this directly on the oven rack at 450°F for 30 minutes, or if you have a gas stove, roast the pepper over the flame until all sides are blackened. Allow the pepper to cool, then remove most of the charred bits, stem, core and seeds. (3) Add the red pepper, garlic, cream cheese, cashew powder, oil, tomato paste (if using), salt and pepper to a blender and blend until very smooth. (4) Heat the sauce in the microwave or stove top before using.🌱
Eat or pass? 😍 Credit @zestmylemon Salmon 🐟 is on the menu at my place at least once a week so I’m always trying to find ways to change it up! Today my lunch is brown sugar and Dijon glazed baked salmon with a hard boiled egg 🥚 and a lemony spinach salad 🥗 on the side. . To make the brown sugar glazed salmon mix together light brown sugar with Dijon mustard and a little salt and pepper to taste then slather it on the salmon. Place the salmon on a sheet pan over lemon slices and spray with a little olive oil spray. Bake on 400 for 12-15 minutes depending on desired doneness. I recommend keeping the salmon with the glaze mixture in the fridge overnight before cooking so all the good flavors really get in there but it can also be made right away. So easy and delicious.
