Hi 👋🏼 ‘your yearly personal post’ lol. Life is currently great and busy, but mostly great. This picture was taken on the day I was shooting the cover for the upcoming ebook I’m creating with @sandra_rosendahl . I can’t wait to share this with you! We’ve been working on this for so long 👯‍♀️ • Meanwhile I started uni (about 1 month ago). It’s been a big change for me since I’ve been working full time for a couple of years. It’s a mix of an emotional rollercoster and stepping out of my comfort zone every day. But I’m loving the process and I’m learning new things every day 🙌🏼 • Honestly, I haven’t been as much on le gram as I want to. It’s reality kicking in. Some days I got plenty of time and some days/weeks my calendar is so full that I don’t even know how I find time to sleep, shower or eat. Some days I feel inspired and some days I don’t. But I’m actually good with that because I rather inspire you with good quality posts instead of spamming you with average inspiration. Quality over quantity ☝🏼 • When I look back I’m so grateful for all the things I’ve accomplished so far and I can tell you, I’m hungry for more 💪🏼

Pink nicecream made of frozen bananas, frozen raspberries and a little vanilla soy milk. Blended in my food processor. Topped with fresh raspberries, roasted coconut flakes, 1/4 piece of 85% dark chocolate and pistachios 💘

Beauty comes in all colors, sizes and shapes 🙌🏼 Made these yummy ‘zebra muffins’ yesterday. You get the best of both worlds- peanut butter/vanilla and chocolate. And let’s not talk about the texture, so moist 🤤 Best part was I only used 6 ingredients! If I made you hungry I would say sorry, but I’m not. Because these are definitely worth a try 💛 What you need: 4 tbsp peanut butter 2 medium bananas 2 whole eggs + 2 egg whites 1 scoop vanilla protein powder (I used a vegan blend made on soy, hemp and peas) 2 tsp baking powder 1 1/2 tbsp cacao powder Mix all the wet ingredients together and add the dry ingredients, except the cacao powder, and stir well. Separate the dough in two bowls and add the cacao powder to one of them and stir well. Place the dough in 10-12 muffin forms. I added 1 tbsp of each color dough. Bake at 175°C for 12 min (until a toothpick/fork comes out clean) Let them cool off and enjoy 💓

Hope you had a great start of this week. Mine was a little slow but today I’m feeling more energized 💫 I’m thinking about making a healthier dessert tonight and might make this one: Overnight vanilla protein pudding, some chocolate granola, my homemade chocolate mousse, then chia pudding again with some peanut butter blended in, chocolate granola, chia pudding and some chopped hazelnuts and dark chocolate on top. The recipe for the chia pudding: 1,5 dl coconut milk 1,5 dl oat milk 2 tbsp chia seeds 1 scoop vanilla protein powder 1 tbsp smooth peanut butter Mix everything in a bowl and let it stay in the fridge overnight. The recipe for my homemade chocolate mousse: 2 bananas 1 avocado 2 1/2 tbsp raw cacao powder 2 tsp vanilla powder Blend all the ingredients together in a foodprocessor and let it stay in the fridge overnight. (You can make this in the morning if you prefer). Then create your beautiful breakfast parfait and enjoy! (This will leave you with two portions)

Spontaneously made this delicious and spongy chocolate coconut banana bread last night 🤤 I’ve made a lot of them now and also got some recipes on my website but this one turned out so delicious! Despite I forgot it in the oven and gave it a little too much🙈😂 but luckily banana breads get more moist when they stay in the fridge 🙌🏼 I topped this one with peanut butter (of course), banana slices and some roasted coconut flakes and some cacao nibs 👏🏼 If you want to try it ll you need it is: - 3 medium ripe bananas - 3 eggs - 1/2 tsp baking powder - 1 tsp vanilla powder - A pinch of salt - 1 cup coconut flour - 1/2 cup oatmeal flour (you can make your own if you blend oats into flour) - 8 pitted dates - 3 tbsp cacao powder 1. In a food processer mix bananas, eggs and dates. Pour the mixture in a bowl. 2. Mix the dry ingredients together and add the mixed banana and dates. Stir well together. 3. Pour in a silicone baking tray. (Optional: cut a banana and place the pieces of top of the cake). 4. Bake for 30-35 min at 175 degrees °C 5. Let it cool off and store it afterward in the fridge I hope you like it 💛

The last week has been filled with so many new great things! My focus has been on getting used to all these new impressions and incorporating a new daily routine. This is also why I haven’t been as much on le gram as I want to 🌚 This Sunday I started with some warm oatmeal and vanilla skyr topped with apple, hemp seeds, chia seeds, pumpkin seeds, hazelnuts and goji berries. Perfect for this chill Sunday morning 💫🍂
