QUICK MEAL SERIES ALERT! Because who doesn’t love fried rice 😆 NEW RECIPE TO SAVE ! 🙌 Looking for some dinner inspo for tonight? Look no further! This week’s quick meal is our fave Vegetarian Fried Rice with Omelette Strips! Swipe to see the super easy ingredients! 👉 Our top tip is to use whatever veggies you have on hand. We’ve used Asian greens, zucchini and peas, but you could use broccoli, carrots, snow peas, or whatever you like. Frozen veggies are also A-OK! Don’t forget to let us know what recipes you’d like us to create next! RECIPE 💖👇 Serves: 2 as a main, 4 as a side Ingredients: * 1 tsp coconut oil, or olive oil * 3 eggs, whisked * 1 tbsp sesame oil * 2 spring onions, green & white parts finely sliced * 1 clove garlic, sliced * 1 zucchini, finely diced * ½ cup frozen peas * 1 bunch bok choy, shredded * 1 tbsp tamari * 2 cups cooked brown rice * 1 tbsp sesame seeds * 1 tsp chilli flakes. Method: In a large non-stick frypan, heat the coconut oil. Add the whisked eggs to the pan and swirl the pan to ensure the eggs create a thin layer. Season with sea salt and black pepper. When bubbles start to appear, flip the omelette and cook for another minute on the other side. Remove from the pan and slice into small strips. Heat the sesame oil in the same frypan over a medium-high heat. Add the spring onion to the pan, reserving a few green pieces to serve. Sauté for 3 minutes, or until softened and fragrant. Add the garlic, zucchini and peas to the pan along with 1 tbsp water. Sauté for 3 minutes before adding in the shredded bok choy and tamari. Once the bok choy starts to wilt, add the cooked brown rice and egg strips and stir until heated through. Serve topped with sesame seeds, chilli flakes and remaining spring onion. 🙏🙏
