Not a food post but it’s related. What a wonderful surprise today! It’s so amazing to me when I witness people displaying such thoughtful, loving and beautiful qualities especially considering the world that we live in today. Deana, creator of @gooddeesmix DM me a couple of days back asking if I was okay because she hasn’t seen me active on Instagram. Because I know that she’s a very REAL and down-to-earth person, I decided to share a bit. I guess because of being so let down by so many people that you would think that would be there for you during your toughest sicknesses and struggles you just get really surprised when someone you don’t even know that well, does something so unexpected. I believe that you’re taken care of no matter what even if it’s not by the people that you would think would do so. Thank you Deana for helping restore my faith in people during one of my worst weeks ever. To be fair to those that DO know me personally, I have a tendency to “protect” them from my struggles. I hide it well with lots of smiles, make-up and other things to make me look “normal”. The lesson… I need to let those around me know that I NEED them. This is so difficult but if I want to feel closer to people I guess I need to open up and not feel like I’m burdening them. I’ve just spent the majority of my life taking care of others and helping them, that I feel like if I can’t continue to do that then what good am I. I feel like that has been my role, my gift as a human. To help others through their difficulties. I don’t know how to receive. I’m sure there’s a lot of you out there that can relate to this. My message to you is to open up and ask for help or support. Almost all of us are struggling with something but some are struggling with multiple things at once and it feels like there’s no way out or any relief coming soon. I share this bouquet of flowers with all of you that feel that way right now. Much love to you all. Don’t give up!

You may ask… “Why doesn’t she regularly post pictures of herself to show progress?” Because honestly… I have been the same weight for almost 2 decades, give or take 5-10 pounds up and down for water fluctuation or what have you. Keto has became very, very popular the last couple of years and there are countless accounts in the Instagram community showing amazing weight loss and healthy changes because they took a chance on keto and they have had success for a couple of years which is great. But I’m here to tell you that it is without a shadow of a doubt a sustainable lifelong way of living/eating! Don’t worry about getting it perfect while you’re starting out! You will figure things out along the way as long as you don’t give up. Your success will all come from constantly taking in legitimate knowledge/information and then apply it. There are so many keto accounts that are giving out so much bad information and then people wonder why they’re not losing weight or why they feel so badly “eating”, and I loosely use that term, keto. Please, please, please do your research and don’t give up because you don’t feel like you are getting results! You’re probably just innocently applying bad information. The way that you will start out eating keto will be different after you lose the weight that you want to lose. Maintenance is a whole different ball game. Plus… You will be getting older. Hormones change. You will tweak your diet for what you need in different phases of life. But not much. You basically will stick with the same guidelines but there will be times when you need to eat more fat and lower protein and then there will be times when you will need to eat equal amounts of protein and fat. You will eventually learn when you need to make changes that are best for YOU! I promise you that it isn’t as difficult as you think it is. You only need to commit to doing the work of researching and then putting it into practice. I was in my early 20s when I changed my diet and now I’m in my 40s. I don’t regret a thing! My wish for you is the same!😘 #ketolife
ᑕᕼEEᔕY ᗷᖇEᗩᗪᔕTIᑕKᔕ * * It taste like the real deal!! I was SO happy that this recipe turned out so delicious! I found it on Pinterest from @kaseytrenumblogger Everyone in the house was in LOVE with it!! I paired it with meat sauce and called it a day!🤤 I tweaked the original just a tad for my personal taste. Check out her website for the original. Below is how I prepared it. * * INGREDIENTS: FOR THE BREADSTICKS: 4 tbsp butter, barely melted 1 oz of 1/3 less fat cream cheese, it has lower carbs 4 eggs 1/4 tsp sea salt 1/3 cup coconut flour, sifted 1/4 tsp baking powder 1/2 tsp Italian seasoning 1 1/2 cup mozzarella cheese, shredded 1/2 cup parmesan cheese, shredded FOR THE TOP: 2 cups mozzarella cheese, shredded 1/4 cup parmesan cheese, shredded 1/2 Italian seasoning Garlic salt, optional * * INSTRUCTIONS: 1. Preheat oven to 400°F and grease a small baking sheet, 11 1/2 x 8 1/2. She used a 11 x 7 baking pan. 2. In a large bowl combine the butter, eggs, salt, cream cheese and mix well. 3. In a small bowl, combine your coconut flour, baking powder and Italian seasoning together. Add this dry mixture in with the egg mixture and mix well. Then add your mozzarella and Parmesan and mix until well combined. 4. Add your batter to your pan and smooth out well. 5. In a separate bowl, mix the mozzarella, Parmesan and Italian seasoning together for the top. Sprinkle evenly on top of the dough. If you choose to use garlic salt, now’s the time to apply liberally on top of the cheese. YUM! 6. Bake for 15 minutes and then remove from the oven and use a pizza cutter to make individual breadsticks. 7. Put your breadsticks back in the oven and turn on your broiler and allow the cheese to become brown and bubbly. They’re all absolutely fantastic but zucchini is definitely The big winner every time! I love making quesadillas out of them but lately my thing has been wraps! ᔕᗩᑌᔕᗩGE ᑭᑌᖴᖴᔕ * * A great sausage ball variation. I’ve made the cream cheese sausage balls for years but I missed that bready, yet carby, sausage ball from back in the day. You know the one… Made with Bisquick🤤 Well I came across @kaseytrenumblogger on Pinterest and I really liked her recipe. She uses coconut flour instead of almond. So if you don’t like coconut flour you’re probably not gonna like this recipe. Coconut flour taste a bit sweet on the pallet but I think it’s a perfect combination when you’re using hot or spicy breakfast sausage! That sweet heat flavor is really up my alley! Her original recipe called for 1/3 cup coconut flour and 4 1/2 tablespoons of butter. I decided to leave out the butter and bump up the amount of coconut flour to get that consistency that I wanted. Plus I added garlic powder which is a must for me in sausage balls! So below is the nutritional facts and my twist on her fabulous recipe. * * Serves 45 balls 1 ball: .4 net carb 2 protein 2.5 fat 33.4 calories INGREDIENTS: 1 pound hot or spicy breakfast sausage, browned and drained 1/2 cup coconut flour, sifted 2 tbsp sour cream 4 eggs 1/4 tsp sea salt 1/4 tsp garlic powder 1/4 tsp baking power 2 cups cheddar cheese, shredded * * INSTRUCTIONS: 1. Preheat oven to 375°F and apply parchment paper on a large cookie sheet. 2. In a large bowl, add the eggs, salt, garlic powder and sour cream then whisk together well. 3. In a medium bowl, add the coconut flour and baking powder together and combine well. 4. Now add the coconut mixture in with the egg mixture and combined well. It will be thick. 5. Next add in your sausage and cheese. Mix together well and spoon out 1 inch balls and place them on your cookie sheet. 6. Bake for roughly 25 minutes. ITᗩᒪIᗩᑎ ᘔᑌᑕᑕᕼIᑎI, ᔕᗰOKEᗪ ᔕᗩᑌᔕᗩGE ᗷᗩKE INGREDIENTS: 1 lb Smoked sausage, cut into quarters 4 cups zucchini, thinly sliced, (roughly 3 medium/large zucchinis) 1/2 cup onion, chopped 2 tbsp butter 2 tbsp dried parsley 1/2 tsp sea salt 1/2 tsp pepper 1/4 tsp garlic powder 1/4 tsp dried basil 1/4 tsp dried oregano 2 eggs, well beaten 2 cups (8oz) mozzarella cheese, finely shredded INSTRUCTIONS: 1. Preheat oven to 375° and grease a 9 x 13 dish. 2. In a large skillet, melt butter over medium high heat. Add zucchini and onions; cook, stirring occasionally until tender and moisture has been rendered out. 3. Stir in parsley flakes, salt, pepper, garlic powder, basil and oregano until well combined. 4. While you're vegetables are cooking mix eggs and cheese in a large bowl. 5. Once your vegetables are done add them in the bowl with your eggs and cheese. Stir gently to mix. Mix in quartered sausages as well. 6. Pour your mixture into your dish. Push all ingredients down and smooth out the top. Bake for 40 minutes or until nice and golden. 7. After removing it from the oven, let it stand for about 10 minutes before serving.
