🇺🇸I am good at many things. I am not the best in any of them but I always consider myself a winner. I am very aware of my weaknesses, of my areas of opportunity, but I never allow that to stop me. When there is an opportunity I always go for it. Even being aware that there are possibly people who could do it much better than me, that there are more qualified people, but do these people dare to take the opportunities? what differentiates me from many others is that I believe in myself. I'm not afraid of making a mistake and I know that if things work out it was for me and if not, then nothing happens, another opportunity will come. My motto is very simple, as we say in Spanish "The gum might sitck" I have no idea if it makes sense in English 🤣 I don't always do well in my beatitudes, but I consider myself a winner from the moment I dare to take chances. Don't let fear of believing there are better people than you to paralyze you. Don't let not believing you are capable stop you. 🇺🇸Hi, I'm Laura, I started my YouTube channel 9 years ago with the intention of teaching people to cook Mexican food in a healthy way. How about some chilaquiles without frying? Or a chicken and chickpea pozole instead of pork and corn? Many people question me about my weight. How is a fat person going to teach me to eat healthily? The first time I went on a diet I was 15 years old. Instead of a quinceañera party, my parents gave me the gift of signing up for a weight loss clinic. I weighed 82 (180 pounds) kilos at the time and was 5'8 (1.73 cm), I swam 2 kilometers a day, I ate healthily, my mother taught us to eat everything from childhood. I used to see how my friends could eat wherever they wanted and they had a normal weight. It was not my case. My parents when I was a child were vegetarians, yogis, and hippies. I just love food. It makes me happy, I really enjoy the flavors, the textures, the company, and what a family meal implies. My body is like that, I have been on diets for too long, I even went through a gastric band with which I almost lost my life. My fight for the perfect body for society is long over. I already have the perfect body. The body that God gave me to carry my soul. Today I prepare healthy dishes to keep my family healthy and to teach other moms options for their families to eat natural dishes and learn to eat and integrate fruits and vegetables into their diet. It makes me very happy to be able to share part of my life with you on social networks and I hope to be able to transmit to you little by little this path of self-love and health, despite my weight. 🇺🇸 Do you like Poblanos? What is your fave recipe with Poblano? My favorite food growing up was Chiles Rellenos. My mother hated cooking them because they are so elaborated! Toast the chiles, rise the egg whites, set the flour, fry them, make sure that the cheese stays inside! Make the tomato sauce to put on top. Oh yes… they are a lot of work but really there is nothing like that mix of flavors in your mouth. As a child, I loved to visit my grandma because she will cook me all I loved, specially Chiles Rellenos. Actually, my cooking inspiration comes from my mother´s mom, Conchis. My grandma loved to cook for her family and I loved that smell of food and love at mis abuelitos home. Chiles Rellenos is definitely one of my best Mexican comfort foods. I have had poblanos my whole life and had no idea of how they grow! This year we planted a veggie garden and this little Poblanos tree is one of my favorite plants. It is just like a Christmas tree with Poblano ornaments. In the north of Mexico, we make Chiles Rellenos with Anaheim or California Chile which is a bit spicier than Poblano. 🇺🇸Have you met Mexican blonds? Many people could never imagine I was born and raised in Mexico. I am from the north of Mexico, from the state of Chihuahua in the border with El Paso, Texas. I am very proud of my roots and is something I am passing on my children. I come from a very extensive background. My great grandmother was German, my great grandfather was born in Mexico from German parents my grandma background was Irish. That is on my father’s side. On my mother’s father’s side, my great grandfather was a Chinese immigrant who arrived from Canton to Mexico and married a Spanish-Indigenous Mexican girl. My grandma was born from a Spanish man, my great-grandmother, Quetita, was Spanish and Mexican indigenous. I am all of that. I am all of them. If you explore my face you will see that my eyes are a bit almond shape, my mother’s family looks very Chinese…. On my father’s side, they are mostly white skin and blond, and yet I am as Mexican as Nopales Cactus. My kids are now American’s with all that background of mine and my husband’s, and I just find it beautiful. I am teaching them to love all of our backgrounds. I always tell them they are part Chinese, part German, part Mexican, part indigenous, and very American. I am raising them bilingual and most importantly bicultural. I want them to feel proud of who they are and where they come from. They come from strong people who traveled the seas looking for a better life. They come from immigrants who had to learn another language, to live in another country and culture to see their futures and families prosper just as we as parents are doing it. Being an immigrant is hard but as you can see is in my blood. I have lived in Brazil, Mexico, New Zealand, the USA, and after traveling a lot, meeting amazing people, religions, cultures, and languages the USA really feels like home to me. This month 9 years ago I asked my teenager cousin to film me cooking some recipes at my parents home. We made it with my small photo camera. I was sending the video to some friends. I had lost 110 pounds and everyone wanted to know what I was cooking and how! Little did I know that soon those videos would be seen by a lot more people. To be exact my YouTube channel has 148, 506,146 views!! Nine years later here we are. Still in the fight for a healthy weight, sharing recipes, experiences and lots of adventures and dreams that Las Recetas de Laura has given us. Of the most memorable, having been invited to Michelle Obama's conference in Washington for her organization Partnership for a Healthier America. Having the opportunity to give speeches and cooking classes at the Mexico City Convention Center and the one in Chicago! @mccormickplace The fact that @thedisneyprincesses choose me to be a story teller at the @weallgrowlatina conference. To be named one of the most influential latinas in The USA for my cooking show. The trust that schools and organizations have put on me inviting me to share my experience and recipes. To know that my recipes have been screened on television stations in the USA, Spain, Mexico, El Salvador in networks such as Mundo Fox, Telemundo, Univision, Televisa, Tv Azteca, Channel 51.
