Oh yes, it’s that time of year! Pull out the pumpkin pie spice my friends, because I’m one of those hard core pumpkin-everything people at this time of year - and I’ve realized that Max shares my obsession! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I partnered with my friends at @VitamixCA to create this zero compromise healthier version of pumpkin cheesecakes. I don’t know what is better, the fact that you can whip up the filling in one minute in the Vitamix or that you can eat it like mousse if you don’t feel like baking it!? I have the @VitamixCA Ascent 3500 blender and I swear there’s nothing it CAN’T do! It’s Max’s favourite kitchen tool - and he’s so helpful, not only did he help me make these, but her was also sweet enough to help me eat them (and cried when the last one was gone!) Here’s how we made them. #FeedYourLife #Vitamix @VitamixCanada #Partner ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pumpkin Cheesecakes (dairy free) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Makes around 16 mini cheesecakes ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Crust: 1 cup graham cracker crumbs 1 tablespoon sugar or coconut sugar 3 tablespoons coconut oil, melted Pinch salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Filling: 300g package soft tofu, drained 1 cup raw cashews ½ cup maple syrup 1 ½ teaspoons vanilla 1 cup dairy free cream cheese (we used Tofutti) 1 cup canned pumpkin puree 2 teaspoons pumpkin pie spice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ *soak in boiling water for 15 minutes and drain ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions: Preheat the oven to 325F and soak the cashews to cover in boiling water - drain after 15 minutes. Combine all of the crust ingredients together in a medium bowl and stir to combine. Divide the mixture among muffin tins lined with paper liners (we yielded 16) Add all of the filling ingredients in the Vitamix container, place the lid on the container and blend for 45 seconds-1 minute of until smooth, starting at variable 1 and increasing to variable 10. 4. Divide the mixture equally among the prepared muffin tins and bake until set, around 25 minutes. Cool completely before serving – these are best served chilled and are AMAZING the next day!

Where do I even begin? Happy Birthday to my uh-mazing gorgeous, sweet, talented and loving mama. This has been such a tough year for her losing her own mom (our Boomba). This lady is as modest as they come - she is the rock and the heart of our family. Mom, for all of the hours you have poured into our family, from baking the most special cakes for our birthdays to teaching us how to bake to pulling all nighters finishing up our art projects (I don’t think the teachers ever did believe me when I told them I did it... I’ve always been a terrible liar lol!), you are a light in this world, and most important in OUR world, and not a day goes by where I’m not so beyond grateful to call you mom. Since none of us actually need anything I decided to treat her to a beauty session with our dear friend and talented makeup artist @jennymckinneymua along with a photo session for her and my dad with our sweet amazing cousin @stephanie.lucile.photography (I snapped this one with my iPhone) - because in the end the memories are what counts. Never forget how special you really are mama #YouAreLoved 💛
The countdown is ON! There are only two days until we leave for our cookbook tour and we are BEYOND excited! The cookbook is filled with our favourite dishes, some that we grew up with and others that we have collected along the way. From Granny’s Beet Rolls to the most unbelievable plant-based Queso (if we do say so ourselves), we are so grateful to share it all with you! Thank you to @SandhillWines for providing such incredible wine pairings for many of the dishes… and for those extra glasses of rose when the shoot days got a little crazy! Coming soon my friends - the cookbook hits the shelves October 1st ! For those who are wondering, we provided gluten-free, vegan and nut free options for most of the recipes. #partner
