Chicken Tagine in 35 minutes for £1.96 per portion 🥘🤤 CLICK SAVE. By making a few simple changes to a traditional chicken Tagine, I’ve created a DELICIOUS but speedy recipe that’s packed full of nutrition. The best bit? It’s SO ridiculously easy to make. Let me know what you think in the comments. #LessThan2 —————————————————————— INGREDIENTS 500g Chicken Thigh Fillets (£3.35) 2 Cans Chopped Tomatoes (800g) (58p) 200g Cherry Tomatoes (44p) 2 Medium Red Onions (18p) 2 Mixed Peppers (60p) 1 Can Chickpeas (400g) 2 Tbsp Ras El Hanout Spice (69p) 200g Pitted Apricots (£1) 200g Couscous (24p) 2 Tbsp Lemon Juice (6p) 2 Tsp Garlic Powder (6p) 20g Fresh Parsley (28p) 1 Tbsp Olive Oil (5p) Salt & Pepper —————————————————————— RECIPE You’ll need a saucepan and lid for the couscous and a wok or large frying pan for the Tagine. 1. Chop the chicken into bite sized pieces. Season with 1 Tbsp Ras El Hanout. 2. Dice the onion and peppers. Finely chop the parsley and halve the pitted apricots. 3. With a Tbsp olive oil, start to soften the peppers and onions on a high heat. After 2 minutes, add the chicken and cook for 6 minutes. 4. Add the chopped tomatoes, cherry tomatoes, chickpeas, rest of the Ras El Hanout, the apricots, half of the parsley and a few generous pinches of salt & pepper. Lower heat to medium/low and simmer for 15 minutes. 5. Boil the kettle. With 7 minutes left, add the parsley, lemon juice and garlic powder to the couscous with a pinch of salt & pepper. Add 350ml boiling water (a couple of cm above the couscous), stir and cover with a lid). Leave for 7 minutes. 6. Take everything off the heat, fluff the couscous with a fork and serve it all up!
Red Pepper Chicken Tortillas for £1.46 with a simple and sumptuous home-made guacamole 🥑🍗🌯 When it comes to tasty meals on the go - it doesn’t get much better than a tortilla stuffed with delicious ingredients so CLICK SAVE and give this beauty a go this week 😋 #LessThan2 —————————————————————— INGREDIENTS - Serves 2 200g Chicken thigh fillets (£1.08) 1 Red Pepper (30p) 1 Small Red Onion (6p) 2 Cloves Garlic (4p) 2 Tsp Dried Parsley (10p) 2 Tsp Paprika (10p) 2 Tbsp Olive Oil (18p) 2 tbsp Light Sour Cream (12p) 1 Avocado (I buy ripen at home) (44p) 1 Salad Tomato (11p) 2 Tortilla Wraps (24p) 2 tbsp lime juice (5p) Salt & Pepper —————————————————————— RECIPE You’ll need a baking tray for the chicken, peppers and onions. Pre heat the oven grill to 250 Degrees Celsius. 1. Lather the chicken with the olive oil, paprika and parsley. Leave for 10 minutes to marinade. 2. Slice up your pepper, onion and tomato. Finely chop your cloves of garlic. 3. Take the flesh out of your avocado and put it in a bowl with the lime juice and a few pinches of salt & pepper. Mash with a fork to make your guacamole. 4. After 10 minutes, get your chicken under the grill for 7 or 8 minutes on each side - should be a golden brown. 5. Once you flip the chicken, add the pepper, onion and garlic and spread evenly. 6. Take your chicken out of the oven and chop into bite sized pieces. Put your tortillas in the microwave for 15 seconds before stuffing them with chicken, peppers, sour cream, tomatoes and guacamole!
FANCY A LAUGH? Skip to the last video where I very nearly died... Today I took on @dwfitnessfirst’s #TheDarkFateChallenge which is in partnership with the new @terminator movie, CLICK SAVE and try this. It was SO HARD 🥵. The workout was made up of; 1. 800m run with 2% incline 2. 30 over the box (two feet touching on the top every rep) 3. 30 squat and log press. 4. 30kcals Assault Bike 5. 30 single arm dumbbell clean and press (16kg) 6. 30 temple tap press-ups 7. 10 20kg shoulder press (5 each arm) 8. 800m row I did it in 13.04 and BOY was I dying. I nominate @williamjwade @henryjwade and @tomtrotter to give it a go. Chilli Con Carne for £1.37 with a surprise magic ingredient AND my trick for perfect fluffy rice 👀 I absolutely LOVE a good chilli, especially when it’s a healthy one. Personally I go all out on the spice as I like it hot but this recipe still works an absolute charm without. I’ve also used a magic ingredient that does wonders in bringing this recipe to life... CLICK SAVE and scroll down to see what it is 🤭 If you’re vegetarian or vegan, you can simply replace the beef mince with @quorn_uk or vegan quorn #LessThan2 —————————————————————— INGREDIENTS - Serves 4 500g 5% fat beef mince (or use @quorn_uk) (£3) 1 Mixed Pepper (33p) 2 Medium Onions (16p) 2 tsp Dried Coriander (10p) 2 tsp Cumin (10p) 1 Fresh Red Chilli (10p) 2 tsp Chilli Powder (Hot or mild depending on taste) (10p) 3 Cloves Garlic (9p) 1 tbsp @Marmite (14p) 1 cube Beef Stock (6p) 2 Tbsp Tomato Purée (20p) 400g Can Kidney Beans (30p) 400g Can Chopped Tomatoes (28p) 1 tbsp Olive Oil (9p) 300g Dry, Easy Cook White Rice (45p) Salt & Pepper —————————————————————— RECIPE - 45 Mins Prep & Cook You’ll need a large frying pan for the chilli and a saucepan for the rice. Boil the kettle with two cups of water for each cup of rice and 200ml extra for the stock. 1. Dice your onions and peppers, finely chop your chilli and peel and chop your garlic. 2. Add your oil to your pan and on a medium heat, add your onions and peppers for 4 minutes to soften. 3. Add the garlic, chilli and half of each of your herbs and spices plus a few pinches of salt & pepper. Stir in for 3 more minutes. 4. Add your mince and brown for 5 minutes. Use a spatula to keep breaking it down so it’s not clumpy. 5. Dissolve your stock cube in 200ml boiled water. Add the stock and can of tomatoes to the beef. Add the marmite and purée. Stir thoroughly. Simmer for 15 minutes, stirring every now and again. Add the kidney beans, the rest of your herbs and spices and a couple of pinches of salt & pepper and simmer for another 15 minutes. 6. Once the kidney beans go in, pop your water on to boil with a couple of pinches of salt. Add the rice and stir a couple of times. Pop the lid on and on a low heat, cook for 10 minutes. Cook for a

[ad] WHAT ARE YOUR STRESS TRIGGERS? Personally, amongst other things, saying yes to too many people and too many things suddenly makes me feel completely overwhelmed. I can overcome that to an extent with exercising, eating well, looking after my skin and keeping healthy in general. But the best way is to be fair to myself and when I need to, say no to people and take a break. If you know what is it that makes you stressed, you at least know what it is you need to try and avoid. Actually avoiding it can be easier said than done - but taking 10-15 minutes out of your day and identifying your triggers is brilliant place start. @aveenouk #aveenoambassador #wellnesspioneer
