Happy Mother’s Day to all you fabulous mums 💛 What a beautiful day to bake mum a cake 💫 Here’s one of our favourite Greek desserts, to warm your hearts 🍋 Yiaourtopita- Greek lemon yoghurt cake 180g unsalted butter softened, plus extra for greasing 180g caster sugar, plus 1 cup 4 eggs, separated Zest of 1 lemon 1 tsp vanilla extract 200g plain Greek yoghurt 250g self raising flour, sifted 1/2 tsp baking powder, sifted Pinch of bicarb Juices of 1/2 lemon Preheat the oven to 160c fan forced. Grease sides and bottom of a 20cm baking tin. Place butter and sugar in the bowl of an electric mixer and bear until light and creamy. Add the egg yolks and beat until combined. Add the lemon zest, vanilla extract and yoghurt, and fold through. Combine flour, baking powder and bicarb and add to the yoghurt mix, and fold through. In a clean bowl, whisk the egg whites until stuff, then gently fold into the mixture. Pour into the prepared cake tin and bake for 45 mins or until golden and a skewer comes away clean. Add the 1 cup of caster sugar, 1/4 cup water and lemon juice to a saucepan and simmer over low heat for 7-8 mins. Pour the syrup over the warm cake and enjoy with a Greek cup of coffee 💛
We joined some of Australia’s most passionate Greek cooks for a Greek Easter feast hosted by @grecianpurveyor 💛 This Greek easter will be slightly different to other years and we thought what better way to use up a pantry favourite. Rice is a staple in our homes and as kids we loved eating Rizogalo straight out the pot. This recipe is delicious, comforting and with a touch of @vasilissa.co red saffron honey and @iamvi_delices sour cherries you will be transported straight back to Greece 🇬🇷 We hope you love this recipe as such as we do 👯 Rizogalo me meli 🍯 Serves 4 people Ingredients: 5 1/2 cups full-cream milk 1/4 cup caster sugar 1 teaspoon vanilla bean paste 3 strips of lemon zest 1/4 cup of Vasilissa wild forest honey with greek red saffron plus extra to serve 1 cup arborio rice 2 egg yolks 1 teaspoon cornflour Iamvi sour cherry fruit preserve, to serve Method: 1. Pour the milk into a deep saucepan, add the caster sugar, vanilla bean paste, honey and lemon zest. Place over medium heat and bring to the boil. Immediately turn down to a low heat, gradually stir in the rice and simmer for 20 minutes, stirring occasionally. 2. In a bowl, whisk the egg yolks and cornflour together. 3. Using a measuring cup, take out 1/2 cup of milk from the rice mixture and add to the egg yolks. Whisk to combine. Pour egg mixture into the rice mixture. Stir with a wooden spoon and place back on the stove for about 10 minutes or until thick and creamy. 4. Scoop the rizogalo into serving bowls and refrigerate for 2 hours before serving or enjoy it hot. Serve with @vasilissa.co wild forest honey with greek red saffron and IAMVI handmade sour cherry fruit preserve. XX

Growing up in a Greek home, our kitchen was always filled with delicious smells. Tomatoes have been a staple in our home since we can remember. Cooking Greek isn’t difficult, it’s all about simple fresh ingredients. Cod is a beautiful fish to cook with, it’s easy to prepare and has a glorious flavour.
