😍Love Tacos? Then check out this Quinoa Tacos w/ Spicy Jalapeño Sauce recipe by @mehermade.💯 • 🌱Ingredients: 1 pack soft taco tortillas or hard shells 1 cup quinoa (any color, I used red) 1 cup vegetable broth 3/4 cup spicy salsa 1 tbsp nutritional yeast/ Parmesan cheese 1 tbsp olive oil 2 tsp cumin powder 1 tsp garlic powder 2.5 tsp chili powder 1 tsp sea salt to taste 1 cup Shredded purple cabbage 1/2 cup Apple cider vinegar or any vinegar • 🌮Method: 1. Combine the shredded purple cabbage and vinegar and set aside as slaw. 2. Rinse and dry quinoa thoroughly. Add the quinoa to a hot sauce pan (medium heat) and sauté for 4 minutes to toast, stirring the quinoa every 30 seconds. Once toasted, increase the heat to medium high and add the vegetable broth and 3/4 cup water to bring to a boil. Once boiling, reduce the heat to low, cover the sauce pan and cook for appx 20 minutes per package directions. The liquid should be fully absorbed before you remove the quinoa from heat. Fluff with a fork and let it rest. Once 10 minutes have passed, preheat the oven to 350 degrees. 3. Combine the remaining ingredients and spices (salsa, yeast/ cheese, oil, spices and salt) and toss with the quinoa. 4. Line a baking sheet with light oil, and layer the quinoa. Bake for 30 minutes, checking on it towards until it’s crispy. 5. In the meantime, prepare the taco shells or tortillas as you’d like and layer with the shredded purple cabbage slaw.
