Korean Bibimbap (Mixed Rice Bowl) with Gochujang Sauce Makes 3 bowls/good for 3 servings 6 cups cooked Japanese or short grain rice 1 cup homemade or store-bought vegan kimchi (homemade recipe here) 1 cup sliced carrots 1 cup sliced zucchini 1 cup sliced mushrooms or tofu 1 cup beansprouts ot beansprout salad (kongnamul) 1 cup spinach or spinach salad (sigumchinamul) 1/4 cup sliced onion leeks, optional for topping 1 tbsp sesame seeds, optional for topping Sesame oil, for drizzling Gochujang sauce (recipe below) P.S. the veggies I used are organic and locally grown from @sevendaysofgreens! The Japanese rice is from them too. 💚 __ Notes I sliced all veggies and mushrooms into strips, but you can slice them however way you like. Feel free to use whatever veggies you have available! If you have a stone bowl, you can toast the rice with sesame oil to make a ‘dolsot' bibimbap! Steps Sauté the veggies and mushrooms/tofu separately in a non-stick pan. Season them with some salt and sesame oil, to taste. Finish off with sesame seeds. Assemble the bowls by placing the place. Top with the cooked tofu/mushrooms and veggies. Add in 1-2 tbsp gochujang sauce (feel free to adjust) for each bowl and finish off with sesame seeds, drizzle of sesame oil, & chopped leeks if using. Mix everything together. Grain free CRISPY CHICKEN + SWEET POTATO BURRITOS 🌯 These are SO EASY: threw together some leftovers in a tortilla with salsa and toasted it in a pan 🙌🏻 rotisserie chicken would be perfect in these too, and you could always skip the sweet potato for less carbs if that’s your thing. I think getting creative with leftovers is my new art form! By @beachsidekitchen . DA GOODS: took a leftover chicken breast I roasted with some red onions and chopped it up. Mixed in half a large mashed sweet potato, 1/2 cup green salsa and 1/3 cup grass fed cheese, then folded in almond flour tortillas (made 4). Crisped up in a pan on each side until the filling was warm. . . 2-INGREDIENT DOUGH Blueberry Cinnamon Rolls💙🥐 No added sugar in these beauties - Just naturally sweetened with blueberries! By lilsipper ~ For the dough: 1 cup *self rising flour (wheat, GF blend, or cassava) 1 cup plain greek yogurt (or *coconut yogurt) . *DIY self rising flour: mix 1 cup flour with 1 tsp baking soda and 1 tsp baking powder. *If using coconut yogurt, you may have to add more flour if it's "runny" and not thick like greek. . Knead flour and yogurt to create a dough, roll out into long rods (grease your hands with coconut oil), sprinkle with cinnamon and wild blueberries (I used frozen), then roll-up and place in a baking dish. Bake at 350 F for 20 minutes. Asparagus Stuffed Chicken Breast primaverakitchen . Ingredients: 4 large chicken breasts 1 tbsp lemon zest salt and pepper 12 asparagus stalks, trimmed 3 slices mozzarella cheese 1 tsp garlic powder 1 tsp paprika 1 tbsp olive oil Directions: Preheat oven to 425 degrees F. Cut the chicken breast in half, length-wise. Please do not cut all the way though. You need to create a pocket into each chicken breast. Season the inside of the chicken breast with lemon zest, salt and pepper. Place chicken on work surface and lay the mozzarella cheese and 3 asparagus inside of each chicken breast and fold over, enclosing the filling. In a small bowl mix together salt, pepper garlic powder and paprika. Then season the outside of the chicken breast with this spice mixture. Heat a large and oven safe skillet over medium-high heat. Add the olive oil. Sear the chicken for 3 to 5 minutes each side and until the chicken is golden brown on top. Place the chicken in the oven. Bake for 20 minutes. Make sure the chicken reaches the internal temperature of 165 degrees.
CREAMY BOW TIE PASTA SALAD 🍅🥗🍝 🙃🙌🏻💣Lemony hummus instead of mayo for the dressing along with a squeeze of tabasco makes for the creamiest + easiest sauce. DELISH!✌🏻💥by @thedishonhealthy ~ Ingredients * 1 bag of gluten-free pasta of your choice. I used bow tie pasta, also known as “farfalle” but you can use any shape you like * 1 pint of cherry or grape tomatoes, sliced in half * 2 small garlic cloves, finely minced * 2 tbsp of extra virgin olive oil or avocado oil for the pasta water * 2 tbsp of extra virgin olive oil or avocado oil to roast the broccoli * pinch of sea salt * pinch of ground black pepper * 1 cup of roasted, pre-steamed broccoli * 2 cans of lemon tuna (I always buy the low-mercury varieties) * red pepper flakes (optional) * a sprinkle of sumac (optional) Hummus Picante Dressing * 8 tbsp of hummus for every 4 bowls of the pasta (2 tbsp per bowl) * 1 tbsp of Tabasco or Frank’s Red Hot Sauce * A dash of chili olive oil (optional) Instructions 1. Follow cooking instructions on the pasta of your choice. I like to add sea salt, pepper and 2 tablespoons of olive oil to the water I cook the pasta in. Gluten-Free pasta (especially if it’s corn or brown rice-based) can get pretty sticky, so the extra virgin olive oil keeps it from clumping together as it cooks. 2. While the pasta boils, let’s roast the broccoli with a dash of olive oil, sea salt and pepper! I cut it into individual florets and place them in a baking tray, at 400F for 20-25 mins and toss them half way through. If you’d like, you can roast the tomatoes there, too. 3. Drain the pasta and transfer to a large bowl or platter. Allow it to cool down. I always add the hummus and picante dressing in first, and toss well to coat evenly. Then I mix in the veggies and tuna. I toss again and refrigerate prior to serving. The way we view our food matters. Nobody can deny that salad is indeed healthy, and I have nothing against calling it healthy. But when it’s in the context of comparisons, it hits differently. If you’re presented with two options, pizza and salad, it’s very easy to see the pizza as the unhealthy option, and the salad as the healthy option. But this is one of the main reasons why people have such a hard time grasping the concept of flexible dieting, and how you can eat so-called “unhealthy” foods without guilt. Instead of looking at pizza as an unhealthy choice, look at it for what it is: a higher calorie option with not as many nutrients. And in this scenario, salad is simply the lower calorie option with more nutrients. If the pizza is providing you with needed calories, and you are getting plenty of nutrients in your diet elsewhere, then you know what? Pizza isn’t unhealthy at all. And YOU are not unhealthy for eating it. Nutrition isn’t black and white. There are no good or bad foods. Are some foods better than others to eat on a regular basis? Absolutely. I don’t recommend eating pizza for every single meal- but that doesn’t mean you should never eat it at all. It’s not an unhealthy thing to eat- it just doesn’t have the same nutritional benefits as the salad does. At the end of the day, here is my point: stop being mean to pizza. Pizza is your friend.
