Getting to drive this @hyundaiusa palisade for a week has been soooo dreamy!!! We had to take it to the beach this morning and of course have some cuddles in the back. New Baking with Brittany episode is live in stories! Simple Pumpkin Muffins that you can easily adapt to what you have on hand. Clearly by the picture you can tell these are toddler approved! Full recipe below: - INGREDIENTS: 2 cups whole wheat flour (You can also sub reg flour, oat flour, almond flour) 1/2 cup brown sugar (coconut sugar works) 1 1/2 tsp baking soda 1/2 tsp salt 1 tsp pumpkin pie spice 1 cup pumpkin purée 1/2 cup applesauce (or 2 eggs) 1/2 cup melted coconut oil (Or melted butter or ghee) 1 tsp vanilla - DIRECTIONS: Combine all ingredients in a bowl then scoop into muffin tins. Bake at 325 for 18-20 minutes. *optional: add any toppings like mini chocolate chips, oats and/or chopped nuts on top before baking

Oh hey it’s me Kelsey just posting this pic cause I asked Matt to take it after we showered the sand off at the beach and Ruthie snuggled up on my shoulder. Just a fantastic beach morning and couldn’t be more grateful for my sweet ruthie and hubby!
